Ingredients

To prepare the drink we will need:

  • natural ground coffee - 1.5 tsp;
  • sugar 0.5 - 1 tsp;
  • cream 10% 100 ml;
  • lavender flowers 0.5 tsp;
  • water 100 ml.

Cooking recipe

Of course, you can try this drink in a coffee shop, where a professional barista will prepare it for you in a matter of minutes. But you and I will prepare lavender raff at home. The recipe in both cases will be identical.

  1. put ground coffee in (or);
  2. pour 100 ml. purified cold water and set to minimum heat;
  3. bring the drink to a boil (do not boil!);
  4. pour slightly warmed cream into the drink;
  5. grind the sugar to powdered sugar;
  6. grind lavender flowers and add to powdered sugar;
  7. pour powdered sugar with lavender flowers into the drink;
  8. Using a blender (or cappuccino maker), beat the lavender raf until foam forms;
  9. pour into a glass and serve (or try without leaving the stove).

Coffee culture was not born in our country: we know that latte is an Italian invention, and pour-over or hario is Japanese. It’s easy to imagine that raf coffee, which is on the menu of almost every Moscow coffee shop and is increasingly found in other cities of Russia, originally came to us from other countries. However, the editors of The Village have never seen raf on the menu of European, American or Asian coffee shops. In addition, this name itself does not exist in other languages.

So who first came up with this coffee drink? Ekaterina Arkhipova, director of public relations for the Coffeemania chain, and general director of the Omsk coffee shop chain Skuratov Coffee Viktor Skuratov, chef barista and co-owner of coffee shops Anastasia Godunova, as well as chef barista of the Doubleby coffee shop chain Bogdan Prokopchuk.

Raf is a purely Moscow invention. It was invented in 1996–1997 at Coffee Bean, the first coffee shop in Moscow opened according to the American model. When one of the regular guests, Rafael, asked to come up with something for him, three baristas - Gleb Neveikin, Artyom Berestov and Galina Samokhina - prepared coffee with cream and vanilla sugar. The drink began to be called “raf”. Afterwards, the first Coffeemania opened in Moscow, and the barista team moved there. Raf continued to cook in the new place. The recipe has not changed.

Gleb became the director of the barista department and the chief roaster of the Coffeemania chain of coffee shops, I don’t know anything about Artyom now, and Galina works in the coffee industry. We didn’t really keep track of when and in which coffee shops raf began to appear, but now it is available almost everywhere, and not only in Moscow.

Despite the fact that our country is large, the coffee world is quite small. For example, Tatyana Elizarova, who taught us how to roast coffee, began her career at Coffee Bean, where this drink was invented. And, most likely, we learned about raf from her. But at the same time, we regularly visited Moscow and, perhaps, saw him in “Caffeine” or “Coffeemania”. Now it is almost impossible to find the ends where we first became acquainted with this drink. We decided to introduce it to our menu for a simple reason - we liked it. And we thought that the tastes of Omsk residents are not very different from the preferences of Muscovites. And in general, that’s how it happened. In our brew bars, raf is no less popular than latte or espresso.

I heard this story - just like everyone who deals with coffee: there was a certain guest, after whom the drink was named. I learned about raf when I was still working at Caffeine and making coffee there. From there came variations of raffa - citrus, lavender and so on.

But during my shifts in coffee shops I try not to cook raf - I am for the natural sweetness of milk or other ingredients that emphasize the taste of espresso, and sugar is added to raf. I prefer cappuccino or flat white, which Good Enough has already developed into a cult following. They have different cooking techniques, but they are sweet without the sugar due to the delicious milk and sweetness of the espresso.

There was a Coffee Bean coffee shop for a long time, and Rafael was a regular guest there.

He drank cappuccino, but one day he asked to use cream instead of milk, add sugar and whisk everything together (cappuccino is prepared separately: milk is whipped separately and poured into espresso without adding sugar). Subsequently, many of his friends appreciated this drink and began to call it “like Rafa,” but it sounded strange, so they simply shortened it to “rafa.” The result was a coffee drink that tasted like melted creme brulee ice cream (if we’re talking about the classic raffe based on vanilla sugar). There are also varieties of raf in which experiments are carried out with the composition of sugar: lavender - white, vanilla and dried lavender flowers, citrus - cane with orange and lime zest.

