Ingredients:

  • Red or white fish fillet - 300-400 g.
  • Rice - 3/4 cup

  • Vegetable oil - 1/2 cup
  • Butter - 90 g.

  • Garlic - 3 cloves

  • Cream - 100-150 g.

  • Juice of one lemon and lemon zest

  • Fresh hot pepper - 1/2 pcs.

  • Onion - 1 head

  • Sweet, yellow, red and green peppers - 1/2 each

  • Small cucumber - 1 pc.

  • Cherry tomatoes - 3-5 pcs.
  • Sugar - 2 tbsp.

  • Starch - 1 tsp.

  • Soy sauce - 3 tbsp. l.

  • Ginger root - 1 small
  • Salt, pepper, parsley - to taste

Preparation:

  • Rinse the rice several times until the water is clear. Place in a saucepan, add water 2 cm above the rice, bring to a boil, add salt, stir and cook until tender for 20-25 minutes. Rinse the rice in a saucepan, drain the water through a sieve and let the water drain.

  • Melt 1/3 butter in a frying pan.

  • Grate 1/2 teaspoon zest from the lemon on a fine grater.

  • Cut some of the hot pepper into small pieces.

  • Add cream, lemon zest, juice of half a lemon, and hot pepper to the melted butter.

  • Heat the sauce, stirring constantly, when it begins to thicken, remove from the stove, stir thoroughly and pour the sauce over the fish.

Prepare sauce for vegetables:

  • In a deep container, mix sugar, juice of half a lemon, and starch. Grate 1-2 cloves of garlic

  • grate the root of fresh peeled ginger on a fine grater, add soy sauce, mix everything and add about 1/3 cup of water.

Prepare vegetables:

  • Peel the onion, cut into 4 parts, cut the quarters in half.
  • Also cut the multi-colored peppers into large pieces.
  • Cut the cucumber into slices.
  • Cherry tomatoes in half.

  • Heat the remaining vegetable oil and butter in a large frying pan, add the second part of finely chopped hot pepper, fry for 1-2 minutes, add onions, fry for 1-2 minutes,
  • add sweet peppers, fry for 3-4 minutes, stirring constantly, add cucumber and cherry tomatoes and fry for another 2-3 minutes.

Gently mix the sauce for vegetables and pour into the vegetables.

Different varieties and types of rice go harmoniously with fish: short-grain, long-grain, polished, unpolished, steamed, etc. Each type of rice has its own cooking time. Unpolished varieties require the most time; they are also healthier, for example, brown rice. Polished rice takes the least amount of time to cook.
The selected rice, such as basmati, needs to be washed in several waters.


What kind of sea fish fillet can you use for this dish?
The photo shows tilapia fillet, but almost any sea fish that you like or have in stock is suitable. We present the lists approximately in ascending order of cost per 1 kg.

White species of sea fish: pollock, pangasius, hake, tilapia, sole, catfish, greenling, flounder, pike perch, cod, sea bass, etc. Of these, the least fatty ones are: pollock, tilapia, hake, pike perch, cod. Red species: pink salmon, chum salmon, coho salmon, sockeye salmon, salmon, salmon, etc. The list in ascending price almost completely coincides with the list in increasing fat content.

Buy either prepared fillets or cut them from whole chilled or thawed fish. To do this, you need to cut off the skin with a wide, sharp knife and then make cuts along the ridge.

When purchasing frozen fish, give preference to those frozen using the blast freezing method. There is practically no icy glaze on it.

In addition to green beans and corn, sweet bell peppers are great for fish and rice; it is especially effective to use multi-colored peppers at the same time: red, yellow and green peppers. The finished dish will look brighter and more appetizing.
