Homemade waffles, regardless of composition, pass through and evenly with steam, are compacted with the same thickness along the entire perimeter, are colorfully golden and are subject to the laziest cooks. We do exactly the same as in pancake recipes. First, beat the eggs, combining the whites and yolks into a homogeneous liquid. Immediately throw out the usual flavor enhancers: granulated sugar and salt. Today I’m baking salty-cheese waffles, so there’s minimal sugar in the dough. For dessert baking, increase the amount of sweetness; in addition to granulated sugar, add honey, jam, rich syrups, and vanilla concentrate.

    We wash and dry several branches of fragrant dill or other favorite herbs, cut off the tough stems and chop finely. Thin short shavings cut into three blocks of hard cheese. Mine is Russian traditional, smooth, with moderate spiciness. The sharper, more specific and mature ones will not yield. The main thing to remember is that there should really be a lot of cheese, a little less in weight than flour. Then cheese waffles are especially tasty and appetizing. Although, for an economical option, any dosage will do.

    Place flavorings (dill and cheese) into a work bowl and add wheat flour. If you want to achieve a bready flavor, mix wheat with rye, flax-based or oatmeal. Corn flour gives a yellow tint, like polenta, and almond flour is good for sweet waffles.

    Mix the dense, thick mass. If you add the milk first and only then add the flour, it is difficult to remove all the dry lumps and knead the dough to a perfectly smooth consistency. Therefore, I advise you to first knead the “heavy” dough for both homemade waffles and thin pancakes, then dilute it to the required thickness.

    Lastly, pour milk at room temperature and vegetable oil. Mix vigorously and dilute to the desired texture. Waffle dough can be either liquid or more viscous, similar to rich sour cream. My recipe is with refined sunflower oil, but replace it with corn, olive, nut, sesame, and melted butter. To activate the gluten, keep the cheese-flour mixture aside for half an hour. If you plan to serve homemade waffles for breakfast, knead them in the evening, put the semi-finished dough under the lid in the refrigerator overnight - the dough will thicken noticeably.

    We warm up the electric waffle iron, following the instructions for the specific device. Do not grease with any fat, pry with a ladle, pour the dough interspersed into the center of the hot surface, cover and bake each pancake for about a minute.

    The degree of browning can be easily adjusted from a light golden brown to a rich shade. Try it, see how it goes, increase the baking time or change the heat temperature. Just baked cakes can be easily separated from the walls of the frying pan, quickly slide off and do not stick. We repeat the simple steps with the remaining dough, cool the corrugated pancakes-waffles separately. Fold in a stack.

We serve cute and easy-to-prepare waffles with cheese and herbs; to accompany, we choose sauces such as tartar, mayonnaise, caviar, and vegetable salsa. Bon appetit!

For culinary experiments, you can use devices that were produced by Soviet defense factories during the conversion era, or modern “waffle iron” devices. It is important to consider that devices such as “Slastena” or “Lakomka” are designed for baking thin waffles and are not suitable for preparing other dishes.

Imported electric waffle irons were created for fluffy “Viennese” baked goods, making them more versatile. Modern appliances are multifunctional - replaceable internal panels allow you to prepare sandwiches and nuts. However, these devices are best suited for baking waffles.

Viennese waffles

THIS IS INTERESTINGThe word "waffle" comes from the German word Waffel, which means "cells, honeycomb." This is where the English name waffle iron came from.

WAFFLE RECIPES

Everyone has their own “taste of childhood.” Soviet housewives replaced margarine with peasant butter, varied the amount of sugar, and added cinnamon and other spices. The results of successful experiments were meticulously recorded in notebooks and kept as a “signature family recipe.” Recipes from the brochures suggested rolling thin waffles into cones, but few people succeeded in this trick in practice.

Device for making waffle cones

THIS IS INTERESTING The first waffle cone appeared in the USA. It was invented by an ice cream seller in St. Louis. During the fair, he ran out of paper cups and, in order to continue working, he began to wrap the cold delicacy in waffles that his neighbor at the trading place was baking.

