To prepare the noodles themselves, you need only four ingredients: premium flour, egg yolks, olive oil and salt. Knead all the ingredients into a dough, then cover it with film and leave for an hour. From ready dough a layer is formed, then it is cut into strips.

You can prepare many delicious and healthy dishes with egg noodles. Typically, the noodles are served with stir-fried vegetables, chicken, beef, seafood, mushrooms, etc. First, the egg noodles are boiled in boiling water, then simmered for several minutes in soy sauce with the remaining ingredients. Such a simple, but very tasty and healthy dish can be prepared every day, and some variations are perfect for a holiday dinner.   • 120 g small peeled shrimp;
  • Two spoons of soy sauce;
  • One lime.

Cooking method:

Finely chop the garlic. Heat in a frying pan peanut butter and put garlic and anise there. Fry for 30 seconds. Chop the green onions and also add to the pan. After boiling, turn off the heat and cover the sauce with a lid. Place the pan with noodles on moderate heat, pour in two tablespoons of melted butter. Mix everything thoroughly, after 3 minutes remove from heat and cover with a lid. Heat the oil in a frying pan and add all the shrimp. Fry for 3-4 minutes, stir occasionally. Remove the pan from the heat and cover with a lid. Stir the sauce before serving. Serve the dish like this: first put noodles on a plate, some shrimp on top and pour everything over cream sauce.

There are no special subtleties in preparing egg noodles. It must first be boiled in boiling salted water until cooked or half cooked (as indicated in the recipe). At the same time, fry vegetables or meat. The noodles are added to the rest of the ingredients and heated in soy sauce for a few minutes. For a more piquant and spicy taste, you can add garlic, ginger, cardamom, black or red to the dish. ground pepper and other spices. Or you can do it differently: boil the noodles separately, fry or boil them separately additional ingredients and mix it all together just before serving. For this dish you can prepare creamy or tomato sauce.

Let us immediately outline all the richness of options for this dish. You can add any vegetables that are currently in the refrigerator here. Probably the only vegetable that is not suitable here is potatoes.

We took:

  • egg noodles - approximately 150 g
  • 1 medium-sized bell pepper (you can take halves of different colors)
  • white cabbage 150 g
  • 1 medium sized onion
  • 1 carrot
  • 2 or 3 eggs (optional)
  • vegetable oil for frying
  • salt (1/4 teaspoon)
  • Chili bean sauce (optional)

You can add broccoli, celery, Chinese cabbage and so on. You can skip eggs. You can take not egg noodles, but, for example, buckwheat. There are many options for improvisation! It seems to us that the most “flavor-producing” vegetables here are carrots and onions; they give a pleasant, subtle sweetness that goes well with the noodles. It is quite possible that without them it will turn out quite well. But we didn't try.

First, cut the vegetables: carrots and peppers into strips, onions into half rings, cabbage into thin strips. Break the eggs into a small bowl, add salt and beat lightly, as for an omelet.

Place a wok or large frying pan with thick walls on the fire and heat the vegetable oil in it properly (4-5 tablespoons). Pour the beaten eggs into the hot oil and wait until they turn into something like an omelette.

If you also cook in a wok, you will have to sometimes stir the egg mass with a spatula so that it all “sets.” Just do not let it burn, the omelette should not darken, otherwise it will ready dish it will look unappetizing! Divide the finished omelette into small pieces with a spatula (to make it easier to pick up with chopsticks) and place in a pre-prepared bowl.

Alternate onions and carrots. The frying pan with oil is again on a hot fire. If after frying the eggs there is almost no oil left in the pan, you need to add it. Heat the oil thoroughly and throw the onions and carrots into the pan at the same time. Fry over high heat, stirring continuously, until the onion is golden-transparent. The carrots should darken slightly.

Remove from heat and add carrots and onions (you can use the same bowl where the omelet is already waiting). And then we repeat this procedure one by one with all the remaining vegetables: fry in hot oil, stirring, and put in a bowl. Cabbage is fried a little longer than other vegetables - 2-3 minutes. It should become only slightly soft, the crunchiness should remain. bell pepper, on the contrary, fry very quickly, a maximum of a minute, or even less.

Even at the stage of frying vegetables, put water on the fire to cook the noodles. A few words about the noodles themselves. You can buy egg noodles in large supermarkets in the grocery section. If you can’t find Chinese, take Japanese, the taste is the same! And, as already mentioned, you can use buckwheat noodles instead of egg noodles, it will also turn out delicious.

When the water boils, lightly salt it (about a teaspoon of salt per liter of water) and lower the noodles into it. It is better to first look at the manufacturer’s recommendations on cooking time on the packaging. Our noodles needed to be boiled for five minutes on high heat, then added half a cup to the pan cold water and continue cooking over moderate heat until done. That's what we did.

We stirred the noodles periodically with chopsticks to prevent them from sticking.
Place the finished noodles in a colander and let the water drain.

The final stage is putting everything together. Place a frying pan with a small amount of oil (2-3 tablespoons) over medium heat. We heat it up, put our noodles there, then all the vegetables we fried, mix thoroughly and taste.

If desired, add either soy sauce or salt. You can add a spoonful of sesame oil (if you like its taste). Sesame oil can be bought at Auchan or Metro. Spicy lovers can add a teaspoon of chili sauce with the beans.

Noodles with vegetables are ready!

Now let’s talk about an economical version of the same dish, which is widely practiced in modern China. For noodles you can use… regular doshirak! Or any other similar wavy noodles from the fast food series that cost mere pennies. We don’t need packets of sauces and additives, but throw the noodles themselves into boiling water, cook for 2-3 minutes, place in a colander, and let the water drain. Of the vegetables, you can only take carrots and onions, increasing their quantity compared to what we took. Everything else is done exactly the same! And also nourishing and tasty.

Inspired by a trip to a Chinese restaurant, I wanted to make my own Chinese-style egg noodles with vegetables. I saw how such noodles are prepared at fast food outlets: they fry vegetables very quickly over high heat, at the same time boil the noodles, then combine it all and season it with soy-based sauce. It seems nothing complicated. And indeed, egg noodles with vegetables, the recipe for which I offer you today, turned out very tasty and did not require much effort or time from me. Fast, tasty, juicy and bright. It turns out no less tasty and I recommend it!

Ingredients:
- egg noodles for two servings,
- 1 carrot,
- 1 zucchini,
- 1 Bell pepper,
- a handful of cherry tomatoes,
- 2 cloves of garlic,
- a few pods of beans,
- 1 cauliflower inflorescence,
- 3 tbsp. soy sauce,
- 3 tbsp. olive oil,
- salt to taste.

Cut the garlic into slices, and the carrots and zucchini into long strips.





Heat olive oil in a frying pan, fry the garlic, then the carrots over high heat. The pan needs to be shaken from time to time.





After a minute, add the zucchini strips.





Immediately after the zucchini, add the sweet pepper, cut into strips.







Fry the vegetables for a couple of minutes over high heat, then add the cherry tomatoes, cut in half. At this stage, I salted the vegetables so that the tomatoes and zucchini released their juice.





Lastly, add green beans and small cauliflower florets. I boiled them in advance, since they need at least 10 minutes to cook, and vegetable sauce should be ready in 5-7 minutes. The vegetables should be well-cooked on the outside but still crispy on the inside.





Add soy sauce and stir. Now the vegetables are almost ready.





At the same time as cooking the vegetables, I boiled the noodles in salted water.







When the noodles are ready, drain the water from them and transfer them to the frying pan with the vegetables.





Stir so that the sauce and vegetables evenly cover the noodles, heat together over high heat, shake the pan several times, then turn off the heat.
