Mulled wine is a classic recipe. How to prepare delicious, hot alcoholic mulled wine at home? The best recipes for making mulled wine alcoholic drink from red, white, semi-sweet and homemade wine

Greetings! Now it’s autumn outside my window, which is gradually turning into the winter stage. And for us, this is the first bell that it’s time to warm up with something)) Therefore, I suggest preparing mulled wine.

Nowadays this is no longer warmed wine with spices, but a good winter tradition. Winter has begun to smell like cinnamon and citrus for us. This is the time for different warming drinks.

Now we consider this to be quite ordinary and affordable. But he was known back in Ancient Rome. And it was considered a privilege of rich people, because spices at that time were expensive and were available only to a certain category of people.

So let's pay tribute to its taste and the ability to drink it as often as we want. After all, there are now many mulled wine recipes that don’t even contain wine. Of course, some rightfully call this version of the drink a compote, but I still really like it.

How long does it take to cook? Well, in general, no, the main thing is to know how to do it correctly.

So, there are two main options for preparing this drink. The first is when the spices are placed directly into the wine, and this mass is heated all together. The second is when the additives are boiled in water. They release all their aroma into it and then mix it with the wine.

If you liked the second option, then keep in mind that the amount of water is added in a ratio of 1 to 10. That is. For a standard bottle of 750 ml there is 75 ml of water.

And be sure to remember the most important rule of any mulled wine: you cannot boil the wine. This is due to the fact that at temperatures above 78.4 degrees the drink begins to evaporate alcohol very quickly and, accordingly, lose strength. Therefore, when heating, you need to stop at the heating mark of at least seventy degrees.

So, let's start by going to the store. We need a bottle of wine. Most often, both dry and sweet table options are chosen for mulled wine. What I mean is that usually when we come to a store and stop at the shelves with wines, we get lost. Some people don’t look at the product in the Packs at all. Someone, after choosing different varieties for an hour, buys the bottle that is more familiar.

I always pay attention to the container itself. For me, an indicator that the wine is not locally bottled is a depression in the bottom of the bottle.

Of course, we look at the excise stamp; there must be one.

Should I buy wine in packs? Yes, you can. It is well suited for a base, and we can make up for the lack of astringency in such a table vino ourselves (more on this at the very end of the article).

Also, Cahors is often chosen for this drink; its strength is usually above 10 revolutions, and there is also a strong sweetness. Therefore, there is no need to add sugar.

We know very well that any mulled wine contains various additives in the form of spices and fruits. This is good, but you need to pay attention to one aspect - when using ground spices, you can get a cloudy drink.

To prevent this from happening, it is recommended to use whole spices. Or place all the ground ones in gauze or a tea filter bag. I cooked and cooked them, took out a gauze bag, and immediately threw them away as unnecessary.

Let's take:

  • a bottle of wine (700 ml or liter),
  • water – 120-150 ml,
  • We take sugar as you like, but this amount will take approximately 2 tbsp.
  • 8 clove inflorescences,
  • 5 peas of allspice,
  • nutmeg powder on the tip of a knife,
  • 1.5 tsp cinnamon.

Let's start cooking according to the second method described above - with the addition of water.

I still believe that the wine should not be heated for a long time, and the spices will not have time to open up in it in those seconds. Therefore, let’s steam them first in some water.

So, preparing mulled wine is quite simple and quick.

Take a deep bowl. This could be a saucepan, saucepan or ladle.

Fill the saucepan with water, dilute all the spices in it. If you have a whole nutmeg on hand, you can grate it on the finer side of the grater. I took the ground version.

Now we need to heat this mixture. In a hot atmosphere, all the additives will open up better and release all the flavor into the decoction. Therefore, we put the saucepan on heat and, without worrying about anything, feel free to boil it!

Then remove this hot broth from the heat, cover with a lid and infuse.

