Recently I prepared manna at home and you can imagine my surprise when almost half of my friends who are almost 30 years old tried manna with kefir for the first time. Why, they tried manna with kefir for the first time.

And so I had the idea to introduce you, dear chefs, to this simple and delicious pastry. What is manna? It’s practically the same biscuit, only prepared on the basis of semolina.

There are a huge number of recipes for making manna. And almost every recipe claims to be the most classic one. The basis of any manna was and will be a fermented milk product, be it sour cream, kefir, sour milk. All these are fermented milk products, so choose which one you like best. But there is also a constant composition of manna, which consists of the following set of products: semolina, flour, sugar, butter.

And so, in order to continue the conversation about manna, I suggest starting with the simplest recipe for making manna. There is nothing unusual or complicated in this recipe. All products are familiar and accessible, so let's get to the point.

INGREDIENTS:


Semolina 1 cup.

Sugar 1 glass.

Kefir 1 glass.

Wheat flour 1 cup.

Egg 2-3 pieces.

Butter 120-150 grams.

Baking powder. (or a teaspoon of baking soda).

COOKING PROCESS:

☑ Mix semolina with kefir and leave for an hour so that it gets wet and then does not crunch on your teeth.

☑ Take the butter out of the refrigerator and leave it on the table at room temperature. So that it becomes soft and can be cooked from it in the future without difficulty.

☑ After an hour, you can start preparing the manna.


☑ Eggs, sugar, flour, butter, mix in a bowl and beat until smooth.

☑ Once everything is mixed, you can add a little baking powder, 1-2 teaspoons will be enough. Leave the mixture for 30 minutes.


☑ Combine the semolina with the rest of the products, mix and place in a baking dish.

☑ Bake the mannik at a temperature of 180-200 degrees for about 30 minutes.

☑ After 30 minutes, take the pie out of the oven, let it cool for 10-15 minutes and you can serve it.


This is the most common recipe for making manna with kefir. This can be said to be the basis of the basics; it’s worth starting to study manna from it so that you can later prepare your own versions of this pastry from the classics. And who knows, maybe in a few years someone will also pass on your recipe from generation to generation.

Mannik with kefir recipe without flour


In fact, semolina is the same flour only coarsely ground. In a pie like manna you can do without flour. True, you will have to first prepare the semolina itself so that it can completely replace flour. First you need to soak the cereal until it swells. But if it is visually clear that the cereal contains foreign objects such as specks or husks, then it is worth sifting the semolina through a large sieve. Or just remove the trash with your hands.

Like all other recipes for manna with kefir, this one is not particularly difficult, except that there is a little more semolina in it than in the classic version.

INGREDIENTS:

Semolina 1.5-2 cups.

Sugar glass.

2 eggs.

Butter.

1.5 cups of kefir.

Vnail 1 sachet.

COOKING PROCESS:

☑ Mix all the prepared semolina in a deep bowl with kefir.


☑ Cereals should be added to kefir in a thin stream, stirring constantly. In order to prevent the appearance of lumps.

☑ Leave the semolina to swell for 40-60 minutes, the longer the better.

☑ Break the eggs into a separate bowl and beat lightly until the yolks combine with the whites, pour the resulting mass into the semolina.


☑ Add sugar to semolina and eggs. Mix everything well until the sugar dissolves.

☑ Add soft butter and vanillin to the dough and mix everything well again.


☑ Grease the form in which we will bake our manna with vegetable oil.

☑ Pour the dough into the mold and place it in the already hot oven.


☑ Manna is prepared for 30-40 minutes at a temperature of 180-190 degrees.

Mannik with kefir recipe without eggs

Yes, yes, this is also possible. As I say, this manna is simply an extraordinary pastry; it can be prepared from various sets of ingredients and it still turns out very tasty. This recipe is like a lifesaver for those who, for one reason or another, cannot eat eggs.


INGREDIENTS:

Kefir 1.5 cups

Semolina 1.5 cups.

Sugar 1 glass.

Flour 1 cup.

Butter 100 grams.

Baking powder or soda 1.5 teaspoon.

A little salt.

Vanilla, cinnamon, nutmeg optional.

COOKING PROCESS:

☑ Melt the butter, mix with sugar and a pinch of salt.

☑ Mix semolina with kefir and stir so that lumps do not appear.

☑ Mix the melted butter with semolina, stir and leave for an hour.

☑ After an hour, add flour and vanilla. Mix well.

