On hot frying pan pour a little vegetable oil or add a teaspoon of ghee. As soon as the oil is hot, place the chopped pieces of pork, not in a heap, but neatly in one layer. The pan should be large enough to accommodate your amount of meat and onions.






Fry the pork on one side over high heat for 2-3 minutes. Then turn each piece over and fry on the other side until golden brown. Reduce heat to medium. The total frying time at this stage is approximately 10 minutes. Important: do not cover with a lid!




Then sprinkle the chopped onion evenly over the meat. Do not stir. Cook over medium heat for 5 minutes until the onions are saturated with meat steam.




Now the meat and onions can be sprinkled with salt and freshly ground black pepper.
First secret: sprinkle the dish with a pinch granulated sugar for flavor and caramelization of onions. It is advisable, but not necessary, to use cane sugar.






Then mix the meat and onion with a spatula. Next, fry, stirring occasionally, until the onion is translucent and lightly golden. Cook over medium heat. The important thing here is not to overcook the onions and not let them turn into onion mush.




Second secret: pour apple or regular vinegar. For one serving of meat, 1 tablespoon of 5-9% vinegar will be enough. Hot pork and onions instantly absorb the liquid, and the meat acquires an almost kebab-like taste.




Next, keep the pan on the fire for another 1-2 minutes so that the liquid evaporates. Now our dish of juicy, flavorful and soft pork in a frying pan is ready!
