Sometimes you need to cook pizza very quickly, but at home you only have canned food and no meat or sausage. It doesn’t matter, there are a huge number of recipes where canned fish is added to the filling. True, in most cases, canned fish should be in oil.

Pizza is always prepared differently at home, because some people use canned mackerel, while others only add sardine or tuna. It all depends on taste. To prepare the dough, you can first prepare the dough, but if you don’t have time to wait, then you can immediately start kneading the dough.

To do this, mix flour with yeast with sugar and salt, add warm water and add oil. Knead everything well and set aside. While the filling is being prepared, the dough will rise. Cut the onion into half rings, open the canned food, pour out all the oil, and crush the fish well with a fork until smooth.

It is necessary to mix mayonnaise, sour cream and mustard; in some cases, grated cheese is added here, but it can be used as a topping. Place the finished pizza in the oven for 10-15 minutes. Pizza can be served hot or cold; it goes perfectly with any drink. You should not prepare pizza from only one type of canned food; you can and should experiment. Sometimes it’s worth paying attention to canned food in tomato sauce.

Ingredients

For the test: 3 cups flour,

15 g yeast,

3 teaspoons vegetable oil,

1 teaspoon salt,

Glasses of water (warm).

For filling: 1 can of sprat in oil,

130 g ham,

130 g cheese (any), olive oil,

ground black pepper, salt.

Cooking method

Place a mound of flour on the table and make a well. Crumble the yeast and place it in the center. Dissolve salt in water and pour it over the yeast. Mix flour and yeast, add vegetable oil. Knead the dough until it stops sticking to your hands.

Roll the dough into a ball, place in a large bowl sprinkled with flour, cover with a lid and leave in a warm place for 3 hours.

Cut the ham and cheese into thin slices. Place the dough in a greased or oiled pan, forming a small edge. Arrange the ham and cheese evenly. Place sprat, cut into small pieces, on top, pour a little oil.

Bake at 190°C for 30 minutes.

Everyone knows that the very first Italian pizza was made in Naples. But in each region of the country, the filling for this dish is made differently. For example, in Sicily, where large fishing ports are located, it is customary to prepare fish pizza. Today, the dish, which contains ripe tomatoes, mozzarella, Parmesan, anchovies, olive oil, and oregano, is called Sicilian pizza.

Classic Italian fish pizza with anchovies

To make Sicilian pizza, you need to prepare the following ingredients:

  • dry yeast - 2 tsp;
  • warm milk - 180 ml;
  • pizza flour - 240 g;
  • salt - 5 g;
  • sugar - 25 g;
  • 1 small egg;
  • olive oil - 6 tbsp. spoons (3 spoons for the dough and 3 for the filling);
  • anchovies (in oil) - 8 pcs.;
  • 5 tomatoes;
  • 3 tbsp. spoons of paste (tomato);
  • onion - 70 g (1/2 onion);
  • mozzarella - 100 g;
  • parmesan - 50 g;
  • spices.

Step-by-step cooking recipe:

  1. Make a batch of the ingredients for the dough. To do this, beat the eggs with milk with a fork, add yeast, salt and sugar. Now gradually add flour until the dough is elastic but not too tight. Leave it on the table for an hour to let it rise.
  2. Meanwhile, prepare the ingredients for the filling. To do this, peel the tomatoes, after scalding them with boiling water, cut the mozzarella into slices, grate Parmesan, cut the onion into half rings.
  3. When the dough has risen, you need to knead it, then carefully stretch it with your hands, gradually giving it the shape of a circle. By the way, in America they make pizza with anchovies square, so this baking dish will also come in handy.
  4. After the dough is rolled out (stretched), you can spread the filling thinly enough. First, distribute the anchovies evenly, then a layer of tomato paste. Onion is laid on top of the sauce, then halves of peeled tomatoes, mozzarella and Parmesan. The ideal flavor addition for this pizza would be a few leaves of basil and oregano.
  5. Authentic Sicilian pizza is baked in a wood-fired oven, where the temperature reaches 500 degrees in no more than two minutes. In a home kitchen, provided that the dough is rolled out thin, the pizza is cooked in an oven preheated to 250 degrees for 7 minutes.

