Ingredients

  • 2 kg chicken
  • 1/2 tsp. Provencal herbs
  • 1/2 tsp. ground thyme
  • 1/2 tsp. ground paprika
  • 1/3 tsp ground black pepper
  • 40 g garlic
  • 300 g quince
  • 50 ml vegetable oil
  • 20 g butter
  • 30 g honey
  • 100 ml white wine
  • 2 pcs. cinnamon sticks
  • 15 g mustard

Cooking method

    Prepare and weigh food.

    Gut the chicken, remove any remaining feathers, wash and dry with paper towels. Mix salt with ground black pepper, ground paprika, thyme and herbes de Provence. Rub the chicken thoroughly with a mixture of spices, put a whole head of garlic inside. Leave for 15 minutes.

    Wash the quince, cut each fruit into 8-9 parts, removing the seed capsule. Heat a frying pan, add vegetable oil, peel and crush 3 cloves of garlic with the wide side of a knife blade, fry for 2-3 minutes. Throw out the garlic. Place quince in a frying pan with butter, add half the honey and butter. Stir and simmer for 7-8 minutes, until the quince is half cooked - it should not soften, but still remain elastic. Remove from heat.

    Turn on the oven and preheat to 180 degrees. Stuff the chicken with half the cooled quince. The hole can be sewn up. Place the chicken in a spacious deep baking dish, distribute the remaining quince around the chicken, pour wine over it and place cinnamon sticks next to it.

    Mix the remaining honey and mustard. Brush the honey mixture evenly over the chicken.

    Bake the chicken for 60-70 minutes in the middle of the preheated oven. Gently baste the chicken with sauce from the bottom of the pan several times during cooking. Chicken with quince ready. Bon appetit!

Preparation

We cut the washed quince into several parts and remove the core, and cut the pulp into slices. Place it in boiling water for 1 minute, then place it in a colander and rinse with cold water.
