What supplements are commonly used?

If we assume that sweets are made entirely from natural products, then they should be stored for a few days. But in reality this does not happen. To improve taste and increase shelf life, add:

  • natural flavors (beet juice, blueberry, currant, strawberry) and identical to natural;
  • stabilizers and antioxidants;
  • thickeners;
  • preservatives;
  • moisture-retaining substances;
  • dyes;
  • emulsifiers;
  • sweeteners.

Not all of them are harmful, but some can cause allergies or indigestion.

How to choose harmless?

When talking about harmfulness, you must first decide what kind of harm we are talking about.

If you are a guardian of the figure and a fan healthy eating, then any sweets will be harmful for you. And if you are just afraid of possible allergic reactions or poisoning, then pay attention to composition:

  • it must be written in Russian;
  • all ingredients should be familiar and understandable to you;
  • the list of ingredients should be short.

The expiration date should not be more than 2 months old. The smaller it is, the better.

Eating an unlimited amount of sweets (and it does not matter the type, brand and manufacturer) is harmful in any case.

The history of "Korovka"

The first candy was called Korowka. She appeared in Poznan. In 1921, the Polish manufacturer Felix Pomorski decided to launch soft caramel. He boiled condensed milk, enclosing the soft and viscous filling in a relatively hard shell of creamy molasses. Sweets received popular appreciation, and already in 1929, the wealthy Pomorski moved near Warsaw, to the town of Milanowek, where he built a large factory. After the war, candies "Korovka" became known in the Soviet Union. Moreover, the plagiarists did not even bother to change the label. On the wrapper of Korowka, an animal of the Holstein breed flaunted as a symbol of milkiness. The same cow was on the candy wrappers of Soviet sweets. Sweets "Korovka": composition

This delicate dessert should include only condensed milk, sugar, butter and molasses. How to determine the "right" candy? After all, manufacturers are not always honest with customers. Often they do not report what "surprises" lurk inside store-bought sweets. High-quality candies "Korovka" should be a uniform light brown color. Briquettes are hard enough to withstand finger pressure, but should still bite easily. Inside, a high-quality "Korovka" stores a soft, viscous filling. If it is too liquid, vegetable fat is present in the dessert. If the filling crumbles, then most likely the product is too stale on the store shelf. After all, "Korovka" retains its best properties only for the first ten days. The voids inside also testify to the old age of products.

Confectionery factory at home

Making your own candy is easy. You can even involve children in this process - so they will appreciate the taste of real sweets and understand the difference, which is not in favor of the store product. There are several ways to make homemade Korovka sweets. Some recipes advise using condensed milk, others - whole milk, others - cream and honey. You can make "Korovka" with different tastes by mixing into the composition lemon peel, vanillin, cocoa. And it doesn't even have to be candy. The prepared mixture can be used as a filling for muffins. Just add butter to it. Fill a muffin pan halfway with batter. Put the cows melted in butter on top. Cover with dough and place in preheated oven. Bake for about twenty minutes at one hundred and sixty degrees.

Classic variant

It's time to reveal Felix Pomorski's production recipe. Pour two glasses into an aluminum saucepan whole milk(fresh, farmer's, not long-term storage). Bring it to a boil and begin to slowly pour in a kilogram of granulated sugar. Stir all the time so that it doesn't burn. So we cook for about half an hour. The mass will gradually thicken and acquire a shade of baked milk or even toffee. In the end, you can add various flavoring additives to the Korovka milk sweets: grated lemon zest, vanillin ... We line the mold with baking paper or foil. We pour out the sweet. When it hardens a little, you can cut it into smaller pieces. Put in the refrigerator until completely hardened.

Creamy honey sweets "Korovka"

The composition of these sweets is very simple, and the manufacturing process resembles the classic recipe described above. Pour a glass into a saucepan heavy cream. Add sugar immediately. It will take two and a half glasses. Stir to dissolve most of the crystals and put the saucepan on the stove. As soon as the cream boils, reduce the heat to a minimum and dissolve a spoonful of honey in the sweet mass. We continue to cook until from the drop dipped in cold water, it will not work to roll the ball. For the production of sweets at home, it would be nice to have silicone molds. Then the products will not need to be cut. But if they are not, we will use some kind of tray. Let's wait until the hot mass cools down and hardens, and cut the Korovka sweets.

Taste comes from childhood

And how did they cook the creamy sweet that everyone loved during our childhood? On confectionery factories named after Karl Marx or "Svitoche"? famous candies"Korovka" recipe according to GOST prescribed to be made from milk powder. So the manufacturer could be sure that the product would not come out too liquid. Melt butter (eighty grams), add one hundred grams of sugar, three drops lemon juice and 50 ml of water. Hold over the fire, stirring until the mass turns into creamy caramel. Remove from heat and stir in a glass of well-sifted dry milk. This mass is well molded, you can create sweets of any shape from it or decorate a cake with it instead of mastic. Molds are recommended to be greased with a thin layer (using a silicone brush) of vegetable oil. Put stuff in there. After five hours, the moisture will evaporate and the "Cow" can be eaten.

Condensed milk

Particular attention in this recipe should be given to the quality of milk. Condensed milk must be natural! Better take a Belarusian or Ukrainian product. Only then will you get well-formed, with the right consistency of the Korovka candy. The recipe calls for diluting three tablespoons of condensed milk with half a glass of 20 percent fat cream in a saucepan with a thick bottom. Pour 130 grams of brown cane sugar and a bag of vanilla. Bring this mixture to a boil and immediately reduce the heat to a minimum. Cook, stirring constantly. After ten minutes, add forty grams of butter. Boil the liquid to the consistency of molasses, when it acquires the color of milk toffee. Pour into molds and cool.

Another recipe with honey

In a thick-walled saucepan, bring a glass of whole (at least 6% fat) milk to a boil. Add 25 grams of butter. falling asleep granulated sugar- one and a half glasses.
