Take the tomatoes and cut out the junction with the bush. Pour boiling water over the tomatoes for a couple of minutes. You can put them in a pot of boiling water. In addition, the tomatoes can be rubbed quite strongly with the blunt side of the knife blade until they turn brown. In any of these cases, the skin will easily peel off the vegetable. Remove the skin from the tomato.

Crack the eggs directly into the pan. Salt the eggs and mix LIGHTLY. I love when the protein is felt, and the yolk mixes with the tomato juice and turns into a sauce. Put the butter cut into pieces on top (I didn’t cut it so you can see it better in the photo).

Fried eggs are a common and everyone's favorite type of breakfast. The dish is prepared very quickly, saturates well, and if the eggs are supplemented with any vegetables, herbs and spices, the classic breakfast will sparkle with new flavors. One common improvement to regular fried eggs is scrambled eggs with tomatoes. We offer several recipes.

The simplest scrambled eggs with tomatoes are prepared from a small set of ingredients and spices.

You can add spices to taste or use the composition given in the recipe:

  • 2 eggs;
  • 1 medium ripe tomato;
  • a pinch of salt;
  • a little ground pepper;
  • any frying oil;
  • a pinch of dry ground garlic (optional)

First, we prepare the tomato, remove the green residue of the stem, cut it into a medium cube and send it to the heated oil. Fry for three minutes, stirring. It is recommended to cover with a lid so that the vegetable softens well, and all the juice does not have time to evaporate quickly.

The next step is to break the eggs over the tomatoes, salt and sprinkle with spices. If you need to save the liquid yolk - fry for 2-4 minutes, slightly covering with a lid. If you like the frozen yolk - cover with a lid and cook on medium heat for 5-7 minutes.

With the addition of onions

The onion adds some piquancy to the taste of ordinary scrambled eggs with tomatoes.

Fried eggs with tomatoes and onions is prepared according to the following recipe:

  • small onion - 1 unit;
  • medium red tomatoes - 2 units;
  • category C1 eggs - 3 units;
  • a spoonful of oil;
  • salt, pepper to taste.

First of all, you need to prepare the vegetables: wash, peel the onion and cut into a cube 5 by 5 mm in size, send to sauté in oil for 2-3 minutes, then add chopped tomatoes. Continue cooking, stirring, for another 5 minutes. At the end, beat in the eggs so that they cover the vegetables, salt, pepper, bring to readiness.

Hearty scrambled eggs with tomatoes and chicken fillet

If you like a more hearty breakfast than a simple scrambled egg, we recommend trying the following recipe:

  • 3 large eggs;
  • 1 medium tomato;
  • 200 gr chicken fillet;
  • 30 gr sl. oils;
  • a pinch of salt;
  • a little pepper;
  • a pinch of paprika;
  • clove of garlic.

Finely chop the garlic, fry for a couple of minutes. During this time, we prepare the chicken - you can boil it in advance, then skip this step. If raw meat is used, cut into small cubes and fry with garlic for 7-10 minutes, stirring so that the cubes are reddened on all sides.

We drive the eggs into a separate bowl, add spices, beat with a fork, pour the contents of the pan. Cover with a lid for 5-7 minutes. Sprinkle with chopped green onions before serving.

On a note. Tomatoes are best used in pink or bright red. It is important that they are juicy - then breakfast will definitely be delicious!

With added cheese

Tender and fragrant scrambled eggs are obtained precisely thanks to the cheese. Cheese can be used as hard, easily rubbed, and soft varieties.

The products used are the following:

  • 2 eggs;
  • 1 juicy tomato;
  • a spoonful of any oil;
  • a pinch of salt;
  • a little pepper;
  • 50 gr fresh dill;
  • 50 gr of hard cheese;
  • 30 g of processed cheese (as in cheese soup).

Divide the tomato into several slices, fry. Break the eggs on top, give a little "grab", sprinkle with chopped dill, salt and pepper. Top with cheese. Cook covered for 5-7 minutes. It is recommended to serve with a couple of toasts.