Pour wine into a separate pan. If it is not sweet enough for you, then add sugar. Place the saucepan on medium heat and make sure it does not boil. It's difficult to determine, so I'm telling you what should happen.

It is important for us to catch the moment when steam comes from it and small white bubbles appear. Then immediately remove the container from the stove.

You can also check the temperature with your hand - when you touch the pan, your fingers almost tolerate the temperature. Well, you can also buy a special thermometer - it will give the most accurate result.

Then combine the wine with a decoction of spices.

Let the drink steep and soak with the lid closed for about 7 minutes. Then we strain into glasses and enjoy the tastes and aromas.

By the way, I like to pull it through a cocktail straw, so that slices of fruit always float at the bottom of the glass.

Non-alcoholic mulled wine with cherry or grape juice

As I wrote above, I really respect non-alcoholic mulled wine. Although, in essence, it does not have the most important component, so it turns out to be a very aromatic compote. But its taste is very rich.

And you are glad that you can drink warm drinks without harm to your health, no matter whether you need to go to a parent-teacher meeting or drive a car. Yes, you can treat the kids too, it’s delicious.

Let's take:

  • a liter of any juice (cherry, apple, grape, even cranberry will do),
  • 250 ml water,
  • 2 tsp lemon zest,
  • orange,
  • apple,
  • half a teaspoon of grated fresh ginger,
  • a pinch of cinnamon,
  • 3 carnation inflorescences,
  • 3 pieces of allspice,
  • 1 tsp cardamom

Immediately combine all the spices in a separate bowl. Of course, before that we will carefully count their number.

All that's left is to do the fruit. Cut the apple and orange into slices. We remove everything unnecessary (bones, twigs).

We remove the bright yellow zest from the lemon using a fine grater. It is this bright part that contains many essential oils. We need very little zest. If you like this drink a little sour, then add a couple of slices of lemon to the fruit.

Pour water into a saucepan, heat it, and then lower the spices into it.

After about five minutes, pour in the juice. Add water to reduce the sweetness of the juice.

Add fruit slices and citrus zest to the drink.

There is no need to boil again, even though this is not wine. It is still important to ensure that the essential oils from the fruits and spices do not evaporate.

After 7 minutes, remove the mulled wine from the heat, cover it with a lid so that it does not cool too much and wait for the drink to infuse.

We use it at any time and treat it to children.

Drink with honey and ginger from red wine against colds

Show me a person who doesn't know that mulled wine is popular for relieving cold symptoms. It seems to me that every adult has already tried this method).

So, red wine (and white wine too) accelerates the blood well. Citrus fruits and spices saturate the body with vitamins and restore the body's defenses. A warm drink warms the throat well. So let's treat ourselves deliciously.

For one serving we take:

  • a glass of any wine,
  • 70 ml water,
  • cloves - 2 inflorescences,
  • a pea of allspice,
  • 0.5 tsp cinnamon powder,
  • 3 cm ginger root,
  • kumquat - 1 piece (can be replaced with zest),
  • nutmeg powder on the tip of a knife,
  • 1 teaspoon of honey.

Pour water into a ladle and add all of the above spices, except honey. It is healthier when it is not subjected to any processing.

Place the container on the fire and cook for a short time. As soon as the broth bubbles (read: boils), immediately turn off the heat and let the broth brew for 7-8 minutes. During this time we will prepare the wine.

Which we will pour into the pan. Let's dilute it with kumquat or zest.

And put it on heat. We try with all our might not to overheat the wine; the temperature must be maintained up to 70 degrees.

Steam started to appear and white bubbles began to appear? If you notice this, then immediately turn off the heating. The wine has reached the condition we need.

We combine both liquids together. Season the mixture with honey. We remember that it cannot be heated, because honey loses its beneficial properties.

Let it brew for 5 minutes and strain the liquid into glasses.