Rough coffee(this is the name of a cocktail based on espresso coffee) with lavender is a mixture of espresso with cream and - in the classic version - vanilla. How to make raff coffee with lavender

Oddly enough, the flower, which most people associate with soap and other household chemicals, can be widely used in cooking. The strong, bright scent of lavender is good in treats; it complements creamy, chocolate, and coffee flavors, giving them new depth and freshness. You just need to know a little secret: don’t overdo it! Cooks who add lavender have a sense of proportion, and therefore their recipes with lavender are successful.

1. Pour cold water over the coffee and place on low heat. Bring the drink to a boil and remove from heat. You can make coffee in any way convenient for you (Turk, French press, coffee machine, etc.).

2. In a coffee grinder, grind the sugar along with the lavender flowers.

3. Add the resulting aromatic powdered sugar to the coffee and stir.

4. Pour cream into the drink and warm up the coffee a little.

5. Whisk the coffee using a blender or cappuccino maker until foam forms on top.

Rough coffee is a hot mixture of espresso, cream and vanilla sugar, whipped by the steam vent of an espresso machine in a pitcher. What is raff coffee: the history of its appearance

The history of the classic recipe for this drink dates back to the mid-90s. Small coffee shop "Coffee Bean", located near the Kuznetsky Most metro station in the Russian capital, created a sensation among true coffee connoisseurs in 1996. It was one of the first establishments with three dozen varieties of bean coffee and its own espresso machine. Today this would not surprise anyone even in a small village, but back then “Coffee Bean” became a real culture shock.

Naturally, the coffee shop almost immediately had regular guests, each of whom had their own wishes and habits. Most of them limited themselves to small requests, but one of the regular customers, Rafael, did not drink the coffee presented on the menu. Then the barista came up with “Coffee Bina” especially for him beat espresso with vanilla sugar and 11% cream. Over time, many of Rafael’s friends began to order “coffee like Rafael,” “like Rafa.” This is how the name “raf coffee” arose, which first appeared on the menu of “Coffee Bina”, and then found its admirers not only in Russia, but also abroad.

Rough coffee recipes

Over the almost twenty-year history of raff coffee, in addition to the classic one, many other recipes have appeared. Next, we will talk about how to prepare lavender, honey and other variations this delicious drink.

Classical

1 cup of classic raff coffee includes the following products:

  • 5 g vanilla sugar;
  • 100 ml 11% chilled cream;
  • 25 ml espresso;
  • 5 g regular sugar;
  • 1 g cinnamon.

Preparation:

  1. Prepare the necessary ingredients and utensils.
  2. Pour the cream into the pitcher, add both types of sugar.
  3. Make espresso and also pour into the pitcher.
  4. Beat all ingredients with a steam vent until you get an airy foam.
  5. Warm up a cup or glass, pour the drink.
  6. Garnish with cinnamon and serve.

Lavender

Ingredients of 1 serving of lavender raff coffee:

  • 100 ml of cold filtered water;
  • ½ teaspoon lavender flowers;
  • 1.5 teaspoons of any ground coffee;
  • 1 teaspoon granulated sugar;
  • 100 ml 11% cream.

Step by step recipe:

  1. Pour coffee into a pot, put it on low heat, and fill it with cold water.
  2. Bring to a boil, but do not boil, but immediately remove the drink from the stove.
  3. Grind the sugar together with the lavender flowers.
  4. Add the resulting mixture to the coffee and stir.
  5. Pour in the cream and heat the coffee on the stove for a couple of minutes.
  6. Beat the coffee with a blender or cappuccino maker until a thick foam forms.
  7. Pour the mixture into a cup and serve immediately.

A small note: coffee does not have to be prepared in a Turk; you can make it in any convenient way. For example, in a coffee machine or French press.

Honey

Preparing honey raff coffee will require the following components:

  • 50 ml espresso;
  • 1 teaspoon honey;
  • 100 ml 11% cream.

To enjoy the soft and delicate taste of honey raff coffee you need:

  1. Brew espresso using any method.
  2. Heat the cream, pour it into the coffee and stir.
  3. Put honey.
  4. Beat with a cappuccino maker until a dense, thick foam forms.
  5. Garnish with a pinch of cinnamon and serve in cappuccino cups.

Citrus

For citrus raff coffee you will need:

  • 50 ml espresso;
  • 5 g vanilla sugar;
  • 100 ml 11% cream;
  • 5 g orange sugar.

The citrus version is prepared in the same way as the classic one. Lemon-lime slices are used for decoration.