☑ Grease the mold with oil. You can use vegetable if you don’t want it, you can use creamy, there’s no difference.

☑ Transfer the dough into a mold and place it in a hot oven for 30-40 minutes. Bake at a temperature of about 180-190 degrees.

☑ Do not use a baking dish that is too deep. This way the dough may burn at the edges but remain raw in the middle.

☑ We take out the fragrant rosy manna from the oven. Remove it from the mold while it is hot. Let it cool a little and serve.

Mannik with kefir recipe in a slow cooker

In order to cook manna in a slow cooker, you only need to have the desire, and of course, a slow cooker. Cooking manna in this miracle unit is as simple as in the oven, and since this miracle machine regulates the temperature itself, the manna does not burn to the walls.


This recipe will become a quick recipe for you as it is easy to prepare and the taste is unusual. Mothers also love to cook this dish for their children because it uses semolina, which is rich in calcium and a bunch of other healthy vitamins. Moreover, it is not demanding when it comes to cooking; you can cook dinner and at the same time mix and prepare products for baking. So take this recipe for yourself.

INGREDIENTS:

Semolina 1 glass

Sugar is a little more than half a glass.

3 eggs

Kefir 1 glass

Butter 12-130 grams

Vanilla for aroma.

COOKING PROCESS:

☑ Pour semolina into the kefir in a thin stream and stir constantly until the semolina is mixed with kefir. Make sure that no lumps appear. The swelling time of semolina is from 30 to 50 minutes, it all depends on the type of semolina.

☑ Beat eggs and sugar in a separate bowl with a mixer until a weak foam appears. To make the eggs beat better, throw a little salt into the bowl.

☑ As soon as all the semolina has swollen, you can start preparing the dough. Add the beaten eggs to the semolina and mix. Add a little vanilla one more time, mix everything well until smooth and you can put the dough into the multicooker bowl.

☑ Pre-lubricate the multicooker bowl with butter and transfer our dough into it.

☑ Set the baking mode and when everything is ready for the process, press the start button. In almost all multicookers, the time range is from 30 to 45 minutes. It all depends on the power of the unit.

☑ After the time has passed, the multicooker will notify you that your manna is ready. Give it some time to cool down. We take the manna out of the bowl and place it on a dish. The mannik is ready, you can sprinkle it with powdered sugar or pour it with condensed milk whipped with sour cream.

Mannik on kefir with filling

This is a very old recipe for making manna with kefir. My grandmother often prepared manna according to this recipe. But she didn’t just cook it, but always with filling. In the summer, grandma dried plums, apples, cherries and much more, and in the winter she made pies and jelly from dried fruits. She always made everything very tasty. I suggest you prepare manna stuffed with dried plums. Perhaps today it’s easier to find fresh or frozen ones, not dried jelly, well then it doesn’t matter, cook from what you have on hand, I think the taste will only get better from this. I also didn’t have dried ones, so I cook from frozen ones.

INGREDIENTS:

Semolina, flour, sugar and kefir, all in one glass.

2 eggs.

A tablespoon of butter.

Powdered sugar.

Vanilla sugar or vanillin in a bag.

Just a little pinch of salt.

Baking powder (of course grandma added soda)

COOKING PROCESS:

☑ Mix eggs and sugar and a little salt in one bowl and beat until white foam appears.

☑ Add semolina to this foam, mix vanilla flour.

☑The next step is to pour in all the kefir and add baking powder. Mix. The dough is not too thick, this is normal, over time the semolina will absorb the liquid and swell, and then the dough will be like dough.

☑ Leave the dough in this form for 20-30 minutes, but in the meantime you can fire up the oven and let it warm up.

☑ While the oven is heating up and the semolina is swelling, prepare the mold and plums.

☑ Grease the mold with either vegetable oil or butter. It is better to use a silicone mold; the pies always pop out without any problems. Of course, grandma always baked in a frying pan, but why not use progress to your advantage.

☑ It is advisable to defrost the plums first.

☑ And so the dough is ripe, let's get down to business. Pour half the dough into the mold and lay out the plums. Then pour the rest of the dough over the top of the drains.

☑ Put the manna in the oven and bake it at a temperature of 180-190 degrees for about 30 minutes. Check readiness with a toothpick. If it remains dry after piercing the pie, then the pie is ready.

