We will need:

  • seafood in the form of squid - 2 carcasses
  • round rice - half a glass
  • champignons - 5 mushrooms
  • salt and pepper
  • vegetable oil
  • sausage for decoration
  • cloves and peppercorns for garnish


Stages:

1. Boil rice in a saucepan until tender in semi-salted water. Don't forget to drain the water; you'll get something like rice porridge without the milk.


2. Clean and gut the squids without disturbing the integrity of the carcasses. Remove tentacles, head and entrails. Also a chitin plate and film (if you don’t know how to do this correctly, read the instructions below).

Next, bring the water to a boil, add salt to your taste and throw in the carcasses. As soon as the water begins to boil, time it for 1 minute, and then immediately turn off the stove and let the clams stand in this water for another 1 minute. Then remove the meat.


3. For the onions and rice, place these two ingredients in a frying pan with vegetable oil. You can also add finely chopped tentacles and fry the onion until golden.

Honestly, squids are good both on their own and as a fairly independent dish if they are stuffed with any edible mixture. But they also go well with fresh vegetables, for example, cucumbers and tomatoes. This is one of our family’s favorite delicacies. And you?


We will need:

  • squid - 5 pcs.
  • mushrooms - 200 g
  • cheese - 100 g
  • onion - 1 pc.
  • chicken egg - 2 pcs.
  • sour cream - 50 g
  • mayonnaise - 50 g
  • sunflower or olive oil
  • salt and ground pepper

Stages:

1. Throw the defrosted carcasses into boiling water and wait 60 seconds. Then remove the skin from the squid.


2. Chop the onion into small cubes with a knife. To prevent tears, place the head in the refrigerator for 1 hour.


3. Chop the champignons into small pieces of the same size. You can use either fresh or pickled (canned) ones.


4. Fry onions and mushrooms in a frying pan with onions until tender. Cool.


5. Cut chicken eggs or use a vegetable cutter into cubes.


6. Pass the cheese through a coarse grater.


7. Rinse the green onions and dill and then chop finely on a cutting board.


8. Combine all ingredients in one bowl, add mayonnaise, salt and pepper. Stir.


9. Take a baking dish; a ceramic bowl is perfect. Place squid carcasses in it, which you fill with the prepared mixture of mushrooms and cheese. To secure, insert a toothpick and brush the “animals” with sour cream.


10. Place in the oven to bake, set the temperature to no more than 180 degrees. As soon as the golden “cheeks” appear, the dish is ready (about 15 minutes), turn off the oven and serve. Don't forget to remove the toothpicks.

  • fresh frozen pink salmon - 500 g (or use lightly salted salmon)
  • squid - 3 carcasses
  • salt - 1 tbsp

Stages:

1. Cut the defrosted fish into pieces as shown in this photo. Pour vegetable oil into a cup and carefully dip each piece of pink salmon into it with a fork. Let the oil drain from the fish.

I know that many people simply pour boiling water over these sea animals and wait 5 minutes, or they pour boiling water over them in three batches, so decide for yourself. I’m showing you the method that I personally use. So, here are the instructions:

1. Take your “wards” and remove tentacles and inedible parts from them. To do this, find the eyes and grab the carcass with one hand.


2. Pull slowly, and all the excess will come off onto the cutting board. The tentacles are usually thrown out, and the head too.

If you bought these weirdos in the supermarket without a head and tentacles, then skip these steps.


3. You can see that each carcass is covered with a film that needs to be removed. How to do it? Pour boiling water over the carcasses and wait 1 minute in boiling water, and then immediately place them in ice water.

This temperature will allow you to remove the skin quickly and easily.


4. Now cut each piece lengthwise and remove the chitinous plate and, accordingly, the insides. This is what you need to do if, for example, you are going to cook.

In our case, this cannot be done, because the squid must be whole in order to be stuffed with filling.

Therefore, carefully remove the chitinous plate and entrails from inside with your hands without disturbing the shape.


5. Now place the cleaned “exhibits” in slightly salted water, it should already be actively boiling and boil for 1 minute after boiling.

  • 4 eggs;
  • 1 onion;
  • A piece of cheese (150 grams);
  • 250 grams of mushrooms;
  • Sour cream (150 grams);
  • 1 tbsp. spoon of vegetable oil (olive).
  • Fry finely chopped mushrooms and onions in a frying pan. After that, you need to grate a piece of cheese on a coarse grater, and cut the boiled eggs into small pieces. Combine all ingredients, including rice, with mushrooms, salt and pepper to taste. We stuff the cleaned squid carcasses with the resulting minced meat. Place in a baking dish and spread sour cream on top.

    The dish is prepared in the oven at a temperature of 200 C°, cooking time 25 minutes.
