Cream cake in the shape of a hedgehog. Cake “Hedgehog” - a delicious dessert without baking

The “Hedgehog” cake will be a wonderful decoration for any table! There is nothing complicated in preparing it, the main thing is to stock up on everything necessary ingredients in advance so that during the cooking process you don’t suddenly discover that you are missing something.

You can experiment with the cake filling as you please. You can prepare the cream that you like best and it will not harm the cake at all.

When it comes to decorating a cake in the shape of a hedgehog, you first need to work a little with the ingredients for it. Take the marzipan prepared in advance and make a small depression in the mass, then add the dye there and begin to knead thoroughly until the color is evenly distributed. If in the end the shade is not too saturated, you should repeat the procedure from the beginning.

To get several multi-colored pieces of marzipan, you need to repeat all the above steps with each of them separately. So, if you are planning to prepare a cake in the shape of a hedgehog with your own hands, then our master class with step-by-step photos will be an excellent assistant in the preparation process.

Ingredients

  • Egg
    (4 things.)
  • Sugar
    (150 g)
  • Wheat flour
    (150 g)
  • Boiled condensed milk
    (1 jar)
  • Butter
    (250 g)
  • Biscuit
    (taste)

Cooking steps

First we need to make a sponge cake. To do this, take a container in which it will be convenient to beat the ingredients, and break 4 eggs into it. After this, add sugar and begin to beat intensively until the mass becomes homogeneous and increases several times, acquiring a creamy hue.

After this, you can add the sifted flour and baking powder, continuing to beat. Then we transfer the dough into a mold, which we have previously greased with oil, and put it in the oven. It must be preheated to 200 degrees. The dough should be baked for 20-25 minutes.

You can check the readiness of the biscuit with your hand. It will be more reliable than a stick. To know if it is ready, you need to lightly press it with your hand. If after pressing there is a hole left, then you should wait a little longer.

When the sponge cake is ready, take it out of the oven and, depending on how tall it turns out, cut it into two or three parts, each of which needs to be greased with cream.

The cream is prepared very simply: melt the butter over low heat, put the condensed milk in a container in which it will be convenient to whip it. Then pour the condensed milk with melted butter and begin to beat thoroughly until the mass turns out to be light brown. After this, we begin preparing the decoration.

Make a sponge cake for the base of the cake decoration. The amount of ingredients depends on what size hedgehogs you want to make. The photo shows a sponge cake made from 8 eggs for a large hedgehog.

Using a small and convenient knife, cut out an oval shape - the basis for the sponge hedgehog.

Using scissors, trim the edges and “bevel” them slightly.

Now you need to lubricate the figure with cream. We make the cream from biscuit scraps. Add any of your favorite jam to them and mix to get a thick, homogeneous mass.

Using our hands, we give the figure a shape similar to a hedgehog and wait until the mass dries on it.

Now take the pre-painted marzipan, roll it out on the table and cut out a piece in a shape resembling a triangle.

We take the resulting piece of marzipan and carefully wrap it around the side of our hedgehog where its muzzle will be.

To make the spines, we need a pastry bag and a special nozzle for it, which looks like this.

We take a pastry bag, put cream in it and begin to make “thorns”, trying to place them as close to each other as possible so that there are no “bald patches”.

Now let's start making the legs and ears. For this we need sugar mastic and marzipan. Cut out small semicircles and give them the shape of ears.

We make the paws in the shape of a “droplet” and use a small knife to cut two short strips.

The eyes and nose can be made from dragees or cream, depending on your imagination. We decided to make them from mastic and marzipan, which we painted in advance.

Now take a thin brush, food coloring and remember drawing lessons in elementary school. Carefully draw a mouth for the hedgehog, tint the eyes, nose, and use a wide brush to make red cheeks.

We cover the cake with mastic or coat it with cream on all sides, place our hedgehog on it, let the cake brew and the treat is ready! Now you can safely treat your guests and household members to it! Children will be delighted with this dessert!

For children's party We prepare cute and very appetizing baked goods in the shape of a hedgehog. Used to form a cake chocolate sponge cake and classic butter cream with the addition of condensed milk, and for decoration we’ll use fresh or cocktail berries and any waffle decorations.

Decorating these baked goods is a tempting and interesting process, so we can safely involve the kids in developing their culinary skills. The “Hedgehog” biscuit cake will definitely delight the kids not only appearance, but also wonderful taste. A creative work will captivate and give precious moments of joy and family unity.