Toppings for waffles

The taste of sweet pastries is revealed more fully if soaked in jam or served with fresh berries or sliced juicy fruits. An interesting combination is hot waffles with ice cream. You can also use as a supplement:

  • powdered sugar;
  • confectionery topping;
  • syrups;
  • berries;
  • condensed milk.

THIS IS INTERESTING In Europe, waffles are primarily a sweet dessert. In the United States, understanding of this dish has expanded. Waffle irons began to be used for preparing, for example, vegetable pancakes, which are served as a side dish for meat. The Americans also came up with the idea of making hot sandwiches in a waffle iron.

Hot sandwiches

Ingredients:

  • two pieces of wheat bread;
  • ham;
  • butter.

Cooking procedure

  1. Melt the butter.
  2. Brush the melted fat onto the bread to prevent it from sticking to the surface while cooking.
  3. Place thinly sliced cheese and ham on one piece of bread.
  4. Bake in a preheated waffle iron for 2-3 minutes.

If desired, you can increase the number of layers in the sandwich. Experiment with types of cheese and add fresh vegetables, such as tomatoes or bell peppers.

ADVICE To make hot sandwiches in an electric waffle iron, you can use special toast bread. Due to the peculiarities of the recipe, toast bread may seem tasteless when raw, but when toasted it produces a crispy crust.

Special bread for toasting

You can cook potato pancakes in an electric waffle iron, as well as any other vegetable pancakes. A dish with a familiar taste will become original thanks to its “honeycomb” structure. Vegetable dishes are prepared using the same technology. The main differences are in the ingredients.

Classic zucchini pancakes

  1. Grate the zucchini on a coarse grater and finely chop the onion.
  2. Mix all ingredients in a bowl.
  3. Bake in a pre-heated pan.
  4. Baking and browning usually takes no more than 4-5 minutes.

If this recipe seems too boring to you, you can add semolina, grated cheese and other products to the zucchini pancakes.

Draniki

The traditional Belarusian dish, pancakes, is prepared in a similar way. Only the main role here is played not by zucchini, but by potatoes.

Ingredients:

  • 0.5 kg of potatoes (it is better to take varieties with a high starch content);
  • 1 large onion;
  • 1 egg;
  • 1-2 cloves of garlic;
  • 1 tbsp. l. flour or starch;
  • black pepper, salt - to taste;
  • refined vegetable oil (for frying).

Vegetable pancakes and potato pancakes can be served for breakfast or as a side dish.

Shawarma in a waffle iron

The quality and maintainability of Soviet-made electric waffle irons were highly appreciated by shawarma traders. The device is used to heat vegetables and meat wrapped in pita bread.

Ingredients:

  • 2 pieces of thin (Armenian) lavash;
  • 1 chicken breast;
  • 1 fresh cucumber;
  • 1 tomato;
  • 100 g white cabbage;
  • 3 tbsp. l. mayonnaise;
  • 3 tbsp. l. ketchup;
  • 0.5 tsp. salt;
  • black pepper to taste;
  • refined vegetable oil for frying.

Cooking procedure

  1. Cut the chicken fillet into small pieces. Salt, pepper and fry with a little oil. This is best done in a cast iron frying pan with a grooved surface.
  2. Chop the vegetables: cabbage into strips, tomatoes and cucumbers into half rings.
  3. Place a sheet of pita bread on the table. Lubricate it with a mixture of ketchup and mayonnaise.
  4. Place the filling on the pita bread in the following order: cabbage, cucumbers, tomatoes, chicken.
  5. Roll the shawarma into a roll and heat it in an electric waffle iron for 1-2 minutes.

You can also heat the dish in traditional ways (in a frying pan or in the microwave), but only in a waffle iron can you achieve the special crispy structure of the pita bread and not overheat the inner layers of the filling.

If desired, you can add onions, potatoes (boiled or fried), grated hard cheese, as well as various sauces to homemade shawarma. An alternative to chicken is pork or beef. Any meat will taste better if it is pre-marinated. Happy culinary experiments and bon appetit!
