To make the dough smooth and homogeneous, you can knead it using a mixer, using an attachment with a hook: first work with it at minimum speed, and then increase it to maximum and knead for about 5 minutes. Cover the finished dough with a towel and leave in a warm place until it increases noticeably. Line a baking tray with baking paper. For the filling, cut the washed tomatoes into thin slices. Finely chop the garlic. Cut the goat cheese into slices too. Lightly sprinkle the work surface with flour, turn out the dough, divide into 10 parts, form them into balls and, with oiled hands, make flat cakes about 12x5 cm in size. Place the cakes on a baking sheet, fan out the tomato slices, slices of cheese on top, season with salt, pepper, garlic, sprinkle a little olive oil and bake for 20 minutes at 200°. Wash the basil, pat dry, separate the leaves from the stem and cut into strips. Before serving, sprinkle the pizza with pepper and garnish with Parmesan and basil.
