The only way out is to cook it yourself. An excellent option for home baking would be a pie with cottage cheese made from shortcrust pastry.

Preparing a pie according to the classic recipe takes a minimum of time, but in return you get maximum pleasure.

What products are needed?

  • 200 g of cottage cheese, fat content 5%;
  • 150 g of flour, which needs to be sifted;

  7. Now let's get to the filling. Mix cottage cheese, egg and sugar in a container. You can add vanilla.
  8. Grease the pan where you plan to bake with butter or sprinkle with flour.
  9. Divide the dough into two parts: one more, the other less. Put the smaller one in the cold for half an hour.
  10. Roll out a large portion into shape and lay it out as a base, raising the sides at the edges.
  11. We spread the filling. Remove the hardened dough from the cold and rub it over the filling until it completely covers the curd.
  12. Place in the oven for 25-30 minutes, setting the temperature to 180 C.

How to make a shortbread pie?

This option is convenient because you don’t need to roll out the dough and line it in a mold. Plus, this cake turns out airy.

Ingredients:

  • 2 tbsp. flour;
  • Butter or spread 150 g;
  • Cottage cheese 300 g (fat content is not important);
  • Eggs – 2 pcs.;
  • Granulated sugar - 1 tbsp.;
  • Vanillin.

Cooking process:

  1. The butter can be chopped with a knife or grated after freezing.
  2. Add flour and half a portion of sugar to the crushed butter, grind until crumbs form.
  3. In another container, beat the eggs. Add cottage cheese, half a glass of sugar and vanillin to them. Mix everything.
  4. The mold can be covered with parchment or lightly greased with oil. The layout will be in three layers. Sprinkle in half the crumbs, then pour out the filling and cover with crumbs again.
  5. Preheat the oven to 180 C. Place the pie for half an hour.

Pie with cottage cheese and berries.

A little tip: you shouldn’t use strawberries or raspberries, because they can turn into puree in the oven. It’s better to use currants, blueberries, blueberries, or something that doesn’t “spread” for this dessert.

  3. Line a greased pan with dough, forming sides up to 5 cm.
  4. Pour the filling into it and sprinkle the berries on top.
  5. Place in a preheated oven at 180 C for 35 minutes.
  6. Remove from the mold after cooling and enjoy the taste.

With cherry

This cake is very similar to cheesecake after it has completely cooled.

Products for the test:

  • Yolk 3 pcs.;
  • Sugar 2 large spoons;
  • 200 g soft butter;
  • Sifted flour 1.5-2 cups.

Products for filling:

  • Pitted cherries 800 g;
  • Half a kilo of cottage cheese;
  • 3 squirrels;
  • Half a glass of granulated sugar;
  • Butter 100 g.

  1. First, beat the yolks and sugar. Next, beat the softened butter with flour with a mixer, add the egg-sugar mixture, and form a ball. It will turn out greasy and heavy. Wrap in film and cool for half an hour.
  2. Pre-wash and dry the cherries.
  3. Let's prepare the filling. Beat cottage cheese, butter, sugar. Separately beat the whites and gradually introduce them into the filling. Mix everything.
  4. Take the dough out of the refrigerator and place it in the mold, making sides.
  5. Pour the filling on top and place the berries.
  6. Place in an oven preheated to 180 C and bake for 40-50 minutes.

In a slow cooker

Every multicooker owner simply must prepare this pie.

What do we need?

  • A little more than one glass of sugar;
  • 1.5 cups flour;
  • Soda 0.5 tsp;
  • Butter or margarine 100 g;
  • Cottage cheese 250 g;
  • One egg;
  • Sour cream.

Preparation:

  1. Let's do the dough first. Chop the butter with a fork or knife.
  2. Mix all dry products: flour, soda and sugar (half the amount specified in the recipe).
  3. Add butter to the mixture and knead everything with your hands until smooth.
  4. Now to the filling. Beat the egg, sugar and cottage cheese into a homogeneous mass.

  1. Preheat the oven to 200 C.

With cottage cheese and apples

A version of this pie is suitable for autumn, when the choice of apples is especially large.

