We almost always have a bottle of nut milk in our refrigerator. It makes any smoothie even tastier and more satisfying. Nut milk is a great alternative to regular milk that doesn't require a farm or cows to make.

To make nut milk, you only need water and any unroasted nuts. The most delicious milk comes from hazelnuts, almonds and Brazil nuts. You can use walnuts or pine nuts. Milk is also made from raw seeds - sesame, poppy or pumpkin seeds.

The milk will taste better if the nuts are soaked in drinking water in advance. If I prepare milk in the morning, I leave the nuts in a bowl of water overnight. In the morning I rinse and then mix the nuts in a blender with the required amount of water. But sometimes I forget about this and just use dry nuts.

The nut milk formula looks like this:
Nuts + drinking water + blender + sieve

The classic ratio of nuts to water is 1 to 4.

*To make 4 cups of nut milk, you will need 4 cups of water and 1 cup of nuts. For one glass of milk - 1 glass of water and 1/4 cup of nuts.

The ratio may change in one direction or another. For example, for more aromatic and thick milk, I sometimes take more nuts and less water - about 1 to 3.

1. Mix nuts and water in a blender. While the blender is doing its job, plain water will turn into white milk before your eyes. The more powerful the blender, the faster this will happen, and the more smooth and white the drink will be.

Preparing to cook

Tender and rich milk can be obtained from any nuts. The main thing is that they are not fried. Additional ingredients are water, and you can also use a little vanilla, cocoa powder, salt and sweetener or exotic turmeric.

Almonds absorb moisture longer than other nuts. Soaking it will require from 8 to 12 hours. Peanuts and hazelnuts need to be soaked for 8 hours, walnuts - 4 hours, and cashews - only 2 hours. The advantage of pistachios and Brazil nuts is that you can prepare milk from them immediately by pre-soaking them no need.

Classic recipe

Nut milk is prepared from nuts and drinking water in a 1:4 ratio. To make the drink more aromatic and thick, the proportions can be changed. Then you will need 1 part nuts to 3 parts water. You also need to stock up on a blender or juicer and a sieve.

Cooking with a blender

Mix nuts with water in a blender. Within 1-2 minutes, white milk of uniform consistency is formed.

Once blended, turn off the blender and strain the nut milk through a sieve. You can also use gauze. Stores also sell special bags for nut milk, but they are still quite rare.

Juicer preparation

A top-loading juicer is ideal for making nut milk. If the loading is horizontal, then there must be double gears.

Place nuts and water in standard proportions in a juicer. The result will be a liquid that will resemble cream in consistency. If desired, you can strain the milk - this way it will be homogeneous.

Pistachio milk

The strong aroma of pistachios and delicate green aroma make this drink unusual and interesting. To diversify the taste, you can add a pinch of ground cardamom. This drink is prepared very quickly because pistachios do not require pre-soaking, unlike other types of nuts. You can drink this milk on its own or add it to cocktails or desserts.

To prepare 1 liter of drink you need to take the following ingredients:

  • 1-2 cups raw unsalted pistachios;
  • 1 vanilla pod or 1 tsp. powder from a bag;
  • 4 glasses of clean water;
  • 1-2 tbsp. l. sweetener (optional)

Chocolate hazelnut milk

The drink prepared according to this recipe is a delicious and nutritious cocktail. It will be an excellent option for breakfast or dinner.

To prepare 1 liter of milk, you will need the following ingredients:

  • 1-2 cups raw unsalted hazelnuts;
  • 2 tbsp. l. cocoa powder;
  • 1 vanilla pod or 1 tsp. vanilla powder from a bag;
  • 4 glasses of purified water;

Almond milk with turmeric

When cold, this drink can replace a delicious dessert. When you have a cold, almond milk with turmeric is good to drink hot - it will improve your well-being and get you back on your feet faster.

To prepare 1 liter of milk you need to prepare the following ingredients:

  • 1-2 cups raw unsalted almonds;
  • 1-2 tbsp. l. turmeric powder (it has a mild taste, so don't be afraid to add more of this spice);
  • 4 glasses of clean water;
  • a pinch of sea salt (optional);
  • 1-2 tbsp. l. sweetener (optional).

Vanilla cashew milk

This drink has an amazing aroma and a very delicate creamy taste.

To prepare 1 liter of drink you will need the following ingredients:

  • 1-2 cups raw unsalted cashews;
  • 1 vanilla pod or 1 tsp. extract from a sachet;
  • 4 glasses of purified water;
  • a pinch of sea salt (optional);
  • 1-2 tbsp. l. sweetener (optional).

How to properly consume and store the drink?

Nut milk differs from traditional cow milk not only in the absence of lactose and a more interesting taste, but also in its compatibility with vegetables, berries and fruits. The only exceptions are potatoes, melon and bananas. These products should not be consumed with drinks.

You can make smoothies, cocktails, ice cream, yoghurts and even homemade kefir from the nut drink. It is also added to any recipes instead of cow's milk. For sweetening, honey, Jerusalem artichoke or agave syrup are used. You can diversify the dessert with berry or fruit juice, nutmeg, cocoa powder, cinnamon, and vanilla beans. Nut milk is delicious, so you can simply drink it as a stand-alone drink. Just 1 small glass will replenish your strength after an intense workout in the gym or after a hard day at work.

