  3. Cut the tomatoes in half, and the cucumbers in thin slices. Tear the lettuce leaves into wide pieces with your hands.
  4. Place all ingredients in a salad bowl, add olive oil and mix very well.
  5. Place in the refrigerator for a couple of hours, and then serve to guests with hot dishes and meat snacks.

Here you have vegetables and bright decoration! Tomatoes, peppers and celery look very fresh and New Year's: in the end, no one cancels the traditional festive colors - red and green. Feel free to put peppers and tomatoes of different colors in the dish - pink, red, orange, green and yellow.

Ingredients: 8 ripe tomatoes, 3 bell peppers, 6 celery stalks, 1 small red onion, 2 medium oranges, 200 g pitted olives, 1 lemon, a few sprigs of dill, 1 tbsp. sugar, 2 tsp mustard with grains, 75 ml of olive oil, salt, freshly ground pepper to taste.

Cooking:

  • Prepare vegetables. Wash the tomatoes, dry, cut into cubes or medium-sized slices. Peel the celery, cut into small strips. Peel the onion, cut into thin half rings. Wash the pepper, remove the stalk and seeds, cut into thin sticks. Finely chop the dill.
  • Remove the peel from the oranges, cut into quarters, cut into thin slices, remove the seeds. Combine all ingredients in a large salad bowl, add olives.
  • Prepare the dressing: wash the lemon, squeeze the juice. Combine juice, olive oil, mustard and sugar, salt, pepper and mix thoroughly.
  • Just before serving, add the dressing to the vegetables and mix thoroughly.

A fresh look at eternal value! No matter how much we try to get rid of this relic of the Soviet past, it still seeps onto the festive table. There is nothing to do - you have to put up with it. Just be original and arrange the salad in serving cups. The dish will immediately “get younger” and will look fashionable and modern. Take this idea into service: dishes in cups are a fashionable culinary trend.

Ingredients: 250 g chicken fillet, 3 medium potatoes, 4 eggs, 125 g canned peas (drain the liquid), 1 small carrot, 3 small canned cucumbers, 1 medium onion, 125 ml mayonnaise, salt, freshly ground pepper to taste.

Cooking:

  • Vegetables - potatoes and carrots - boil, let cool, peel and cut into small cubes of the same size.
  • Boil eggs and fillets. Let cool, finely chop.
  • Cucumbers also cut into small cubes.
  • Put the ingredients in layers in serving cups, alternating light foods (eggs, fillets, potatoes) with bright ones (cucumbers, peas, carrots). Put a small amount of mayonnaise on top, lightly salt and pepper.

Salad with avocado in a "boat"

Another way to be original when serving is to use the peel of a vegetable or fruit that was used in cooking as a salad bowl. Avocado salad served with the skin on looks just great! True, this option is more suitable for small companies or a quiet gala dinner for two - it will be difficult to prepare 20 or 50 halves.

Ingredients

1 ripe avocado, 1 piece of chicken fillet, 2 eggs, 1 can of canned black beans, 1 medium tomato, 50 ml of natural yogurt, basil or any other spices, salt, freshly ground pepper to taste.

Cooking

  • Wash the avocado, pat dry, cut in half and remove the pit. Using a spoon, remove the pulp, leaving a layer 3-4 mm thick on the walls. Be careful not to damage the peel. Cut the pulp into small cubes, put in a bowl, sprinkle with lemon juice - so the avocado does not darken and retains its bright color.
  • Boil the fillet, let cool, cut into small cubes. Peel the eggs, cut in half and then cut into wedges. Cut the tomatoes into small pieces as well.
  • Combine prepared ingredients, add yogurt and spices, salt and pepper.
  • Mix thoroughly. Arrange the salad in "boats", garnish with herbs.

Salad "Tropics"

Since the Monkey loves fruits, they should be given a special place on the festive table. Usually oranges, bananas and other sweet gifts of nature play a rather secondary role and act as an addition to the “sweet table”: cake, sweets and pastries. This year they deserve a separate place in the New Year's menu. Prepare salads from them and serve on their own or with ice cream.

Ingredients

1 small mango, 1 small pineapple (can be substituted with canned ones), 1 large or 2 medium kiwis, 1 passion fruit, 100 ml freshly squeezed orange juice, 50 ml freshly squeezed lime juice, sprig of fresh mint, lemon balm, or both herb leaves.

