2 Grape varieties

The vineyards that the plant uses today were destroyed many times, their varietal composition changed, they were either actively occupied or abandoned like a boring toy. Today everything has changed. For the needs of the plant, the manufacturer grows many varieties of different grapes. The most important were several varieties from Europe and special autochthonous varieties.

Local or autochthonous grape varieties are Tsimlyansky black, Plechistik, Krasnostop Zolotovsky grapes. All of them were once brought from Northern Dagestan by the Khazars. These red varieties became the basis for the most original products of the Tsimlyansk Wines plant.

3 Variety of offers

Officially, the Tsimlyansk Wines plant offers several varieties of alcoholic beverages. These are champagne, sparkling wines, still wines and cognac. At the end of the 17th century, by order of Peter the Great, the Rostov governor Prozorovsky established grape plantations, the vines for which were brought from Astrakhan, Greece, Germany, France and Hungary. Local residents made sparkling wine from unique red grape varieties using technology traditionally used by the Cossacks. The peculiarity of its production was that the berries were collected in late autumn, when the grapes were fully ripe. After this, the grapes remained for some time in special wooden barns or attics, where they gradually lost moisture and entered a dried state.

Then the grapes were ground using special wooden graters. The resulting raw materials were placed in special containers. Thanks to the low autumn temperatures, the fermentation process was extremely slow. And only when sub-zero temperatures were established, the future champagne was placed in new barrels and left to infuse until spring. With the onset of spring, sparkling wine was poured into bottles, the neck of which was wrapped with twine and sealed, dipped in melted resin. Bottles were stored in pits or basements, covered with a layer of straw.

Traditionally, in the Russian Empire, Tsimlyansk sparkling wine was a celebratory drink that celebrated the greatest milestones in the history of the state. Mikhail Illarionovich Kutuzov had exactly this champagne on his table on the day of the celebration of the victory over Napoleon’s army.