Orange

To make orange raf coffee, you need to take the same ingredients as for the citrus recipe and add 2 teaspoons of freshly squeezed orange juice. The juice must be added to the pitcher along with all other ingredients. For decoration, it is better to use orange slices, and a pinch of cinnamon will emphasize the pleasant tartness against the background of vanilla and creamy taste.

Rough coffee can be served not only in the same style as cappuccino, but also as a latte macchiato, poured into large transparent glasses. When served this way, a creamy vanilla foam cap will look especially impressive.

If you want to enjoy more than 180 ml of drink, then you need to use 2 shots of espresso. Sugar and cream should be calculated taking into account the volume of utensils used. Cream that is too heavy can simply be diluted with water before mixing in the pitcher.. Those coffee lovers who are not very fond of vanilla need to be careful with vanilla sugar, as it is very easy to overdo it. In this case, you can even reduce the required amount from 5 g to 3 g per serving of classic raff coffee.

You don’t always have a coffee machine at hand, and since you need to prepare raf coffee using espresso, you can use an alternative method by brewing coffee in a French press or Turk. Just before mixing, the brewed drink should be strained, as grinding particles can spoil the impression of the drink. Although, this is a matter of taste, you can do without straining. To make raffe coffee hot, the cream needs to be heated in the microwave for 2 minutes at 800 power. Moreover, you can immediately add vanilla sugar to the cream, so it will dissolve faster. You can whip up raf coffee even in the absence of a cappuccino maker, using a blender or even an ordinary whisk. The main thing is that the result of beating is airy foam. Of course, raf coffee prepared in this way will be somewhat different from its classic version, but it will also give you a few pleasant moments.

Rough coffee appeared relatively recently, and its birth was spontaneous, so there is no need to be afraid to experiment when preparing it, adding new, previously unused ingredients.

“Raf” coffee, the recipe of which, at first glance, came from abroad, is a native Russian invention. Its lush structure and delicate milky-vanilla taste make the drink a favorite among visitors to both elite coffee shops and roadside trailers. And, by the way, it is easy to prepare at home.

In 1996, the Coffee Bean chain of elite coffee shops appeared in Moscow for the first time in history. The range of coffee here was truly impressive, which was new for Russian consumers at that time. However, one of the visitors to the establishment named Rafael quickly got tired of the variety offered and asked to come up with “something new” for him. The barista team working in the coffee shop that shift didn’t invent anything complicated... The young people simply whipped up a shot of espresso with cream and vanilla sugar!

The picky client liked the cocktail so much that soon other visitors became interested in it. The drink “like Rafa” became the most popular in the coffee shop, and therefore it was quite expected that its name was soon shortened to the laconic “Rafa”. A few years later, a new type of coffee appeared in many coffee shops in Russia, and later in Belarus, Ukraine, and other CIS countries. However, the new product never went beyond the borders of the Commonwealth.

Some people don’t see the difference between Raf and cappuccino or other types of coffee with milk. The difference lies in the cooking technology.

Usually the cream is whipped separately and then poured into the drink, which creates different layers in it. For Raf, espresso and cream are whipped in one container, which makes the structure of the cocktail softer and more fluffy. This drink is also complemented by the taste of vanilla.

Classic recipe at home

To create "Raf" coffee, you do not need to have a coffee machine. It’s enough to stock up on Turk and the desire to please yourself with a tasty drink.

The classic composition of "Raf" coffee includes:

  • vanilla sugar – 0.5 – 1 tsp;
  • espresso – 50 ml;
  • cream – 100 ml.

First you need to prepare espresso:

  1. 2 teaspoons of finely ground coffee, sugar (optional) and a whisper of coarse salt are placed in a Turk, which is held over the fire for the next 2 to 3 minutes.
  2. The mixture is thoroughly stirred and then poured with clean water (50 ml), preheated to room temperature.
  3. The drink is brought to a boil and removed from the heat. All that remains is to cover it and wait 5 - 10 minutes.

In a coffee machine, the base for “Raf” is prepared more easily. You should take the same amount of ingredients, mix and pour into the coffee maker. Coffee is ground very finely to obtain the richest flavor.

The key to perfect coffee is high-quality beans, optimal grinding and the correct preparation method.

Classic “Raf” is prepared like this:

  1. Espresso should be carefully strained, completely removing the ground beans.
  2. Add vanilla sugar.
  3. Heat the cream to a temperature of 60 - 70 degrees, but do not bring to a boil. Add to coffee.
  4. Beat the resulting mixture using a cappuccino maker/whisk/mixer until thick foam forms on the surface.

