Today I propose easy recipe and a fresh layered salad with apples, eggs, cheese and red onions, which is considered one of our family's favorites.

The salad is actually very light, not only in its ingredients, but also due to its airy consistency, and the combination of apples and red onion rings gives it extraordinary freshness. Don’t rush to frown at the word “onion”, for this you need to at least try this salad. Red onions are not bitter at all, but when soaked apple juice, is perceived as something very, very tasty. Plus, this layered lettuce salad takes very little time to prepare. It is more important here that, having already been cooked, it should stand in the refrigerator longer and be served chilled.

So let's get started.

  • 3 hard-boiled eggs
  • 1 small red onion
  • 2 green sweet and sour apples such as Golden or Semerenko
  • 100-120 g cheese
  • mayonnaise (very tasty regular Provencal with lemon juice)
  • greens, frozen berries for decoration (I used lingonberries)

Preparation:

First, cut the onion into rings.

The rings should be very thin, something like this:

You need to cut with a very sharp knife, but I do it on my old Burner grater, which has served me faithfully for twenty years. In one of the previous ones, I already mentioned this miracle grater, I recommend it to everyone, it simply works wonders with vegetables and saves a lot of time when cooking.

Pour boiling water from a kettle over the chopped onion rings for 1 minute, just for a minute, no more. We don't need boiled onions, in a puff salad they should be crispy, you just need to get rid of the bitterness, and a minute is enough for this. Then drain the water through a sieve, and let the onions cool; you can rinse them with cold water.

We take out a dish suitable for the salad; the salad itself will be approximately 18-19 cm in diameter. Yes, and I want to say right away that the layers in the salad should under no circumstances be crushed or smoothed, puff salad must be airy.

We peel the eggs and three coarse grater. Trim the edges with a fork. Cut off the corner of the mayonnaise packet, leaving a tiny hole so that it can be squeezed out in a thin stream. We make a mayonnaise mesh over the eggs.

Arrange the red onion rings evenly. By the way, the onion can be cut into half rings and quarter rings, which will make it even more convenient to arrange the salad on plates.

Peel the apples and grate them on a coarse grater. Gently, with light movements, level it with the tines of a fork.

And again - mayonnaise mesh.

Now it’s the turn of the cheese, but three of it on a fine grater, so the puff salad will be more tender.

On top of the cheese is a mesh of mayonnaise. And all that remains is to decorate as your imagination dictates. This salad is garnished with parsley and frozen lingonberries, and when I have time, I fry the peeled ones in a dry frying pan. walnuts, I chop them not too finely and sprinkle them over the entire surface of the salad on top of the mayonnaise mesh. The salad then looks like a cake and acquires a characteristic nutty flavor. Well, very tasty!

1. For the salad, you can use onions, purple or white onions. To begin, peel the onion heads. Be sure to rinse in cold water. Dry with a towel. Cut into small squares. Place in a colander. Boil water in a kettle. Pour boiling water over the onion pieces. Rinse immediately with cold running water.


2. Place the chopped onion in a salad bowl. Add granulated sugar, a pinch of salt. Pour apple cider vinegar or use lemon juice. Mix the onion well and leave for 10-15 minutes. During this time, the onion squares will marinate well. Again, after marinating, drain in a colander to remove any remaining juice.


3. The apples in this onion salad are of the Semerenko variety. They are dense to the touch and sour to the taste. If the peel is without stains, you don’t have to peel it. Rinse and dry the fruits. Cut into two halves, cut out the core with seeds. Cut the pulp into small pieces. Add to pickled onions. Sprinkle with lemon juice to prevent the slices from darkening.


4. For the salad, use only green onions. Rinse well and dry with a napkin. Cut into small pieces and add to the salad bowl.


5. Now is the time to season with spices to your liking. Lightly salt and pepper the salad mixture. Season with vegetable oil and mix well. If you like mayonnaise, use it as a dressing.

  • sugar - 200 g.

Step-by-step instructions for caramelizing a whole apple:

  • Place a deep saucepan on the stove over low heat.
  • Melt 200 g of sugar until you get caramel.
  • Place the apples in a saucepan until the sauce completely covers them. It takes half an hour to cook the fruit.
  • After this, the apples are laid out beautifully on a plate and served on the table. Moreover, the tail of the fruit does not have to be torn off. Even some restaurants leave it in for dessert aesthetics.

How to cook classic batter for apples

So, for the classic batter recipe, you need to mix the flour with salt, milk and sugar well with a whisk in a bowl so that there are no lumps. If you don’t have milk on hand or your child is allergic to dairy products, you can replace it with plain water.

The egg - and it is large, about 70 grams - carefully divide into white and yolk. Mix the latter into the dough.

I don't use a lot of sugar because I sprinkle it with powdered sugar afterwards. The batter will have a fairly neutral taste.

To make the batter airy, the egg white must be beaten until completely stable, the so-called dense peaks, for about 3-4 minutes, no less. If you turn the bowl over, the protein will remain in place and will not leak, fall out or fly out.

Now very carefully and carefully mix in our whipped egg whites in two or three additions. The more movements and the longer you mix, the less airy our batter will become, as air bubbles burst and the dough settles more and more. Mix vigorously, from the edges to the middle, while rotating the bowl.

Peel the apples and special device cut out the core. You can simply cut it in half and cut out the core with a knife, and you will get half rings, there is no difference.

Dip the rings into the batter. It turns out to be enveloping and is in no hurry to escape from the apple.
