Cut the bread into slices. Warm the milk slightly and soak the bread in it for 10 minutes. Peel the carrots, steam until soft, 20 minutes, and puree in a blender. Peel and core the apples, grate them on a fine grater and mix with carrot puree. Separate the whites from the yolks. Remove the bread from the milk and squeeze it out. Combine bread, carrots and applesauce, powdered sugar, cinnamon and yolks. Beat well with a whisk or mixer. Beat the whites with salt into a fluffy foam.