A pizza option in which the filling is placed in the middle between two crusts is called a calzone. Another name for this dish is Italian pie. This pizza is shaped like a crescent. That is, the cake is rolled out round, then the filling is laid out on one half, covered with the other half, and then the required shape is given by hand.

The dough for calzone is prepared using yeast, according to the same recipe as for Sicilian pizza. The resulting dough will make two pizzas. But the filling may be different. For pizza with fish according to this recipe, yeast dough mixed with milk or water is suitable. For the filling you need to take 200 g salmon or trout fillet, processed cheese (for example, Hochland, packaged in cubes), tomato sauce, spices to taste.

Making this pizza is very simple. The first layer of sauce is laid on the rolled out dough, then thin slices of fish and sliced ​​cheese in the same way. This is a recipe for inexpensive pizza, which is prepared from the most affordable ingredients. To make it, you will need canned fish from any fish in tomato sauce (sardine, sprat, anchovy). Thanks to the tomato juice inside the can, there is no need to prepare additional pizza sauce. In addition to fish, you will also need yeast dough with water, hard cheese and tomatoes.

First, traditional yeast-based pizza dough is kneaded. While it is cooking, you need to mash the fish well in tomato sauce, grate the cheese, blanch and cut two tomatoes into slices. Once the dough is evenly distributed over the pan, you can add the filling. First, minced fish is laid out, then tomatoes and cheese. In fact, traditional fish pizzas - napoletana, romana, siciliana, capricciosa - are usually made with anchovies. But, I must admit, anchovies are unusual for us, even somewhat exotic.

I remember in childhood the question that led to a dead end was - what are anchovies? Anchovies (Engraulis) are fish from the herring order. The most famous sardine is canned in oil. Although, as experience shows, very often it is not sardines that go into canning, but other fish, more affordable - anchovy, sprat, affordable types of anchovies, even herring. I heard that there is even a concept of “Russian sardines”, it’s very similar.

And in the USA, young herring is sometimes preserved under the guise of sardines. The French say that sardines in oil are made only in France, and the fishing there is predominantly manual, and sardines are caught with cod eggs, processed and preserved in jars. In addition, it is very important that the sardines “rest”, otherwise the taste will not be as good as it should be.

It is difficult to prepare a classic pizza with anchovies due to the unavailability of anchovies. For example, in Spain they successfully prepare pizza with sardines, and they usually call it “Spanish pizza.” In the United States, in states predominantly inhabited by immigrants from Italy, especially Sicily, pizza is prepared in the Sicilian style, using sardines as a topping: canned or salted.

  1. I saw anchovies only once, when I was deep-sea trolling for salmon in the ocean off the coast of Northern California. Well, it’s a kind of fish, 15-20 cm long. It’s very similar to our native and familiar salted sprat, only larger. Sports stores actively sell anchovy carcasses packed in plastic for bait.

  7. Grate Parmesan cheese onto a fine grater.
  8. Peel the tomato and, without removing the seeds, cut into very thin slices.
  9. Drain all the liquid from an open jar of sardines, and divide the fish into small pieces with your hands, removing the bones.
  10. Be sure to prick the dough laid out on the pan with a fork in several places. Grease the dough with tomato sauce.

  11. Spread the pickled onion over the entire area of ​​the dough, separating it into strips with your hands. Sprinkle pizza with dry oregano.
  12. Arrange the olive halves and tomato slices. I recommend lightly pressing the ingredients into the dough with your palms to even out the filling a little.

dough

Preparation:
Knead.
Peel the onions, cut into thin half rings and pour over boiling water.
Rinse the onion with water, add cold water again, adding 2 tbsp to the cup. vinegar. Leave the onion for 30 minutes. During this time it will marinate well.
Divide the dough into two parts. Do the same with the ingredients; this quantity makes two pizzas.
Roll out the dough into a circle, 1 cm thick.
Cover the surface of the dough with tomato sauce and sprinkle oregano on top.

Cut the potatoes into thin slices and place on the pizza.

Drain the water from the pickled onions. Place onions on top of potatoes.

Sprinkle the pizza with grated cheese.

Place the mold in the oven, preheated to 180 degrees. Bake for 20-30 minutes (depend on the power of your oven).
Serve the pizza immediately.