On a note. Fried eggs with unfrozen yolks are much tastier served with toasted toast. For taste, you can rub them a little with a clove of garlic.

How to cook in a slow cooker

In a slow cooker, you can cook not only complex dishes, but also a quick scrambled eggs for breakfast or a light snack.

When the heating is over, put the vegetable into the oil, activate the “Stew” or “Frying” program for 5 minutes, cover with a lid. As soon as the time is over, we drive in the eggs, salt and pepper, set the time for another 15 minutes.

in Georgian

Fans of spicy dishes will love scrambled eggs cooked in Georgian traditions - with a lot of spices and, of course, with a portion of a small spice.

  • 2 medium tomatoes;
  • 3 eggs;
  • small bow;
  • 50 gr fresh cilantro;
  • the spoon is small;
  • a couple of pinches of suneli hops;
  • a little salt;
  • red pepper on the tip of a knife;
  • a pair of green onion feathers;
  • 2 garlic cloves.

First of all, chop the peeled onion and chop the garlic. Fry in hot oil for three minutes. As soon as an appetizing onion-garlic smell is felt, we add diced tomatoes to them and cook everything together until a lot of juice appears and the tomato becomes very soft. We chop cilantro, add, lightly salt, pour half of the spices, stir. We break the eggs on top, salt a little again and sprinkle with the remaining spices. Chop the onion and sprinkle on top. Cover with a lid for a couple of minutes, then serve.

On a note. If you fry in butter or ghee, the dish will turn out more fragrant and tender.

Original version with shrimp

If you have never tried cooking scrambled eggs for guests, this option will help to surprise and deliciously feed your friends.

  • peeled shrimp - 400 gr;
  • juicy tomatoes - 2 fruits;
  • onion - 1 head;
  • eggs - 4 units;
  • soft cheese - 30 gr;
  • garlic - a pair of cloves;
  • rosemary - a pinch to give a tint taste.

First, chop and fry the onion, after a few minutes put the tomato cubes and finely chopped garlic and rosemary, salt. Stirring, cook for ten minutes.

Beat in the eggs so that they completely cover the vegetables. We pierce the yolks so that they spread. We wait until the eggs are completely "grabbed".

We spread the washed shrimp, and distribute over the entire scrambled eggs. Cover with a lid for 2-3 minutes. Sprinkle with cheese, cover for a couple more minutes to melt the cheese.

When serving, you can decorate with chopped fresh herbs - just use a couple of branches.

On a note. Fresh herbs can be added both during cooking and as a decoration of the dish. Scrambled eggs go well with dill and green onions.

With tomatoes and bacon

Many are familiar with scrambled eggs with tomatoes and sausage. This is a variant of no less fragrant and hearty breakfast, but with the addition of bacon.

  • 2-3 eggs;
  • 2 cherry tomatoes;
  • 100 gr bacon;
  • pepper, paprika, salt, turmeric;
  • butter.

Rinse the cherry tomatoes, cut into quarters, chop the bacon into medium strips. First, fry the bacon so that a light crust appears on the strips, then add the cherry tomatoes, mix with a spatula, and pour over the eggs after a couple of minutes. Salt and season a little on top of the scrambled eggs - use a small pinch of each spice. Serve with sweet and sour, garlic or soy sauce, homemade wheat croutons.

In China, a dish under the same name is often prepared in different provinces in very different ways, for example, Gongbao chicken (宫保鸡丁 / Gong Bao Ji Ding) - nuts are added somewhere, carrots somewhere, cucumbers somewhere, somewhere then nothing but chicken and dried chili peppers, somewhere fresh chili peppers, somewhere the chicken is chopped into pieces with bones, somewhere only the breast is used. But there is one of the few dishes that is almost the same throughout China - it's fried eggs with tomatoes. And in Beijing, and in Shanghai, and in Hong Kong, you will be served almost the same thing.
This dish is very loved and popular among the Chinese. Everyone likes it - both children and adults, and even fastidious laows (foreigners). It was one of the first meals I was able to eat shortly after moving to China. This is the dish that every mother prepares for her children, and for every Chinese this dish is associated with childhood - like mother's cutlets or grandmother's pancakes for us. The Chinese call this food 家常菜 (jia chang cai). English-speaking people call such food comfort food.