How to prepare mulled wine with juice and wine in a slow cooker

And again I sing odes to this wonderful technique. What did she not cook for me))) Is it mulled wine? But no, let’s brew this miracle drink in it too. It will help you out when you are short on time or you simply don’t want to watch the wine.

Let's take:

  • a bottle of dry wine,
  • cloves - 6-7 inflorescences,
  • nutmeg - to taste (quarter teaspoon),
  • 400 ml juice (we use apple juice),
  • orange juice - a third of a glass,
  • sugar - 1 tbsp. spoon.

Without unnecessary actions, immediately fill the multicooker bowl with juice and wine.

Introduce clove inflorescences. Three nutmegs and add sugar (optional).

Place the bowl in the multicooker and turn it on to “Warm” for 2 hours.

This way the wine will be constantly heated to 50 degrees, but will not lose its taste, and this is only to our advantage. The spices will have time to open up and release their essential oils into the drink.

If you have a Multicook mode, then set the temperature to 70 degrees and the timer for 1 hour.

That's it, until the multicooker signals you about the end of the mode, you can go about your business and not think about mulled wine.

Fruit mulled wine with orange, apple and ginger

To me, winter smells of fruit and freshness. Do you remember how baked apples, tangerines or ginger tea smell? You'll just rock! And we’ll take and mix these smells with wine, and we’ll get another amazing drink recipe.

Let's take:

  • 1 orange,
  • half an apple
  • 500 ml dry wine,
  • half a glass of water,
  • 3 tbsp. spoons of sugar,
  • 1/4 teaspoon nutmeg,
  • ground ginger with a teaspoon,
  • 1 cinnamon stick,
  • 1 teaspoon of ground cloves or a couple of inflorescences.

We take a small container, most often I choose a saucepan or ladle. Once I even used a Turk (may coffee lovers forgive me!).

Place spices in a small ladle: cinnamon, cloves, ginger. Three nutmegs.

Pour water over the spices, stir and heat. Bring to a boil and turn off the heat. Close the lid and give the spices time to completely soak up the water for about another 7-15 minutes.

In the meantime, cut the fruit the way you like. I like small pieces so that they are imbued with flavor and are delicious to eat.

During this time, the water with spices has infused, we filter this broth and mix it with wine.

Add sugar. Lay out the fruit.

We put it on heat. But we don't boil it. After a couple of minutes, remove from heat and serve to your loved ones and guests.

How to brew a drink using white wine with honey, orange and cinnamon

We’re all talking about red, yes, about red. But white wine is also great as a base for this drink.

Let's take:

  • a bottle of white dry,
  • orange,
  • a good spoon of honey (tablespoon),
  • cinnamon – 1 stick,
  • 3 carnation inflorescences,
  • vanilla – 1 pod,
  • ginger – 3 cm root.

Cut the orange into slices. Cut a small piece from the whole root and cut off the peel. Cut the peeled root into slices.

Pour the alcohol from the bottle into a pan, which we send to heat. Add spices and orange to it. In general, we mix everything except honey.

Heat the wine so that it does not boil. At the first sign of boiling, remove it from the heat. Let it cool a little and dissolve the honey in it.

Then cover with a lid and wait for the mulled wine to brew.

Recipe with lemon and orange

You can use fresh citrus fruits, or you can only take their dried peels.

Let's take:

  • 50 g oranges,
  • 50 g lemon,
  • 1 cinnamon stick,
  • 5 carnation inflorescences,
  • granulated sugar – 2.5 tbsp.,
  • 400 ml of any dry wine.

Wash the fruits, cut them into circles along with the peel.

Place fruits, spices and sugar in a small saucepan and pour wine. Place on low heat for 5 minutes. Make sure that the mixture does not boil.

Close the lid and leave for another 5-10 minutes. Strain into glasses.

Strong mulled wine with cognac at home

When heated, wine greatly loses its strength, so it is often complemented with strong alcoholic drinks. It can be rum, brandy, vodka or cognac. It's your choice, but this ingredient is always added last and in small quantities.