Keep the milk in a closed bottle in the refrigerator. This is a perishable product. Its shelf life is no more than 3 days.

Nut milk is an indispensable product during strict fasting and for lactose intolerance. Vegetarians and raw foodists love it, it is useful for children, athletes, and those on a diet. Soaking time for different types of nuts:

  • Almonds in order to become saturated with moisture, you need the greatest amount of time - 8-12 hours.
  • For hazelnut, macadamia and peanuts it will be enough 8 ocloc'k.
  • Walnut you need everything 4 hours.
  • A cashew - 2 hours.
  • From pistachios and brazil nuts You will get excellent milk even without soaking.

Ideal proportions for making nut milk - nuts and water 1 to 4. That is for 4 glasses of milk(about 1 l) needed 4 cups water and 1 cup nuts.

Often the joy of motherhood is darkened when, at the next weigh-in at the clinic, it suddenly turns out that the baby is gaining weight rather poorly. In such a situation, the first thing that occurs to a nursing mother is that she does not have enough milk.

Most likely, she will remember that walnuts during breastfeeding are considered a traditional remedy for increasing lactation. Is it really worth resorting to this method of solving the problem, or is its effectiveness just one of the myths surrounding breastfeeding?

What are the benefits of walnuts?

Let's start with the fact that the product in question is actually very useful, one might say, even unique in its own way. Walnuts contain:

  • B vitamins, as well as A, E, P, K, zinc and copper, which helps prevent various diseases and slow down the aging process;
  • vitamin C, and in terms of its quantity they are ahead of black currants, oranges, and rose hips;
  • polyunsaturated fatty acids that cannot be obtained from animal fats.

Scientists have found that eating walnuts helps to lower blood cholesterol levels over a long period of time, which means they can be used to prevent cardiovascular disease.

What about the effect on lactation?

Whether it is possible to increase the “productivity” of the mammary glands with the help of nuts is not known for certain, since no one has conducted relevant studies. Is it even worth using them during lactation? Both doctors and lactation consultants have differing opinions on this matter.

Some pediatricians, if they are dissatisfied with the baby's growth, advise the mother to eat walnuts, since even if with their help it is not possible to increase the amount of milk, then at least it is possible to increase its “quality,” that is, its fat content. In the case of a baby who is underweight, this is no less important.

But it doesn’t hurt to keep in mind that fattier milk tends to stagnate in the ducts, which leads to blockage of the latter (this looks like a white dot on the nipple), as well as to lactostasis and mastitis. If you are prone to such problems, just in case, exclude walnuts from your menu, or at least do not overuse them.

There is another opinion among doctors, according to which the composition of milk (or rather, the ratio of proteins, fats and carbohydrates) is genetically programmed. It is not possible to change it with any products. This seems quite logical, because women have always managed to feed children even in the most difficult conditions, without access to nourishing and healthy food.

Nuts with milk - healthy or dangerous recipe?

Some mothers and even lactation consultants believe that cow's milk with walnuts is a real salvation in case of a lack of breast milk. They offer the following recipe: boil one and a half glasses of milk, pour in a handful of chopped nuts, place it all in a thermos for a couple of hours and drink throughout the day.

However, other consultants and doctors consider it inappropriate to use this drug during breastfeeding. The fact is that both cow's milk and nuts are included in the so-called “Big Eight” of the most significant allergens, which, in addition to the products mentioned, includes chicken eggs, peanuts, soy, shellfish and crustaceans, fish, and wheat.

Allergy symptoms may include:

  • unstable stool with mucus (and sometimes streaks of blood);
  • intestinal colic;
  • skin rashes, redness of the cheeks, elbows, buttocks, groin folds, dry skin;
  • less often – respiratory phenomena.

If you notice something similar in your baby, be sure to consult your doctor.

It is worth recognizing that walnuts are safer than, for example, hazelnuts. But still, a combination of two allergens is hardly a good way to establish breastfeeding, especially in the first month of lactation.

However, everything is individual, and many nursing mothers can drink milk with walnuts, since their children tolerate these products well. However, we definitely cannot recommend this recipe to everyone without exception.

How to stimulate lactation in case of allergy to walnuts?

First of all, do not forget that the most effective way to maintain your milk supply at the proper level is to feed on demand and have your baby breastfeed frequently. "Demand creates supply". If the mammary gland rarely empties, the body receives information that milk is not really needed, and less of it is produced.

You also need to ensure that the baby is properly attached (not only the nipple, but also the areola, especially its lower part, should enter the mouth). Otherwise, sucking will not be as effective, and painful nipple cracks may occur.

You should not neglect night feedings, since prolactin (a hormone that stimulates milk production) is produced in the mother’s body at night. Even if the baby sleeps well, you should try to feed him twice from 3.00 to 8.00 in the morning.

If even if all these conditions are met, the problem is not solved, it is better not to let things take their course, but to contact a breastfeeding specialist (on forums, by phone, or by inviting them home). Also, be sure to talk to your pediatrician, because weight loss may not be due to a lack of milk at all, but to some other disease.