How to make a sponge cake for a hedgehog cake

  1. Beat the eggs with a mixer until the volume increases significantly (this will take 5-7 minutes). Gradually add sugar, continuing to beat until the sugar grains are completely dissolved.
  2. In another container, mix the dry ingredients: baking powder, cocoa and flour.
  3. After sifting, add the mixture of dry ingredients to the egg mass. Knead a glossy dough without lumps, with a uniform chocolate color.
  4. Take a rectangular baking dish (in our example, 33x23 cm), cover it with parchment, and then distribute the dough. We level the surface and send the semi-finished product into the oven, which is already hot. Bake at 180 degrees for about 20 minutes. We check readiness as standard with a toothpick by immersing it in biscuit dough. If there are no wet crumbs left on the toothpick, the cake is ready!
  5. Cool the finished biscuit until room temperature. Using a knife blade we “draw” on biscuit dough hedgehog silhouette. Carefully cut out the blank along the applied contour - this will be the base of our cake.
  6. To soak the cake, prepare a sweet syrup: add sugar to water and, stirring, bring to a boil and dissolve the sugar grains. Cool the finished syrup and add cognac for flavoring if desired. Pour the prepared syrup generously over the base of the cake.
  7. Grate the remaining biscuit on a coarse grater.
  8. Chop the nuts with a knife into medium-sized pieces.

  10. Add condensed milk one tablespoon at a time, continuing to work with the mixer.
  11. At the end, add sifted cocoa powder, the dosage of which can be varied, achieving a rich chocolate shade and aroma, or just slightly coloring the cream. Beat until smooth.

How to make a Hedgehog cake from sponge cake

  12. We immediately set aside approximately 2/3 of the cream to decorate the finished product, and 1/3 will be used in shaping the cake. First of all, apply a thin layer butter cream on the basis of our "Hedgehog". Next, mix the biscuit crumbs with nuts, add the remaining 1/3 portion of cream. Gradually add condensed milk, kneading the mixture with your hands. When the mixture of biscuit crumbs becomes viscous and sticky, there is enough condensed milk.
  13. We spread the resulting mass onto the base of the cake, tamping it down and forming the “body” and “muzzle” of the hedgehog.
  14. Place the rest of the buttercream in a baking bag and apply it to the surface of the cake in the shape of hedgehog spines. We leave the “muzzle” without cream.
  15. The “eyes” of a hedgehog can be drawn from egg white icing. To prepare it egg white beat with a mixer, gradually adding sugar, until a thick white mass is obtained. Small dragee candies or, for example, raisins are suitable as “pupils”.
  16. To make the cake look funny and interesting, we place our “hedgehog” on the “needles” fresh berries, any waffle decorations or

Hedgehog cake is a fun cake for a children's party. Any housewife can handle this recipe. There are a great many variations of this cake, but the one I offer is my favorite. This is a nutty anthill and not just nutty, but very nutty!

So let's get started! We will prepare everything you need.

Beat warm and soft butter with salt and sugar.

Add eggs and beat until smooth.

Add flour sifted with baking powder and quickly start soft dough. Do not knead for a long time, because the dough will come out tight and the cookies will be hard, but we want crumbly ones.

Place the finished dough in the refrigerator for 1 hour.

Pass the chilled dough through a meat grinder and place on a sheet. Bake at 170 degrees until golden brown. This will take approximately 20 minutes.

Cool the finished cookies.

Let's prepare the nuts. Sort the nuts and fry. I will do this in a multi-oven, I will fry the nuts at 200 degrees for 4 minutes.

Sort and rinse seedless raisins. Blot with napkins.

Grind some cookies into fine crumbs to even out the hedgehog.

Break the rest of the cookies into small pieces with your hands.

Place the nut mixture in a bowl.

Add raisins and broken cookies and mix everything.

Let's prepare the cream. The butter should be at room temperature, just like boiled condensed milk.

Beat the butter with a mixer with condensed milk until smooth and add most of the cream to the mixture of cookie nuts and raisins, and a smaller part of the cream to the fine cookie crumbs.

From nut mixture Form the body of a hedgehog in the form of a drop on a cake plate.

Level with a mixture of fine crumbs and cream.

Sprinkle the hedgehog's face with cocoa powder through a strainer. Glue the eyes and nose from chocolate drops with cream.

To decorate the hedgehog, dissolve coffee in 2 tablespoons cold water, add 2 tablespoons of condensed milk and vegetable cream. Beat at high speed and the cream is ready.

Place the cream in a pastry envelope and make needles for the hedgehog.

Decorate the hedgehog with flowers and mushrooms. Make a clearing from vegetable cream tinted green and whipped. Place leaves from the pastry envelope.

That's all! Our hedgehog cake is ready!

You can put the kettle on and call the kids!

You probably want to see the cut????? No, my hand won't rise. . . I'll go see who's ringing the doorbell. It’s always such a hassle with children’s cakes, no one wants to cut off the bear’s head, or break the doll on the cake, let them better figure it out themselves, without me!