Let's take:

  • dry red wine - 150 ml,
  • citrus zest,
  • cinnamon - 1/4 tsp,
  • cloves - 1/4 tsp,
  • nutmeg - 1/4 tsp,
  • honey - 1 tsp,
  • cognac - 25 g.

Grate the zest from the orange and lemon. We need a couple of teaspoons. Pour it into the wine.

Add spices to it and let the mixture heat up. Once it starts to bubble but not boil, turn it off the heat. Stir honey in it and cover with a lid.

After about 3-5 minutes, add cognac. Let the drink sit for another 5 minutes and enjoy.

How to make mulled wine with seasoning at home

It also makes sense to buy a special seasoning for mulled wine. It is sold in the spice section or near the wine racks. Manufacturers may be different, but the composition of the bag is important to you and me. It should not contain any preservatives or flavoring additives. Only a clear list of spices: star anise, bay leaf, cinnamon, etc.

You can take any wine, even inexpensive ones and in packs. But the main thing is that it is not powdery. Look at the excise tax and the composition of the product.

Let's take:

  • dry red wine,
  • set of spices,
  • 70 ml water,
  • 3 tsp Sahara.

Pour water into the pan. Bring to a boil.

Then reduce the heat and add spices to the hot water. This is necessary so that they give away more essential oils. The aroma that will float through the apartment is simply incredible.

Let this mixture brew for 10 minutes. Then pour wine into the water and turn on low heat.

After 10 minutes, check the taste of the drink and add sugar if desired.

Very fast and not expensive.

A very tasty recipe for tart mulled wine with tea

They say that good wine is distinguished by the presence of tannin. We can independently improve the taste of wine by adding tea to it.

Believe me, you will love this taste.

Let's take:

  • dry red wine,
  • orange,
  • 8 clove inflorescences,
  • loose tea – 50 g.,
  • bay leaf – 1 pc.,
  • cardamom – 5 g.,
  • cinnamon – 2 sticks,
  • sugar – 1 glass,
  • vodka or cognac – 150 g.

We brew tea as you are used to.

Separately, pour the wine into the pan.

Stick a clove into an orange. We cut it in half.

Add sugar to wine. And heat it up quietly. Add spices and strain tea into wine. It is better that the tea leaves do not get into the drink.

Add our orange halves and heat. Then remove the pan from the heat and wait about 7 minutes so that the fruit has time to give off its smell.

At the very end, add vodka or cognac.

We strain the drink into special mulled wine glasses or any glasses and enjoy the cool weather.

Thank you for your attention and I would love to know if you like warming and cozy drinks on cold evenings.

Mulled wine(from the German gluhende Wein - hot, flaming wine) is irreplaceable in the cold season. Particularly suitable for long winter or autumn evenings, hot drinks are most popular in the UK and Scandinavian countries. This hot drink is usually prepared from red wine with the addition of sugar and spices, cinnamon and cloves. Rum, cognac, liqueurs, and lemons are sometimes added to mulled wine, but in such quantities that these additives do not change the taste of the drink, but give it a more pleasant aroma.

Mulled wine a suitable drink for patients during the recovery period after infectious diseases, physical and mental exhaustion.

Good is the mulled wine that warms the soul in addition to the stomach. But knowing the recipe and warming the liquid is not enough to spread the warmth of your soul. Therefore, now we will give some important recommendations for those who decide to prepare this wonderful drink!

