Spices are practically not used; their choice is limited to ground black pepper, which is used to season chicken meat twisted in a meat grinder or blended in a blender.

The dish got its name due to its appearance - grains of rice sticking out like needles. To achieve this effect, it is advisable to use cereals with oblong-shaped grains. If the recipe calls for boiling, the rice is only cooked until half cooked.

. Hedgehogs are easy to cook in the oven, slow cooker or on the stove in a deep, thick-walled frying pan or cauldron. In any case, they are covered with sauce. Its base is most often water, but for a richer taste you can use any meat broth. Sauces are always seasoned with tomato paste or juice; fresh tomatoes can also be used. To improve the taste, sauteed or fresh vegetables are added to it: onions, carrots, bell peppers. To soften, sour cream can be added, and flour can be added as a thickener.

. Chicken hedgehogs with rice are served with or without a side dish. As a side dish, you can prepare mashed potatoes, pasta or porridge.

Chicken hedgehogs with rice in tomato sauce (in the oven)

Ingredients:

Boneless chicken breast and thigh fillet - only 700 g;

One bell pepper;

Head of bitter onion;

One egg;

A quarter of a 250 gram glass of rice;

Ground, dried basil;

One and a half teaspoons of flour;

Refined oil;

A can of tomatoes canned in their own salted juice - 3 liters.

Cooking method:

1. Wash the meat, cut it and grind it into minced meat using a blender. You can also use a meat grinder, but then you need to install the finest grate on it and twist the chicken at least twice.

2. Peel the onion and remove the seeds from the pepper. We wash and grind in the same way as meat. Place in a sieve and wait for the juice to drain, then transfer to the minced meat.

3. Pour the egg into the bowl with the minced meat, add finely ground pepper and the same fine salt, mix thoroughly.

4. Sort through the rice, rinse the grains with cold water and leave, transferring to a sieve to dry. Transfer the dried rice to the minced meat and knead it well again.

5. Drain all the juice from a can of tomatoes and take 100 ml into a cup. Add flour, stir - there should be no lumps left. Pour the juice combined with flour into the main volume and mix.

6. With hands moistened with water, form large balls from the minced meat and place them in a refractory mold in one layer. Pour in the tomato, sprinkle basil on top and place in a hot oven. Cook the hedgehogs at 200 degrees for at least forty minutes.

Dietary chicken hedgehogs with steamed rice (in a steamer)

Ingredients:

Half a kilo of minced chicken;

Long grain rice - 150 gr.;

One small carrot;

Large onion head;

Large egg;

Unflavored oil;

A sprig of any fresh herb.

Cooking method:

1. After washing, cut the chicken fillet into pieces and grind it into minced meat in any convenient way. Season with pepper and add a little salt, add chopped herbs.

2. Finely chop the onion and fry the pieces until transparent in vegetable oil.

3. Grind the carrots with a medium grater, add to the onion and cook, stirring, until softened. Cool the roasted vegetables well, transfer them to the minced meat and, after breaking the egg into it, mix thoroughly.

4. Without adding salt, boil only part of the sorted rice (at least 100 grams) until half cooked. Place in a colander, rinse and, after allowing all the liquid to drain, mix the boiled rice with minced chicken.

5. We sort out the remaining rice from the trash and pour it into a wide bowl.

6. Form balls from the prepared meat mass and, roll them in rice cereal, place them in a steam container (steamer mesh).

7. Fill the lower container of the steamer one third with hot water and install a mesh with “hedgehogs” and cover with a lid.

8. Cook over low heat for about 25 minutes, after boiling.

Juicy chicken hedgehogs with rice and sour cream and tomato sauce

Ingredients:

Homemade minced chicken - 500 gr.;

200 gr. rice cereal;

A tablespoon of thick, unburnt tomato paste;

Half a glass of drinking water;

20% sour cream - 200 gr.

Cooking method:

1. Sort out the rice, rinse it and add plenty of cold water and place it on high heat. Stirring, wait for it to boil, and, reducing the heat to medium, boil until half cooked. We do not add salt to the water.

2. Place the boiled rice in a colander and, after rinsing it a little, leave it in it for a while, then transfer it to a bowl with minced chicken.

3. Add spices to your taste, break the egg into the meat mixture and mix thoroughly until smooth. Then we wet our hands with water and form hedgehogs in the form of small balls.

4. In a frying pan at maximum temperature, heat the oil well and drop the meat balls into it. Fry, turning often, until a thick golden brown crust forms, and transfer to a cauldron. Add the remaining oil in the pan.

5. Add the tomato mixed with sour cream, pour water over the semi-finished products so that it slightly covers them. Add just a little salt and, if necessary, spices. Move the cauldron to the fire and bring the sauce to a boil. Then lower the heat and slowly simmer the hedgehogs under the lid for half an hour.