In conclusion, we note that if both the baby and the mother tolerate walnuts well, then they can be consumed during breastfeeding in the amount of two to three walnuts per day, this will be quite enough to demonstrate their beneficial properties. It is better to buy thermally unprocessed and unshelled nuts. Bon appetit!

Nut milk is a very healthy replacement for animal milk. For many reasons, for example, cow's milk is not very healthy. I will try to list many of them (I just can’t claim to know all the reasons why cow’s milk can be harmful).

1. Complete digestion of milk is possible only in the presence of certain enzymes, which are present in the human body only up to 3 years of age. When these enzymes are absent, milk is broken down only into uric acid, which poisons the body and contributes to the accumulation of mucus in it, the formation of cysts and polyps.
2. Milk is valuable and healthy when it is consumed fresh or raw. City dwellers can hardly boast that they consume such milk. Most often, reconstituted pasteurized or sterilized milk is available to us. When milk is heated to 60 degrees, and even more so when it is sterilized, its composition changes and vitamins are destroyed.
3. Powdered milk and condensed milk are especially harmful.
4. Cow's milk is intended primarily for feeding calves and its composition is balanced in such a way as to ensure rapid growth of the calf. There is 4 times more calcium and 3 times more protein than in breast milk. The child needs minerals and carbohydrates to form the brain and nervous system. In other words, cow's milk is the food of a rapidly growing organism. Figuratively speaking, this is the cement so necessary to build a house. But once the house is already built, there is no longer a need for cement. And it is very stupid to continue filling a house with cement, just because cement is good as a building material.

Considering the above reasons. I suggest you try such a healthy alternative as nut milk.

Nut milk is a drink made from crushed nuts and/or seeds mixed with water by beating for a long time in a mixer (blender, food processor).

The nutritional value of nuts is ensured by their favorable combination of fats and proteins. Walnut protein contains many essential amino acids and lysine, which is very important for a growing body (they contain more of it than, for example, chicken eggs.

400 g of peeled walnuts are equivalent in all respects to the proteins of meat and milk, but, unlike them, do not contain any harmful substances. A 100 g serving of nuts provides the body's daily need for complete protein.

Indeed, this milk is very unusual. The concept of “nut milk (almond, etc.), poppy milk” is associated with monastic nutrition. This is a lean version of milk.

It is very tasty and healthy. Contains amino acids , Calcium, iron, vitamins and, most importantly, all trace elements of such milk are absorbed by the body, unlike animal milk. Based on the above, we can conclude that milk from nuts and seeds is healthier than milk of animal origin.

You can consume nut milk on its own or use it to make yoghurts, kefir, cocktails, and sauces. That is, nut milk can be used to prepare the same dishes as regular milk.

For those who adhere to a separate diet, it is worth noting that nut milk, unlike cow’s milk, can be combined with other products: vegetables (except potatoes), fruits (except bananas), melons (except melon), berries, juices.

Basic recipe for making nut milk:

  • 1 cup of any nuts or seeds, soaked the night before, 2 cups of water, 1 tbsp. a spoonful of honey or 2-3 dates (pitted).

Mix all ingredients in a blender. Strain through cheesecloth or a sieve. Pour into a jar.

A byproduct of making nut milk is nut paste, which remains when the nut suspension is strained through cheesecloth or a sieve. This paste can be used as an addition to salads, vegetable dishes, etc. The paste can be stored in the refrigerator for several days.

You will get a delicious drink - an ingredient for cocktails and sauces, and a nut butter that can be used as an addition to other dishes.

Poppy-sesame milk recipe:

  • 1/2 cup poppy seeds with sesame seeds;
  • 2 glasses of water;
  • 1-2 tbsp. honey.

You can only take poppy or sesame seeds. But sesame, I warn you right away, will be very bitter. Fill with water overnight. Then mix thoroughly in a blender, strain and squeeze through cheesecloth. If you do not have a very powerful blender, then I advise you to first grind the poppy seeds and sesame seeds in a mill (coffee grinder), and then soak them. I use the remaining cake by adding it to the sprouted wheat paste.

Almond milk:

It is advisable to treat almonds and other nuts with an ozonizer (since mold often likes to grow on them, even if they were in the shell), soak them overnight, and wash them. Before putting it in the blender, it is advisable to peel the almonds, which is quite easy to do, although you don’t have to peel them.

  • Place 1 cup almonds and 4 cups water in a blender. We filter. Sweeten with honey.

The remaining cake can be used to make cakes in the dryer or for raw biscuits.

Pumpkin milk:

Pumpkin seeds contain a lot of iron and zinc. They are much cheaper than almonds and many other nuts, and the milk they make is very tasty. If you sweeten it with dates instead of honey, the taste will taste like gingerbread.

  • 1 cup pumpkin seeds (can be soaked for 1-2 hours);
  • 3 glasses of water;
  • 2-3 dates (depending on size).

You can also add vanilla, cinnamon, nutmeg, coconut flakes, flax seed to such drinks (the drink becomes better after half an hour, when the flax seed dissolves better and adds thickness).