Ingredients:

  • Flour 2 tbsp;
  • Sugar half a glass;
  • Butter or margarine 180 g;
  • Baking powder 1 teaspoon;
  • Egg.

For filling:

  • Cottage cheese 200 g;
  • Apples 2 pcs. sweet;
  • Sugar 1.5-2 cups (as you like).

Procedure:

  1. First, let's make the dough. Mix all the dry ingredients for the dough and add margarine cut into pieces. Mix with your hands. A crumb will come out. Add the egg and knead the dough.
  2. Divide the mass into parts 1/3 and 2/3. Place in film and refrigerate for half an hour.
  3. In the meantime, let's make the filling. Peel and grate the apples. Add sugar and cottage cheese. Mix.
  4. Now roll out 2/3 of the dough along the diameter of the mold and line it, forming the sides. Prick with a fork.
  5. Place the filling on top and cover with the remaining rolled out dough.
  6. Place in the oven at 180 C and bake for about 30-35 minutes.

Shortbread dough is one of the fastest to prepare. It is very soft and tender, but at the same time it is difficult to handle when rolled out.   3. Place the kneaded dough into a bag and refrigerate for 30 minutes.

  4. While the dough is resting, prepare the filling. Place 400 g of cottage cheese, 1 bag of vanilla sugar and 100 g of granulated sugar in a bowl. Also beat 3 eggs and add the protein that remains after preparing the dough.

  5. Beat with a blender until a homogeneous mass is formed.

  6. Add a tablespoon of starch and the zest of one lemon. Mix well.

  7. Now prepare the mixture with which you will sprinkle the pie. Take 100 g of cold butter, cut it into cubes.

  8. Add 70 g granulated sugar and 100 g coconut flakes. Mash the mixture with your hands until all the ingredients are mixed and form crumbs. Place it in the refrigerator temporarily.

  9. Remove the shortbread dough from the refrigerator, which has been left for 30 minutes. Take a round springform pan and place the dough in it. Then spread it evenly over the bottom of the pan with your hands, making low sides.

  4. Make the filling. To do this, combine 750 g of cottage cheese, 4 eggs, 140 g of sugar, 4 tsp. starch and a pinch of vanillin. Mix all the ingredients into a homogeneous mass; it should be quite liquid. During baking, eggs and starch will make the curd mass dense.



  5. Peel 2-3 apples and cut them into thin slices, approximately 0.5 cm thick.

  6. Place the apple slices on the curd mixture, lightly immersing them.

  7. Sprinkle cinnamon on top to taste.

  8. Place the pan with the pie in an oven preheated to 180°. Bake for 40 minutes.

  5. Pour a little more than half of the chocolate chips into the pan. Distribute it evenly, creating small sides. Don't be afraid to press down the crumbs, they need to be shaped.

  6. Turn on the oven to heat to 180°.
  7. Place all the curd filling on the chocolate layer. It also needs to be well distributed.

  8. Sprinkle in the remaining chocolate chips and lightly smooth them out with your hands. You can press the top layer a little, but without fanaticism, do not forget that there is liquid cottage cheese underneath.

  4. When all the grains have dissolved, turn off the heat and let cool.
  5. In order to the mass cooled faster, you can put the pan in cool water.

  6. Take out a deep bowl and a sieve. Sift the flour through a sieve, add baking powder and mix everything thoroughly.

  2. Mix in a blender or food processor pre-prepared cottage cheese, condensed milk, eggs and corn starch.

  3. Mix the resulting mass well so that there are no lumps.

  • low fat spread – 80 g;
  • granulated sugar – 1 tbsp;
  • vanilla sugar – 1 sachet;
  • soda – 1 tsp.

Preparing dietary dough is even easier than using the classic recipe:

  1. Grind the softened spread with granulated sugar, vanilla sugar, slaked soda and egg.
  2. Mash the cottage cheese with a fork and add to the other ingredients. Stir until smooth and allow 15 minutes to “ripen”.
  3. Add the sifted flour into the mixture, stir and wait a few minutes until it thickens. Knead the dough, roll it into a ball and refrigerate for 30 minutes. The chilled dough can be used to form future baked goods.