☑ We take our rosy manna out of the oven. Cover the pan with a cutting board or plate. We turn it over and then put the dish on the manna on which you will serve it to the table and turn the manna back onto the dish. Of course, you need to let the pie cool a little otherwise your guests will burn their tongues. Sprinkle the pie with powdered sugar. And we serve it to the table.

  • If you don’t have kefir on hand, you can use any fermented milk product: sour milk, sour cream, fermented baked milk, yogurt.
  • To bake manna in the oven, do not take too deep forms. Since the edges of the pie will be completely cooked, but in the middle it will be completely raw. Take wider pans and the cooking time will be reduced and there will be less chance that the cake will burn.
  • You can easily make a small cake from manna. Cut the finished manna into halves to make two cake layers. Soak them in any cream and the cake is ready. The cream can be made from sour cream and jam, sour cream and condensed milk; preparing custard is also easy. And decorate the cake to your liking on top.
  • Add a little cocoa to the dough (after diluting it in water) and you will get a chocolate manna.

To prepare apple manna you will need:

  • 2 tbsp. semolina;
  • 2 pcs. chicken eggs;
  • 1 tbsp. granulated sugar;
  • 100 g butter margarine;
  • 1\2 lemon;
  • 100 g raisins;
  • a pinch of salt;
  • 1\2 tsp. soda slaked with vinegar;
  • 30 g wheat flour;
  • 150 g kefir;
  • 20 g butter;
  • 10 g breadcrumbs;
  • 3 pcs. medium sized apple.

Recipe for making manna on kefir with apples in the oven:

Mix semolina with kefir and let it soak for an hour. After the time has passed, start kneading the dough.
To do this, beat the eggs with a mixer, gradually adding sugar to them. When the mass is airy, add it to the swollen semolina.

Mix thoroughly and pour in the cooled melted margarine.
Grate the lemon on a fine grater, leaving the pulp, and add to the total mass. Mix everything well. Add washed and dried raisins, flour and slaked soda to the dough.

Wash the apples; no need to peel them. Simply cut in half, remove the pits and cut them into wedges. Add to the dough and mix well.

Place the baking pan in an oven preheated to 180 degrees for a minute, remove it from there and grease it with butter. Sprinkle breading on top. Pour the dough into the pan and place in the oven for 40-50 minutes.


Mannik on kefir with sour cream

To prepare kefir manna with sour cream you will need:

  • 1 tbsp. kefir;
  • 200 g semolina;
  • 2 pcs. chicken eggs;
  • 100 g granulated sugar;
  • a pinch of salt;
  • 10 g vanillin;
  • 10 g baking powder;
  • 20 g butter margarine;
  • 1 tbsp. sour cream.

Recipe for making manna with sour cream:

Add semolina little by little to the container with kefir, mix well and leave to stand for half an hour. You can even knead this mixture the night before and leave it in the refrigerator. But in this case, be sure to cover the container with cling film so that the semolina does not get airy.

Next, start preparing the dough. Beat the eggs a little with a mixer. Gradually add sugar and salt to them, without ceasing to beat. When the mixture becomes fluffy, turn off the mixer and add baking powder and vanilla. Mix everything carefully and pour into the semolina soaked in kefir.

Knead the dough well and pour into a frying pan previously greased with margarine. Place it in an oven preheated to 200 degrees for half an hour. When the manna has cooled, serve it along with sour cream. This is delicious!

Cooking secrets

  1. As additives you can use chocolate, cocoa, apple, any berries, condensed milk, fresh or canned pineapples, peaches, plums, apricots, bananas, raisins and other dried fruits (all of this, of course, without seeds), and to add flavor - vanilla, cinnamon, cardamom, etc.
  2. You can take yesterday’s or even the day before yesterday’s kefir, just make sure that it is not very sour. If you want to surprise your family with an unusual kefir-based manna in the oven, take a fermented milk product with fruit filling. You can also use drinking yogurt or yogurt.

Choose those with higher fat content.

    Preparation

    Mix semolina and kefir and leave for half an hour. Beat the egg with sugar. Add melted butter and beat again. Place the semolina mixture into the egg mixture and stir. Add the mixture of flour and baking powder and bring everything to a homogeneous consistency.

    Pour the dough into a glass mold. There is no need to cover it with a lid. Cook manna at 600 W for 6 minutes.

    To serve manna to the table, you don’t need, in general, anything other than a proven recipe and the desire to do a little more than is required - add a pinch of love, season with a handful of imagination, decorate with a drop of soulfulness. This is perhaps the most important thing you need to know about mannas. However, a little more information won't hurt.