You can experiment with the amount of sugar (both vanilla and regular) at your discretion.

It is better to take low-fat cream - 10% or 15%. A more nutritious product will have to be diluted with water in equal proportions. In extreme cases, milk will do, but preference should be given to a natural fatty product.

Citrus "Raf" coffee

For a slight sourness and fresh aroma, a citrus component is added to the classic “Raf”.

Ingredients:

  • espresso – 50 ml;
  • orange juice – 2 – 3 tbsp. l.;
  • orange sugar – 1 cube;
  • vanilla sugar – 5 g;

Prepare the drink according to the recipe:

  1. Mix strong coffee, heated cream, vanilla sugar.
  2. Pour in orange juice and stir.
  3. Beat the resulting mixture until thick foam.
  4. Throw in an orange sugar cube.

The orange component can easily be replaced with any other - lime, tangerine, lemon. In the case of the last ingredient, it is recommended to add more sugar and reduce the volume of juice by half or dilute it with water.

Honey flavored drink

Honey coffee has a specific taste, but in combination with vanilla you get a unique “velvety” drink.

To prepare it you will need the following components:

  • strong coffee – 50 ml;
  • low-fat cream – 100 ml;
  • vanilla sugar – 0.5 tsp;
  • liquid honey – 1 tsp.

Cooking method:

  1. Pour vanilla sugar or vanillin with powdered sugar into the coffee, pour in a spoonful of honey, mix thoroughly.
  2. Add preheated cream.
  3. Beat with a blender or other device.

The drink acquires a special taste in winter.

Cooking with vanilla

You can enhance the sweetish vanilla flavor of the cocktail using natural vanilla essence.

But you should be careful with this element - if there is an excess of such liquid, the drink will acquire an unpleasant bitter taste, uncharacteristic of coffee beans.

Required ingredients:

  • espresso – 50 ml;
  • vanilla essence – 0.5 tsp;
  • cream or full-fat milk – 100 ml.

Natural vanilla essence is an infusion of vanilla pods in alcohol. It will add piquancy to the coffee. But if there is no such ingredient, then it can be easily replaced with vanilla liqueur (50 - 60 g).

How to prepare Raf with vanilla extract:

  1. Prepare espresso according to the proposed method, discarding the crumbs of coffee beans.
  2. Pour in essence, cream, sugar as desired.
  3. Beat thoroughly, cool slightly.

Coconut "Raf" coffee

A popular addition to coffee is coconut syrup or milk. It will be especially tasty in combination with a soft creamy taste.

To prepare take:

  • vanilla sugar – 1 tsp;
  • cream or milk – 80 ml;
  • coconut milk – 20 – 30 ml;
  • espresso – 50 ml.

Cooking method:

  1. According to the classic recipe, brew a portion of espresso and strain.
  2. Add sugar and stir until it is completely dissolved.
  3. Mix the cream, after heating it on the stove for a few minutes, with coconut milk.
  4. Pour in the milk mixture and beat for 4 – 5 minutes.
  5. Garnish with coconut flakes.

It is better to add one or two spoons of sugar for a richer taste.

Lavender drink

Exotic lovers and those who want to try something new can try the “oriental” version of “Raf” - with the addition of lavender. Despite the specific taste, drinks with this additive are becoming increasingly popular, and it is not difficult to prepare such coffee yourself.

For this you will need:

  • strong freshly brewed coffee – 50 ml;
  • vanilla or regular sugar - 1 tsp;
  • 15 percent cream – 100 ml;
  • lavender inflorescences – ½ tsp.

Cooking method:

  1. Using a coffee grinder or blender, grind the lavender flowers and vanilla sugar.
  2. Add the sugar-flower mixture to the hot espresso and stir.
  3. Pour in the cream and beat until foam appears.

Decorate lavender “Raf” coffee with whole lavender flowers.

Anyone can make such cocktails, and you can use both a Turk and a coffee machine.

The main thing is to adhere to the method of preparing espresso and the specified proportions.

If you want to prepare a larger quantity of Raf, the volume of ingredients must be increased proportionally. You can experiment with the proportions of vanilla sugar and other additives.

The drink can be served not only as cappuccino - in small porcelain cups, but also poured into tall glass glasses. Decorate the cocktail with a vanilla bean, an orange slice, coconut shavings, chocolate or almond chips.