Chicken hedgehogs with rice in vegetable sauce

Ingredients:

Long-grain rice cereal - 150 gr.;

700 gr. chicken, homemade minced meat;

Half a kilo of fresh tomatoes;

Fresh garlic - 3 cloves;

150 gr. carrots;

Large onion;

Olive or high-quality sunflower oil;

Wheat flour - 10 tbsp. l.;

Fresh dill, optionally a little parsley and fresh basil.

Cooking method:

1. Wash the rice that has been sorted out of debris. Fill with water and boil without adding salt until half cooked. Then rinse again and dry, transferring to a sieve or fine colander.

2. While the rice is cooking, immerse the tomatoes in boiling water for two minutes. Cool the tomatoes by placing them in cold water and carefully separate the skins from the pulp. Cut into small slices and place in a saucepan. Cover with a lid and simmer in its own juice over medium heat.

3. At the same time, fry the chopped onion in olive oil until softened. Add carrots grated on a medium grater to it. Stirring well, fry until golden brown.

4. Add fried onions and carrots to the softened tomatoes. Add a little curry and, after mixing thoroughly, simmer for another ten minutes. Then turn it off and cool a little.

5. Season the minced meat with ground pepper, add additional salt if necessary, add chopped herbs and a raw egg, stir thoroughly.

6. Form balls, roll them well in flour and place them in oil heated in a frying pan. After frying on all sides, transfer to a deeper frying pan or saucepan. Add a glass of water and place on low heat, simmer for at least a quarter of an hour.

7. Place the slightly cooled roasted vegetables into a blender bowl. Add a little dill, parsley and basil and chop. We dilute the resulting puree with a glass of boiled (cold) water and pour it over the meat hedgehogs. After boiling, simmer the meatballs in vegetable sauce for ten minutes.

8. At the end, add chopped garlic, mix gently and remove from the stove.

A simple recipe for chicken hedgehogs with rice in tomato cream sauce for a slow cooker

Ingredients:

Rice cereal - 100 gr.;

400 gr. minced chicken;

Large onion;

Four small cloves of garlic;

Sweet carrot;

Thick tomato puree - 2 tbsp. l.;

Two sprigs of fresh dill;

Three tablespoons of liquid, preferably 20%, sour cream.

Cooking method:

1. Pour the cereal onto the table, select litter and damaged grains. Pour into a deep bowl, pour half a glass of boiling water and set aside for 15 minutes.

2. Peel the carrots and onions, rinse with water and grate both root vegetables on a coarse grater.

3. Place the minced meat in a bowl with rice and chopped vegetables. Mix thoroughly until smooth. Season with pepper and add a little salt.

4. Form ten balls from the prepared meat mass and place them in the cooking bowl.

5. In a deep bowl, mix the tomato with sour cream and dilute the mixture by adding 700 milliliters of cold water. Add a little pepper and paprika. Add salt to your taste, be sure to check the saltiness to taste, and, stirring well with a whisk, pour into the bowl. This must be done carefully, trying not to get the sauce on the “hedgehogs” so as not to damage them. Pour into the free space between the semi-finished products.

6. Close the lid and start the “Extinguishing” mode for one hour. After stopping the program, sprinkle the dish with finely chopped dill and leave for about five minutes under the lid or on “Heat”.

Chicken hedgehogs with rice, baked in the oven with cheese

Ingredients:

Long grain, unparboiled rice - 300 gr.;

400 gr. minced chicken;

Tomato paste - 30 gr.;

Two large onions;

One carrot;

120 grams of medium-sharp, good cheese;

One bell pepper (red);

50 ml 15% sour cream.

Cooking method:

1. Mix washed, well-dried rice with minced chicken. Season with pepper and add a little salt. Grate one onion here on a medium grater, add the egg for viscosity and mix.

2. Having received a homogeneous mass, with moistened hands we form hedgehogs - small balls. Place them in the mold in one layer.

3. Prepare the dressing. Chop the remaining onion into strips, and chop the carrots and bell pepper pulp in the same way. Vegetable strips should be thin and not too long.

4. Transfer the vegetables to a bowl and mix. Add sour cream mixed with tomato and fill with boiled, non-hot water. It’s good if you can replace it with broth. Pour the dressing into the mold - it should completely cover the meat balls.

5. Cover the container with foil and place in the oven, placing it on the broiler on the middle level. Let stand for about half an hour. Then we take it out, remove the foil, sprinkle the hedgehogs with coarsely grated cheese and place them back in the oven for up to 10 minutes.

Chicken hedgehogs with rice - cooking tricks and useful tips

Try to use homemade minced meat - twist the meat yourself. If you decide to save time and buy a store-bought one, give preference not to frozen, but to chilled semi-finished product.

Before using purchased minced meat, be sure to re-twist it in a meat grinder with a fine mesh; it may contain large pieces of fat and meat. Often there are small bones in the semi-finished product.

It is advisable not to fry the meat balls, since the rice grains, when swollen, will not be able to disrupt the integrity of the crust and the hedgehogs will externally resemble meatballs.