    1. The correct technology for preparing manna with kefir involves 15-60 minutes, which are given to the cereal for swelling. Pour, mix and set aside - all other stages can be implemented only after this mandatory point in the program.
    2. Classic manna cakes are cooked in the oven, however, this pie turns out great in a slow cooker or even in a double boiler. To understand which option suits you best, try, compare and enjoy the one you like best.
    3. It is recommended to cut the manna only after it has completely cooled - otherwise you risk getting not beautiful, even pieces of the pie, but something half-collapsed. Of course, it is worth considering that in most cases, even cooled sliced ​​manna will still not give an even cut, but at least the pieces will be neat.
    4. The average baking time for manna cakes is 40 minutes, however, you need to focus not so much on the clock as on the appearance of the cake and its goldenness.
    5. Don’t be lazy to decorate the finished mannas - at least sprinkle with powdered sugar or cocoa using special stencils for cakes, and the appearance of the cake will be completely different.

    So, it was decided: to have manna on kefir! To avoid getting bored with the pie, you should change recipes, try new and unusual things. There are opportunities for this, so why not start? Here are seven affordable kefir manna recipes for the week.

    Monday. Classic manna with kefir

    If you have tried this pie at least once, you will never forget its taste: the soft, crumbly texture of the text and the deliciously crispy crust are paradise for those with a sweet tooth!

    Ingredients:

    • 1 cup semolina;
    • 1 glass of kefir;
    • 1 cup of sugar;
    • 1/2 tsp. salt;
    • 1/2 tsp. soda;
    • 2 eggs;
    • vanillin;
    • butter and breadcrumbs (flour, semolina) for greasing the pan;
    • optional additives - chocolate drops, raisins, dried apricots.

    Mix semolina with sugar, pour in kefir, leave for 15-20 minutes. Add eggs, salt, soda, mix and pour into a baking dish greased and sprinkled with breadcrumbs.

    Tuesday. Pumpkin manna with kefir

    The benefits of pumpkin for baby food cannot be overestimated - the product is wonderful, wonderful, affordable, budget-friendly, rich in vitamins and simply wonderful. Alas, not many children, and even adults, are ready to eat this vegetable in its “pure” form, but if you combine pumpkin with semolina, you get... it turns out magical: bright color, rich taste, crumbly crumb, crispy crust.

    Ingredients:

    • 200 ml kefir;
    • 300 g semolina;
    • 2 eggs;
    • 100 g finely grated and squeezed pumpkin pulp;
    • 200 g sugar;
    • 1/3 tsp. salt;
    • 1/2 tsp. soda;
    • 1 tbsp. l. orange or lemon syrup;
    • 20 g butter.

    Pour semolina with kefir, add sugar, leave for 15 minutes.

    Beat the eggs until noticeably light in color.

    Mix the kefir-semolina mass with salt, add soda and syrup (you can use citrus liqueur), add pumpkin. Mix well and pour in the eggs. Mix again.

    Grease the baking dish with butter. Lay out the dough. Bake at 180 degrees for about 30 minutes.

    We take the pan out of the oven, let the manna stand for 7-10 minutes, then remove it and transfer it to a dish. If desired, sprinkle with powdered sugar, candied fruits, and nuts.


    Wednesday. Mannik on kefir with bananas

    Rich manna. It’s strange to say this in relation to simple home-baked goods, however, this kefir manna is just rich. Luxurious, aromatic, moist, it is not a shame to offer it to guests and is pleasant to serve at home for evening tea.

    Ingredients:

    • 500 ml kefir;
    • 2.5 cups semolina;
    • 1 cup of sugar;
    • 2 bananas;
    • 100 g butter;
    • 1/2 tsp. soda;
    • 1/3 tsp. salt;
    • butter and flour (breadcrumbs) for greasing the pan.

    Pour semolina into a sufficiently sized bowl, add sugar, pour in kefir and leave for 10-15 minutes. After this, melt the butter and pour it into a bowl. Add salt and soda and mix again. Place half of the dough into a mold greased and sprinkled with flour (breadcrumbs, semolina).

    Cut bananas into circles or strips. Carefully place on top of the dough. Just as carefully, trying not to move the fruit, lay out the second half of the dough.

    Bake the manna in an oven preheated to 180 degrees for about 40 minutes.

    If desired, when serving, you can decorate the pie with caramelized bananas and a scoop of vanilla ice cream.

    Thursday. Mannik on kefir with caramel apples
