Cooking process.

1. And so, to prepare potato pancakes, you need to peel and chop the potatoes. Grind the potatoes using any available method. You can grate it or use a blender. In both cases, after grinding, the released juice will need to be squeezed out.

2. After the potatoes, chop the onion in the same way.

3. Mix the two masses in a bowl. Add salt, egg, pepper, flour and mix until smooth.

Some chefs claim that you need to add a tablespoon of sour cream to this dough to make the dough much fluffier. For me, potato pancakes are not a dish from which you will expect splendor. That's why I never add sour cream to potato pancakes. But if you want to try, no one forbids you to do it.

And so the dough is ready, now you can start frying it.

4. Pour oil into a frying pan, heat it and place portions of dough onto the hot oil using a tablespoon.

5. Fry on one side, then on the other.

A little advice. To ensure that the potatoes do not burn and are well fried, you do not need to apply too much heat under the frying pan. For optimal frying, it is better to choose medium or low heat. Then the potato pancake will not burn and will be baked from the inside.

Draniki with cheese

Ingredients.

  • 5-7 potatoes.
  • 1 carrot.
  • 1 onion.
  • 200 grams of cheese.
  • 2 tbsp. spoons flour.
  • Salt and pepper to taste.
  • Vegetable oil.
  • 1-2 cloves of garlic.
  • Half a bunch of dill.

Cooking process.

1. We also chop the vegetables. For me, the easiest way is to put everything through a meat grinder. It turns out both quickly and efficiently. True, then you will have to wash the meat grinder, and this is a little longer than a grater. Well, okay, for the sake of such pancakes, you can wash the meat grinder :).

2. But you still have to use a grater since you can’t grind the cheese through a meat grinder.

3. All that remains is to finely chop the dill and garlic. These will be the filling components; you also need to add cheese to them.

4. Now everything is ready, let's do the dough. Mix ingredients in one large bowl. Potatoes, carrots, onions, eggs. Mix and add flour. Mix everything again until you get a good dough.

The dough is ready, you can start preparing pancakes.

5. Take a tablespoon and place part of the dough on hot vegetable oil. Then take the cheese filling and put it on top raw dough and cover with potato dough.

Ingredients.

  • Potatoes 1 kg.
  • Minced meat 400 grams.

  • Half a lemon.

Cooking process.

1. Grate the potatoes. Add salt, pepper, juice from half a lemon, and an egg. And mix. Lemon juice will not allow the potatoes to darken and will keep them looking beautiful.

  • Flour – 2-3 spoons.
  • Salt, pepper - to taste.
  • Vegetable oil.
  • Fresh sour cream.
  • Pancake frying pan or regular one with thick walls.

Preparing the dough:

We grate raw potatoes, peeled and washed, on a fine grater (some housewives advise grinding potatoes in a meat grinder or blender or in a host of other ways. All the tips are good, you can choose exactly the method that is acceptable to you. The main thing is that the chopped potatoes are presented form a homogeneous mass). To prevent the potatoes from darkening, three quickly, mixing with onions, also grated in a blender. Beat in the egg, add flour, salt, pepper, mix thoroughly (there are recipes where a spoonful of sour cream is also added to the potato pancake dough, again, experiment).   • Potatoes – 1 kg. (5-6 large potatoes).
  • Onion – 1 large onion.

Preparing the dough:

Peel raw potatoes, rinse and grate on a fine grater. It is advisable to do everything quickly, do not let the potatoes darken, otherwise the color of your potato pancakes will not be appetizing. Grind the onion in a blender (just not on a grater, you will get a lot of tears and great amount onion juice), add to potatoes. There's also salt and pepper. Mix thoroughly. Remove excess juice with a spoon.

Fry:

Place the dough on a pre-heated frying pan, forming pancakes. Fry on both sides over medium heat, then you can keep them for another three minutes on low heat under the lid so that the pancakes are baked inside and soft.

Serve:

Drizzle with sour cream and eat. Simple, but so delicious! The dish prepared according to this recipe is quite lean, so if you adhere to religious traditions, nothing can stop you from tasting delicious, hot pancakes even in Lent. Potato pancakes with cheese

To prepare pancakes according to this original recipe we will need:

  • Potatoes – 5-6 pcs. (large).
  • Onion – 1 pc. (average).
  • Egg – 1 pc.
  • Flour – 2-3 spoons.
  • Salt and pepper - to taste.
  • Sour cream.
  • Vegetable oil.
  • Pan.

Preparing the dough:

We peel the potatoes, wash them, grate them on a fine grater (grind them with a blender, food processor, meat grinder - whatever is more convenient for you), also grind them and add cheese and onions to the dough. Add the egg, flour, pepper and salt there and mix thoroughly.

Fry:

Place potato pancakes on a hot frying pan and fry on each side until an appetizing golden crust. You can fry covered, then the potato pancakes will be soft, fluffy, but not crispy. As for the cheese: as an option, you can not put the cheese directly into the dough, but sprinkle grated cheese on the already fried, almost ready pancakes and hold under the lid so that the cheese melts.