This dish can be ordered at any eatery or restaurant, although it is very often prepared at home. And in places where this dish is not served, for example, in chic seafood restaurants, rich Laobani (businessmen) after a squandering dinner, having already spent a couple of thousand yuan and rolled up a lot of Chinese rice moonshine / vodka / liquor (???), before how to disperse to KTV (Chinese karaoke bars) and brothels, in a friendly way they ask the waiters to convey to the chefs a small request, could they quickly bungle up something not from the menu for a fee. And it will always be fried eggs with tomatoes.

The Chinese jokingly call this dish a man's dish, because it is believed that anyone who does not have any skills in the kitchen can cook it. And some Chinese believe that this dish helps the sick to absorb medicines.

There is even a feature film where people admire the beauty and perfection of this dish. http://asianwiki.com/Flavor_of_Happiness

This dish has two Chinese names 蕃茄炒蛋(fan qie chao dan) and 西红柿炒蛋(xi hong shi chao dan). How it will be written on the menu depends on the province, but most often I came across 蕃茄炒蛋(fan qie chao dan). Orally, among themselves, the Chinese most often use 西红柿炒蛋 (xi hong shi chao dan). In Chinese, there is another name for a tomato, in addition to 蕃茄 (fan qie) and 西红柿 (xi hong shi) - 样柿子 (yang shi zi), which means foreign persimmon. This is the oldest name for tomatoes in China, as they have been called since the Ming Dynasty, when, thanks to Spanish sailors, tomatoes came to China. Fun fact - in 1983, English Chinese archaeologists announced that in the province of Sichuan, in the vicinity of the city of Chengdu, they managed to find evidence that the Chinese were the first in the world to grow tomatoes back in the days of the Western Han Dynasty (approximately 2nd century BC). AD). But why, after the vigorous cultivation of tomatoes, the Chinese suddenly all together forgot about it for one and a half thousand years, scientific explanations are not provided.

Required ingredients: eggs, tomatoes, salt (from these three components you can cook a delicious and complete dish).
Commonly added ingredients: sugar, white pepper, green onion, Shaoxing (cooking) wine, sesame oil, oyster sauce, garlic, soy sauce, chicken broth in granules, starch diluted with water (to thicken the sauce).
Less commonly added ingredients: ginger, white rice vinegar, dried ground chili pepper, ground Sichuan pepper, hot chili oil, sesame seeds, fish sauce,

Singaporean Chinese can chop ginger into this dish, but I would not advise even desperate fans of ginger to do this, because it will completely kill the delicate taste of the egg and tomato.
Starch diluted with water is often added to restaurants.
I like to add oyster sauce because I lived in Fujian province for several years, and they love this sauce very much and I really fell in love with it.

If the tomatoes are "plastic", you can add a tablespoon of tomato paste when frying. In this case, the Chinese add ketchup, because few people know about tomato paste.

This dish, in principle, can be cooked in a wok, and in any pan, and at least in a slow cooker or in some kind of pot.

Other variations of this dish:
- first fry the tomatoes and, when they are almost ready, pour in the beaten eggs. But here, from a lack of experience, a jamb with the consistency of eggs can occur - if the tomato sauce is too thin and you start mixing the eggs at the wrong time, they can turn into an unpleasant slurry.
- do not beat the eggs, pour them into a preheated pan and start stirring quickly, then add the tomatoes. I personally don't like this option because I just don't like it when the eggs are beaten unevenly (personal quirks).
- fry the beaten eggs as in my recipe, but without taking them out, add raw tomatoes. I cooked this option for quite a long time before, but the sauce is not so saturated or the eggs are too overcooked.

Good luck with your Chinese cuisine!
Not everything is so difficult!
