3. Add sour cream to the total mass. It is better to take it more than 20% fat. Mix everything thoroughly.

5. Combine soda with a few drops of vinegar (sour cream), thereby extinguishing it. Add to the dough and mix everything.

6. Divide the finished dough in half. Add cocoa to one half, flour to the second. They should have the same consistency.

7. The dough should resemble thick sour cream.

8. Having completed the kneading of the dough, you can proceed to the creative part of making the cake.

9. Initially, you need to grease the form well with vegetable oil, or use parchment.

10. Put 2 tablespoons of light dough in the center, then 2 tablespoons of chocolate dough. And so alternate until the desired amount of dough in a baking sheet.

By lowering the temperature and increasing the baking time, the cake is more even. The middle practically does not rise, remains on the same level with the main mass. It turns out an even cake.

14. While baking a cake - do not open the oven door so that it turns out to be even and lush. Otherwise, it may abruptly settle.

15. When the cake is reddened, take it out and check for readiness with a toothpick. If it is crumbly and wet, put it back in the oven for another 5 minutes to the previous mode. If dry and clean - it is completely ready.

If your cake is browning quickly, but still damp, you can cover it with foil. Then it will bake well and not burn.

Honey cake can be cooked in two different ways: using a water bath or in a saucepan over a fire. Here is a method using a water bath.

1. The meaning of such a bath is that a smaller one is placed in a large vessel. But it should seem to cover a large pot with a lid.

2. The small pot should not be in boiling water. It should be above it and heated with steam.

3. Before putting honey into the total mass, it must be tasted. After all, what taste is it, the whole dessert will turn out like that.

4. Heat the food combined in a small saucepan. so they kind of melt. To prevent the mixture from sticking to the bottom, it must be constantly stirred. The fire must be as strong as possible.

5. Beat the eggs so that the protein is well connected with the yolk, as when adding eggs to a hot mixture, the protein may curdle. There should be a light foam.

6. It is better to beat the eggs with a mixer at high speed. They should be poured in a very thin stream and at the same time actively stir the hot mixture so that the protein and yolk do not boil when they are added to boiling water.

7. Without removing the dough from the heat, add soda and mix thoroughly again.

It is not necessary to extinguish soda here, as it will be completely extinguished by honey. In the finished delicacy, its taste will not be felt.

8. The resulting mixture must be well warmed up. In this case, a light foam and airiness should form. Only then can it be removed from the fire.

9. In a separate deep bowl, sift the flour (several times) and add vanillin there. Mix everything.

The more often and more you sift the flour, the more airy the cakes will be. Since the flour is saturated with oxygen during sifting, which is not so unimportant!

10. Add the sifted flour in parts to the kneaded dough. At the same time, do not forget to stir.

11. Batter is very sticky. Therefore, by gradually adding flour, it becomes less sticky and more dense.

Be careful! If you pour a lot of flour, then the cakes will turn out to be very dry and hard.

12. When the dough has become very difficult to stir with a spoon, you need to put it on the table, adding a little flour. Ideally, the dough should not stick to your hands. At the same time, it spreads noticeably.