Cooking

  • Wash, dry and peel mango, pineapple and kiwi. Cut into small pieces. If the pineapple is canned, drain in a colander and let the juice drain completely, and then chop. Stir.
  • Place the fruit mixture in a salad bowl. Wash the passionfruit, pat dry and cut in half. Scoop out the pulp with a spoon and place on top of the salad.
  • For dressing, combine orange and lime juice (the latter can be replaced with lemon, adding it to taste), mix thoroughly. If desired, you can add a little liquid honey, it will set off the delicate taste of the dish.
  • Wash mint or lemon balm, dry, tear off the leaves and cut into thin strips. Sprinkle over salad and serve.

Dressings for vegetable salads for 2016

There is another way to make a salad original. Try seasoning it with a new sauce. Even the banal "Olivier" plays with completely different shades of taste, if you add a little mustard to mayonnaise. And it is completely transformed if instead of harmful high-calorie mayonnaise we take sour cream and mix it with mustard in equal proportions, and in addition lightly salt and pepper.

  • Ingredients: 2 tbsp white wine vinegar, 6 tbsp. extra virgin olive oil, 1 tsp mustard seeds (you can take the usual), salt, freshly ground black pepper to taste.
  • Cooking: combine vinegar and mustard in a small container, salt, mix, leave for 15 minutes. Whisk. In the process, in small portions, pouring in a trickle, add olive oil. The sauce should not be too thick! When it reaches the consistency of not very liquid sour cream, pepper, mix and season the salad.

Spicy dressing with cloves

It goes best with salads, which are full of tomatoes and herbs. This dressing can be prepared in advance - the ingredients are designed for a fairly large portion. If you do not want to risk, divide the indicated amount in half.

  • Ingredients: 100 ml liquid honey, 4 pcs. dry cloves, 300 ml olive oil, 500 ml balsamic vinegar.
  • Cooking: combine vinegar and honey in a saucepan, add cloves. Put on fire, bring to a boil, cook for 20-25 minutes until the amount of liquid is halved. Pour the oil (pre-cool it in the refrigerator) into a medium container. Add the previously reduced mixture. Before dressing the salad, the sauce should be whipped with a whisk or fork.

Yogurt + greens

The best alternative to fatty sour cream and, especially, mayonnaise. A big plus: it cooks in a couple of minutes, and fresh herbs for this dressing can be grown on the windowsill. So even by the New Year, your salads will be dressed with sauce with aromatic herbs just from the garden.

Ingredients: 2 tbsp finely chopped dill, 2 tbsp. finely chopped green onions, 250 ml low-fat yogurt without additives.

Cooking: Combine all ingredients in a bowl and mix thoroughly. Salt and pepper if desired, although the sauce will have a rich taste anyway. Before dressing the salad, let the yogurt with herbs stand in the refrigerator for 2-3 hours.

Banana + apple

This sauce is one of the most "winter". First, it is made from apples and bananas available during the cold season. Secondly, it perfectly complements the taste of salads made from oranges, tangerines, grapefruits and other citrus fruits. In addition, all these fruits are favorites of the Monkey.

  • Ingredients: 1 large banana (very ripe, or even slightly overripe - it will be even tastier), 100 ml of apple and 50 ml of freshly squeezed carrot juice.
  • Cooking: peel the banana, using a blender, beat into a light, airy puree. Combine apple and carrot juice, mix, add to the banana in the blender bowl. Whisk all the ingredients together again.

Rum dressing

Such a dressing is suitable for a table at which adults will sit. Rum will emphasize the delicate taste of cream and, at the same time, enhance the aroma of each of the components of the fruit salad.

  • Ingredients: 100 ml heavy cooking cream, 1 tsp. rum, 1 tbsp. powdered sugar.
  • Cooking: combine cream with powder, beat with a mixer. Then add the rum and mix the sauce thoroughly until smooth.

Great dressing for fruit salad. However, it can also be used as a sauce for ice cream or warm pastries such as strudel or pie.

  • Ingredients: 100 g of any berries (fresh or frozen), 50 ml of water, 1 tsp. sugar, citric acid or concentrated lemon juice to taste.
  • Cooking: puree the berries - with a pestle or a blender. Add sugar and citric acid (or season with lemon juice to taste). Pour in water, stir. Put on fire, bring to a boil. If the sauce is too thin, let it reduce slightly. Then remove from the stove and let cool completely.
