How to collect and store chanterelles?

The hunting season for chanterelles begins in July - exactly in the middle of summer. These mushrooms usually grow in large groups in the shade of trees of mixed, coniferous and birch forests and in clearings.

You can go to the forest for chanterelles from mid-June to early October. They prefer rainy summers, especially a lot of them appear after thunderstorms. You can search for them everywhere. Chanterelles do not like loneliness, they gather in groups in the clearings. They often hide under moss and foliage.

In nature, there are several types of chanterelles: real, false, tubular, yellowing, grayish. In medicinal and prophylactic products, only real chanterelle is used. Other species have not yet been studied enough to give specific recommendations for their use.

Signs of real chanterelles: the hat is concave, bright yellow, with wavy edges. The leg is dense, not loose, a slightly darker shade than the hat. The flesh is yellow-white, dense, not damaged by worms or insects. It smells delicious of nuts or even fruit.

If you notice that a small family of chanterelles is located on a fallen tree - be careful! After all, real mushrooms would prefer a mossy stump.

If you know the signs, you won’t confuse real mushrooms with twins

Often mistaken for chanterelles is a yellowish blackberry. Their color is similar, but at the bottom of the hat, papillae grow in the form of needles on the bottom of the cap. Another double is the olive omfalot (Omphalotus olearius). This mushroom is deadly poisonous, but it grows only in the subtropics and not in the soil, but on wood dust.

False chanterelles grow on rotten trees and forest floor. The color of such mushrooms is more saturated (with an orange-brown tint), the hat is neat, regular, round in shape, even. The edges of the cap are lighter than the cap itself.

Since they absorb heavy metal compounds, chanterelles should be collected in ecologically clean areas: as far as possible from the industrial zone and the roadway.

If there is no basket at hand, you can safely put the mushrooms in a bag or backpack: they will not wrinkle or break - they are strong.

Storage

When freezing, boiling, frying, salting, the medicinal properties of chanterelles are destroyed. Therefore, for treatment, it is better to use them fresh or dried.

For drying, mushrooms must first be prepared. To do this, they are freed from dirt with a brush. Do not wash under any circumstances. After that, they are strung on threads and hung in the attic. Can also be dried in the oven. Readiness can be judged when the mushrooms break when pressed.

When drying in the oven, the temperature should not exceed forty-five degrees, otherwise the beneficial substances of the chanterelles will begin to break down

It is convenient to store in powder form, preferably in a glass jar. To avoid moldiness, before placing dry mushrooms or powder inside, pour a little alcohol on the bottom and set it on fire. So there will be no oxygen left inside.

Harvested mushrooms can be stored in the refrigerator for two to seven days, but it is best to cook fresh.