Low-fat cottage cheese, spread and a small amount of sugar greatly reduce the calorie content of products made from such dough. In cookies without filling and topping, it will not exceed 200 kcal per 100 grams, so you can treat yourself to them even on a diet.

Cooking technology and quality requirements.


It would seem that making shortbread dough is a piece of cake. Mix everything and it's ready. But no, without certain rules you may end up with a hard dough with unpleasantly crunchy grains of sugar on your teeth. Of course, if you are friends with baking and know everything or almost everything about it, then you can skip all my advice. Well, if you are a beginner, then I will try to sort everything out for you.

Of course, kindergarten kitchens are equipped with special equipment for kneading dough, therefore, in the technological map they simply write - knead everything until smooth. But what if we only have our hands and a regular mixer? We will build on this.

Eggs must be washed before use, especially if they are homemade. For what? If you are interested, read about it, which is on our website.

Remove all ingredients for cooking from the refrigerator in advance; they should be at room temperature before kneading.



Instead of regular sugar, you need to take fine sugar or powdered sugar, since the dough is quite dry and regular sugar will not dissolve well, resulting in a crunch on the teeth, which is not very pleasant. No powder? Just pour sugar into a coffee grinder and in five to ten seconds the powder is ready.

In a bowl with a mixer, mix butter with sugar, egg and sour cream. Please note that in kindergarten they take sour cream with no more than 15% fat content. This is not important for the dough, but the fat content will be slightly reduced.



Sift the flour. This is not necessary at all to saturate the air, as it seems to have already been proven that nothing is particularly saturated, but to ensure that there are no lumps and debris that are sometimes found in flour.

Add flour, soda to the bowl and mix again until crumbs form. Next, quickly gather the dough into a ball with your hands. The longer you knead the dough with your hands, the more the butter melts and the harder the dough will be.

The dough is ready, but while we clean everything up, wash the dishes and make the filling, let our dough lie in the refrigerator. To prevent it from drying out, wrap it in a regular cellophane bag.



According to the technology, the cottage cheese is first whipped until smooth; it should become smooth, without lumps. This can be achieved in two ways - grind in a blender or grind through a sieve and then mix with all the other ingredients. The blender is generally simple, with a minimum of body movements - just put all the ingredients in there and beat well. Half a minute and we have a smooth curd mass.

If you see that the cottage cheese is a little dry, add a spoon or two of kefir or low-fat sour cream. I added 2 tablespoons of kefir. I didn’t add soda at all, and in the end the filling turned out quite tender. Moreover, the filling already increases in size during baking and can tear the dough, which is undesirable.



The oven needs to be preheated, so now is the time to turn it on. This is important for shortcrust pastry.

Take the dough out of the refrigerator and divide it into 10 equal parts. The easiest way is to weigh all the dough, divide by 10 and then weigh out the required amount. If there are no scales, everything is done by eye.

According to the technology, these 10 parts must be divided into two more parts, each of which should be rolled into round cakes. Next, place a spoonful of curd mass in the middle of one, and cover with the second circle, overlapping the edges.

I decided to make it a little simpler: roll it out into a wide oval (the thickness of the dough is a couple of millimeters), and pile the filling on one edge.



Carefully cover with the other half (be careful that the cottage cheese does not “creep”) and lightly press the edges. Next, I pressed it along the edge with a fork, making a sort of Christmas tree.



Line a baking tray with baking paper and place our shortbread curds. 12 pieces is just a whole baking sheet. In theory, you don’t need to lubricate them with anything on top; just put them in an oven preheated to 200 degrees.



Bake for 10, maximum 15 minutes, since even slightly burnt shortcrust pastry is not a tasty pastry. Let it better remain light. My edges turned brown, and I trimmed them a little here and there.

The curds turned out tasty, tender, with a lot of curd filling, and not particularly sweet. I sprinkled powdered sugar on top of them. If you want something sweeter, add an additional half tablespoon of sugar to both the dough and the filling.