Laws of mulled wine:

  • The most important- mulled wine, like coffee, should never boil. Inexperienced aesthetes can ruin their first impression. The temperature should be around 70 degrees. This is unscientifically checked by hand :-) The wine should be heated in a fireproof container, excluding metal (except silver) until the white foam that forms first disappears.
  • The best choice of wine- Khvanchkara, Kindzmarauli, Kagor, Cabernet. Red, dry and not strong wines are ideal.
  • Mulled wine is drunk hot and always from tall (so that it cools down less) preferably transparent (to admire the color of the drink) glasses, inhaling hot ethereal vapors. The wine included in the drink should be consumed immediately after heating, before it loses its bouquet and taste.
  • If the mulled wine contains hot water, it must be boiled immediately before use. Do not pour hot water directly on top of alcoholic drinks, as this spoils their taste. Instead, carefully pour water around the edge.

Mulled wine with honey - an old Russian recipe

In Rus', winters are harsher than those of the founders of mulled wine in Germany. This drink is traditionally prepared from wine. The Russian people had problems with the supply of wine. Therefore, they came up with their own version of mulled wine, calling it sbiten. The drink received this name due to its two components: herbal tincture and honey tincture. They were combined and beaten together. They cooked it in a samovar and served it right outside in winter. Before tea appeared, sbiten was the most popular drink. On the streets you could always meet a sbitennik selling the drink in a special samovar. It quenches thirst well after a Russian bath, warms you in winter and has an anti-inflammatory effect. Try making mulled wine according to an old Russian recipe.

  • honey – 225 g;
  • cinnamon;
  • nutmeg;
  • table wine – 1.7 liters;
  • carnation.

Preparation:

  1. Pour wine into the ladle. Heat over low heat, do not boil.
  2. Add honey. Stir until completely dissolved. Put on fire.
  3. Heat until the first small bubbles begin to appear. If you have a thermometer, you can monitor the temperature. Turn off the gas when heating to 70 degrees.
  4. Add spices to the honey mixture as desired and to taste. Leave for an hour.
  5. Reheat before serving.

Any mulled wine recipe contains a special set of spices, which determine the taste and aroma of the drink. It is worth taking a responsible approach to the choice of ingredients, choosing only fresh spices.

Wine should never be boiled; the drink should only be heated. To keep the mulled wine light and transparent, strain it before pouring it into glasses. Add all spices carefully; too much can spoil the taste of the drink; use a minimum set of spices.

How to brew mulled wine at home - recommendations

  • We carefully prepare the main ingredients. Wash the fruits thoroughly, wipe the citrus fruits with a brush to get rid of the waxy coating. We do not chop the fruit very finely, because during the cooking process they will boil down and the finished drink will be impossible to strain. Small fruits can be placed whole, hard ones are cut into cubes, and citrus fruits are divided into slices or cut into circles.
  • It is advisable to take whole spices for mulled wine, not ground. When using ground spices, it is very difficult to strain the drink; moreover, it will squeak on the teeth and turn out cloudy. So, we buy cloves in buds, cinnamon sticks, peppercorns, and instead of ground ginger, fresh ginger root. When throwing spices into mulled wine, you need to know the measure and sense of taste, so as not to overdo it and not overwhelm the aroma of the spices.

  • It is not recommended to brew the drink in metal (aluminum) containers. To prepare mulled wine, it is advisable to use an enamel container or utensils made of ceramics or other material.
  • You can prepare the drink in 2 ways: with water and without. The first method: you need to bring the water to a boil, then add all the spices, sugar, honey, and at the end add wine along the side of the pan. Water must be taken from a spring or filtered. Calculate this way: 1 glass per 1 liter of wine. Second method: heat the wine over low heat with all the spices and sugar, and then let it brew (1-2 minutes) under the lid.
  • We do not boil wine under any circumstances. During boiling, a significant part of the alcohol evaporates and the taste is lost. To completely dissolve the sugar and honey, you need to stir the drink periodically. It needs to be heated at a temperature of 60-70°C. As soon as you notice that the white foam has disappeared from the surface of the drink, the mulled wine needs to be removed.
  • Serve the finished drink in fireproof glass glasses or ceramic cups (preheated). Before serving, be sure to strain through cheesecloth or a sieve. It is advisable to drink immediately while it is hot.