Potato pancakes with mushrooms

You will probably agree that there is no other ingredient that harmonizes as perfectly with potatoes as mushrooms fried with onions. Either boiled potatoes or fried, such a side dish will always be a perfect match for her. To prepare mushroom pancakes we will need:

  • Potatoes – 1 kg (5-6 large potatoes).
  • Mushrooms – 300-350 g.
  • Onion – 1 pc.
  • Flour – 2-3 spoons.
  • Egg – 1 pc.
  • Spices - to taste.

Preparing the dough:

First, wash and clean the mushrooms. Cut the mushrooms into pieces. Peel the onion, chop it and fry it in a heated frying pan. Add the mushrooms to the frying pan and cook until the water is completely released. Remove the filling and let it cool. In the meantime, we'll take care of the potatoes. Peel and grate the potatoes on a fine grater (or chop in another convenient way for you until a homogeneous mass is formed), beat in 1 egg, salt and pepper to taste, add mushrooms here, then flour and mix thoroughly.

Fry:

Pour 2-3 tablespoons of oil into a hot frying pan, heat it up and lay out the dough, forming small pancakes. Fry pancakes over medium heat on both sides until fully cooked. Alternatively, you can not mix mushrooms into the dough, but prepare classic pancakes of a larger size and wrap them in them mushroom filling, and warm it up a little in a frying pan. In any case, we put them on the table hot, fresh, pouring plenty of sour cream on them or serving them separately.

Pumpkin pancakes with potatoes

An original combination of vegetables such as pumpkin and potatoes can easily be turned into another masterpiece of culinary art - pumpkin and potato pancakes. To prepare pumpkin-potato pancakes we will need:

  • Pumpkin – 0.5 kg.
  • Potatoes – 5-6 medium potatoes.
  • Milk – 0.5 cups.
  • Egg – 2 pcs.
  • Flour – 3-4 spoons.
  • Salt, pepper - to taste.
  • Sour cream.
  • Vegetable oil.

Preparing the dough:

Peel the pumpkin and potatoes, rinse and grate on a fine grater. Bring the milk to a boil, pour it over the potatoes and let it sit for about 5 minutes, then drain the milk. Mix pumpkin with potatoes, add yolks, flour, spices previously separated from whites and mix thoroughly. Beat the whites into a strong foam and carefully fold into the dough.

Fry:

What are pancakes?

Draniki are, in essence, potato fritters. This dish is considered, but it is also found in the cuisines of other countries of the world.

So, in Ukraine, potato pancakes are called potato pancakes or potato pancakes, in – latkes, in Sweden – ragmunks (which translates as “bristly monk”), in the Czech Republic – bramboraks, in America – hashbrowns, and in Lithuania this dish is called potato pancakes. By the way, the word draniki is translated from Old Russian as “rub, tear,” so we can assume that the name contains the whole essence of the dish.

A little history

It is not known exactly when and where potato pancakes were first used in the form in which we know them. After all, potatoes began to be cultivated quite a long time ago, and, probably, the most variety of dishes. Thus, the first mention of potato pancakes dates back to 1830.

And some believe that they appeared under the influence German cuisine. But if Belarus is still considered the birthplace of the dish, then here initially potatoes were grated not on a grater (there were simply no graters then), but on a board.

In those days, people ate hash browns for breakfast. There was also a tradition: before the main meal, you had to eat a crust of black bread. Draniki are always eaten only hot with sour cream, rendered lard or butter.

Ingredients

Today there are many various recipes potato pancakes, but in its original form such a dish consisted of only a few components. We list the ingredients that are used most often and in most cases:

  • Potato. It is worth talking about it separately, because it is the main and most important ingredient. The taste depends on its choice ready-made dish. It is worth choosing varieties with a high starch content, since if there is not enough of it, the potato pancakes will not be juicy and soft or will burn during the frying process. It’s better not to use it, it contains little starch.
  • Eggs play the role of a binding element, so many people add them too. Usually there is 1 egg for 4-5 potatoes.
  • Onion. Onions, firstly, make potato pancakes more juicy and give them a pleasant taste. Secondly, onion juice protects potatoes from darkening and allows potato mass to be stored longer.
  • Flour or starch. If you can't find starchy potatoes, add starch during cooking. It can be replaced with wheat or corn flour.
  • Instead of onions, some use kefir, which also prevents browning.
  • Salt and pepper are added to taste. As for other seasonings, they are not traditionally used. But you can add garlic or dill or parsley.
  • If you like to experiment in the kitchen, you can make potato pancakes with filling or simply mix potatoes with vegetables or minced meat.

How to cook?

