My grandmother's recipe. Everything is super simple. The gingerbread cooks very quickly. But the taste, aroma, color are simply amazing. If you love carrots, then this will be a balm for your soul, but if anyone in the family doesn’t like them, they will never understand that they are there. Therefore, by preparing such a delicacy, I hope you will please both yourself and your loved ones.

Prepare food.

Grate the carrots on a fine grater (2 cups). Place in a bowl.

Break 2 raw eggs. Mix.

Add 1.5 cups of granulated sugar and 0.5 teaspoon of salt. Mix everything again.

Pour in 150-200 grams of melted butter or margarine. Mix.


Add cinnamon. Carrots go great with it. Those who don’t like it can replace them with other spices, or, in general, do without them.

Add wheat flour, about 3 cups, and knead the dough until the consistency of thick sour cream. The dough should not be steep!

To make the dough fluffy, mix 0.5 teaspoon of soda with 0.5 teaspoon of citric acid. And, pour 1 teaspoon of this mixture into the dough we have prepared and mix. The mass will increase in size.

On a sheet lined with baking paper and greased with vegetable or olive oil, quickly spread our mixture, spread and level with a spoon. Layer thickness is about 1 cm.

Bake for 25 minutes at 180 degrees in a preheated oven.
Remove from the oven, cut into diamonds, and sprinkle ground cinnamon on top.

  3. While the gingerbread is baking, prepare the cream: sour cream + condensed milk. Stir, maybe beat a little.
  4. Cool the finished pie, remove from the mold, cut into 3 layers and soak in cream. You can optionally decorate the top with grated chocolate and nuts, or anything else to suit your taste.

A recipe for carrot cake can take its rightful place both in the notebook of a novice housewife and in the list of dishes that are prepared during Lent. Preparing lean carrot cake is quick and easy. And even if this is your first culinary experience, this pie will turn out right the first time.

The peculiarity of preparing Lenten gingerbread is that the recipes should not contain ingredients of animal origin (butter, eggs, sour cream, milk). This makes it somewhat difficult to complete the task of preparing delicious baked goods. However, it is possible. And even with such a limited number of products used, the result is a delicious lean gingerbread with an amazing combination of aromas and tastes.

There is nothing complicated in preparing lean gingerbread. Although this dessert is prepared in different ways, using different recipes and a varied combination of products.

A simple recipe for lean carrot cake

Ingredients:

  • juicy carrots (it is better to take large root vegetables) – 2 pcs.
  • honey - 3 tbsp. l.
  • vegetable oil – ½ cup
  • water – 1 glass
  • sugar – ¾ cup
  • ginger, cardamom - ½ tsp each.
  • soda – 1 tsp.
  • flour – 300 g
  • cinnamon – 1 tsp.
  • sunflower seeds – 60 g
  • orange zest – 1 pc.
  • large seedless raisins (optional) – ½ cup.

To make the pie juicy and tasty:

  • carrots must be fresh;
  • carrot filling must be prepared in advance: wash, peel, grate and squeeze out the juice;
  • When adding raisins, they must also be sorted and washed in advance. Then pour boiling water over it for 15 minutes and leave to swell. Dried fruits will become softer and tastier. But before adding them to the dough, they must be dried by shaking them several times in a colander;
  • You also need to prepare an orange (choose a large, ripe, juicy fruit). We remove the zest from it, trying not to touch the white peel and chop it.

Let's start cooking:

  1. Prepare the carrot base. To do this, we divide the preparation of the base into two stages. First, mix the dry ingredients in a bowl (slaked baking soda, a pinch of salt, flour, steamed raisins, seeds, spices, carrots, orange zest). Mix everything thoroughly (it’s better to do this with your hands so that all the carrots are evenly coated in flour).
  2. In a separate saucepan, combine honey, water and sugar and heat until they are completely dissolved (almost to a boil). Add vegetable oil there (preferably refined).
  3. Combine the slightly cooled liquid mass with the dry mass, mix and obtain a thin, viscous dough with an orange tint.
  4. Bake by placing the lean carrot cake in a greased deep pan at a temperature of 180-200 degrees until cooked.
  5. Remove the finished carrot cake from the bowl, cool and decorate by sprinkling with powdered sugar. If you want, you can cut the resulting pie into two layers, soak them in syrup or spread with jam.

The peculiarity of lean carrot cake: with a minimum content of fatty products in the dough, it is impossible to determine by taste that this is a lean cake. On the contrary, it is a whole flavor bouquet that combines the unusual taste of carrots, orange zest, dried fruits and spices. This delicacy will appeal not only to those who are fasting, but also to those who prefer healthy, tasty food.

Lenten gingerbread with carrots, the recipe for which we got acquainted with, turns out to be soft in consistency, juicy and more tender than ordinary gingerbread gingerbreads. The structure of the dough also changes due to the addition of sunflower seeds and grated carrots. And the presence of honey in the recipe gives the baked goods a pleasant brownish tint and a unique aroma.