How to cook delicious pancakes? You need to remember some rules. Here are the main preparation steps:

  1. First, peel and wash the potatoes.
  2. Now you need to start chopping. How to grate potatoes? It all depends on your preferences and tastes, as well as on what kind of potato pancakes you ultimately want to get. If you plan to prepare tender and uniform potato pancakes, then use a fine grater. If you want the potato pancakes to be fried and crunchy, then grate the potatoes using a medium or even coarse grater. If you have little time, you can use a blender or meat grinder for grinding.
  3. Then you need to squeeze out the excess juice from the potatoes. In general, you don’t have to do this, since the juice also gives the dish a special taste. By the way, the mass with juice is called tare. There is also a bladed mass (in this case the juice is squeezed out) and boiled. In the latter case, the potatoes are first boiled and then boiled and chopped.
  4. Now mix the potato mixture with the egg, add onion or other ingredients, as well as salt and pepper. Knead the dough. The consistency will resemble not too thick sour cream.
  5. Now start cooking. It is best to fry potato pancakes, this is how they will be crispy. But you can also use an oven, a slow cooker and even a double boiler. By the way, melted fat or butter are best suited for frying, but you can also use regular vegetable oil (preferably refined).

  • 1 egg;

Cooking method:

  1. Peel the potatoes and grate them. If necessary, squeeze out excess juice.
  2. Also peel the onion and either finely chop it, grate it, or chop it in a blender.
  3. Mix potatoes and onions, add egg, salt and pepper. Mix everything well.
  4. Heat oil or fat in a frying pan.
  5. Spoon the mixture into a heated frying pan, leaving free space (at least 1 centimeter) between the potato pancakes so that they do not stick together.
  6. Fry pancakes until golden brown on each side.

Recipe two

If you can’t imagine your life without meat, then prepare meat pancakes. Here's what you'll need:

  • 100 grams of pork;
  • 100 grams of beef;
  • 700 grams of potatoes;
  • 1 onion;
  • 3 tablespoons of kefir;
  • 1 egg;
  • 3 bunches of dill;
  • pepper and salt to taste.

Cooking method:

  1. Rinse the meat, remove the veins and pass through a meat grinder. You can immediately pass the peeled onions through a meat grinder.
  2. Peel the potatoes and grate them on a medium grater. Squeeze out the excess juice and mix the potato mixture with kefir and egg.
  3. Chop the dill with a knife, after washing and drying.
  4. Add minced meat, chopped dill, pepper and salt. Mix everything thoroughly.
  5. Fry pancakes on butter.

Recipe three

Potato pancakes with mushrooms are very tasty. The list of ingredients is:

For potato pancakes:

  • 600 grams of potatoes;
  • 300 grams of fresh champignons;
  • 2 eggs;
  • 2 onions;
  • 2 tablespoons flour;
  • salt and pepper to taste.

For the sauce:

  • 200 grams of sour cream;
  • 2-3 cloves of garlic;
  • dill greens;
  • salt.

How to cook? Everything is very simple:

  1. First, take care of the mushrooms. Wash them well and cut them into small pieces.
  2. Heat oil in a frying pan and fry mushrooms.
  3. Now grate the pre-peeled potatoes on a fine grater.
  4. Peel the onion and chop it finely or grind it in a meat grinder or blender.
  5. Combine the potato mixture with mushrooms and onions, add flour, eggs, pepper and salt. Mix everything well.
  6. Place the mixture in a frying pan and fry the potato pancakes on each side for 4-7 minutes until golden brown.
  7. Now prepare the sauce. To do this, peel the garlic and grate it on a fine grater, chop the dill with a knife (don’t forget to wash it). Add dill and garlic to sour cream, add salt and mix.
  8. Serve hot pancakes with sauce.

  • If you decide to cook potato pancakes with filling, then make the filling in advance, it must be completely prepared. So if you use raw mushrooms, then they won’t cook through.

It is believed that potato pancakes were invented in Belarus. And the name came from there. This is the most common dish there; it is even served in even the most expensive restaurants. And they are prepared mainly from potatoes and onions.

But here in Russia, in different regions, they are called differently: kakorki, teruns, teruntsy, terunki, deriks. And they cook everything in their own way.

But there are some common features and now I will tell you about them.

  • Yellow potatoes are best for potato pancakes; they contain a lot of starch. And for some reason it makes them the most delicious.
  • To prevent the potatoes from darkening, you need to mix them with onions, one potato, an onion, again potatoes and an onion.
  • The best spices for potato pancakes are curry, black ground pepper, coriander, marjoram, red pepper, white mustard, dried dill, garlic, Bell pepper and chili pepper
  • Do not place pancakes that are too thick on the frying pan; they may not cook inside.

Traditional Belarusian pancakes

  • - 100 g
  • Salt and pepper - to taste.

Potatoes with mushrooms

  • Potatoes – 3-4 pcs.
  • - 200 g
  • Onion – 1 pc.
  • Egg – 1 pc.
  • Flour – 2-3 spoons.
  • Cheese - 100 g
  • Salt and spices to taste
  • Vegetable oil for frying
  • Butter for frying mushrooms

Finely chop the mushrooms and fry in butter along with the onion.

Now grate the potatoes, add egg, salt, spices, flour, and mix well. Now the mushrooms have cooled down. Mix. Let's fry.

Another option. You can not add mushrooms to the dough, but make larger cakes and

wrap mushrooms in them as a filling.

Potatoes with pumpkin

  • Potatoes – 3-4 pcs.
  • — 200 g
  • Milk - a third of a glass
  • Egg – 1 pc.
  • Flour – 2-3 spoons
  • Salt and spices to taste
  • Vegetable oil for frying

Grate potatoes and pumpkin.
