Cornmeal. Nightmare of kindergartens - lumps in semolina

Mamaliga, as you know, is called the traditional Georgian thick corn porridge. By the way, in some regions of Georgia it is still used as bread to this day. Initially, hominy was prepared from Italian millet (millet). This dish is eaten and cooked with pleasure in other countries, for example, in Romania and Moldova. The very name of porridge comes from their language, but the Georgians call hominy - gomi.

Hominy is an inexpensive, healthy and easy-to-cook dish. You can add dishes such as lobio to hominy or chicken liver in Georgian. In this case, you will also receive an inexpensive, but very tasty menu.

Many years ago Georgians cooked hominy from millet. However, they used an unusual millet, not Italian. And then corn replaced it. In the 1940s, not only millet, but also corn began to be sown in Georgia.

In Russia, hominy was made from millet until corn flour appeared on the free market. It is worth noting that it does not taste the same as in Georgia.

If you prefer millet hominy, then it is better to fry it immediately with cheese.

Hominy recipe

Ingredients:

  • corn grits - 1 part;
  • water - 3.5 parts (for example, if you take 2 cups of cereal, then you need 7 cups of water);
  • cheese (suluguni or other).

Cooking method

Georgians cook hominy from white corn grits according to the recipe. It has a slightly different taste than the regular one. For example, take 5 cups of corn grits (this is 650 grams, enough for about 5-6 servings) and 17 glasses of water. Depending on the grits and fire, you may need more water. Initially, use the rule: better less water than more. After all, when the cereal boils, you can add water to it, if necessary. But if there is too much water, you will have to evaporate it for a long time.

Information for lovers of salty: hominy after cooking, do not eat salty. You can only slightly salt the water at the very beginning of cooking. Many prefer not to add salt at all. After all, cheese should be salty in this dish.

So, they poured water over the cereal and put it on a small fire. On a low heat, bring the porridge to readiness until the water boils away. Try hominy, if the cereal is boiled, then the porridge is ready. Everything is very simple!

The cooking time for this recipe will depend on the intensity of the fire, the size of the grits, and the quality of the grits. In this regard, the cooking time varies from 45 minutes to 1.5 hours. In the above proportions, porridge is cooked for 1 hour and 15 minutes.

You yourself can choose the density of porridge depending on your preferences. But remember that hominy should not be liquid. It should not flow, like, for example, rice milk porridge. When laying out the hominy on plates, it should form a non-spreading slide.

After boiling, hominy must be stirred, otherwise there is a possibility of lumps. And with further cooking, the upper layers of porridge will not receive enough heat compared to the lower ones.

For the convenience of mixing hominy, it is better to use a wooden spatula called chogani. Generally, you can use any spatula which one you have at home. The main condition: it should not be too thin, otherwise it may break.

There is an opinion that this porridge should be added cornmeal, or if it is not there, then semolina. Let's figure it out. The purpose of adding flour is to thicken the mass. This is necessary in cases where you have purchased large cereals. However, the factory-made cereals that you will find on the shelves in stores are usually small, so you do not need to add flour, the porridge will be thick anyway.

Corn crisps

After cooking porridge, you can make another dish - corn crunches. This is also a simple, uncomplicated, but very tasty dish.

After you have laid out the finished porridge on plates, there is still a lot of hominy left on the walls of the pan. Put this pot on a low heat. The porridge on the walls will dry out, fry and turn into crispy delicious crust. Your crunchies are ready! They easily break off the walls of the pan. These crunches are very fond of children.

How to serve hominy on the table

As we have already said, hominy should be laid out on a plate in a slide. We insert pieces of cheese - suluguni or imeruli into the hill. Mamalyga is applied with a chogani spatula. So that the porridge does not stick to the shoulder blade, the chogani must be moistened periodically in cold water.

No need to cook hominy for several days. Anything prepared according to the recipe should be eaten immediately. Do not store hominy in a saucepan. And if there is anything left, fry it. Hominy is served and eat while she is hot.

Cheese

Although the factory suluguni is a miserable copy of the real suluguni, it is still suitable for us to add to porridge. You can use bryndza, Adyghe cheese and other types of cheese. The main condition is that the cheese melts and is salty. Many people think that Western European cheeses do not go well with hominy. By the way, try adding salted cottage cheese or cottage cheese with mint and adjika to the hominy.

What is this porridge eaten with?

As we have already mentioned, in some regions of Georgia hominy is used as a substitute for bread. In this regard, it is eaten with almost all dishes.

The porridge goes well together. with lobio or roast pork. Gravy for porridge can be tkemali, tomato satsebeli, for example, made from the right tomato paste, and adjika with sour cream.

You can think of nothing, and eat this porridge without anything. If you have something left, fry the porridge with cheese and eggs.

Usually porridge is fried in a pan with cheese. For some, this is the preferred cooking method.

Corn grits There are different grinds - medium, large and small. The latter is usually called corn semolina, used to prepare the most delicate cereals, like mashed potatoes. Small cereals do not exceed 1.2 mm in size and can be used not only for standard breakfasts in the form of cereals, but also to create delicious corn sticks. And in baby food, it occupies a special place due to unusual taste and completely gluten-free.

How long does cornmeal porridge cook?

In any form, during the first preparation, it may seem very "stubborn". The time for which it reaches readiness may vary depending on the degree of grinding, variety and manufacturer. After all, not all semolina is produced under the size of 1.2 mm, there are cereals with a diameter of 0.7 mm.

The cooking time also depends on the liquid used. With milk and water, porridge is cooked on average for 30-35 minutes, while with plain water, the time can be reduced to 20-25 minutes. It should be remembered that it takes at least 20 minutes to cook semolina from corn with regular stirring.

In a multicooker in the “porridge” mode, semolina also cooks for 20 minutes, plus or minus 1-2 minutes, depending on the model and manufacturer of the device. You don't have to spend a lot of time on submission.

Instructions for cooking porridge from corn semolina

By classical traditions semolina is cooked in milk - so its taste becomes more tender and pleasant:

  1. First you need to pour 4.5 cups of milk into a saucepan and heat well, but do not boil.
  2. After that, put a little salt and sugar to taste, if you want to get a sweet product, pour 1 cup of corn grits, but only in a very thin stream so that there are no lumps. In parallel, you need to stir without ceasing.
  3. Now bring the dish to a boil and reduce the heat to a minimum value.
  4. Every 5 minutes or a little more often, the product is stirred, marking 20 minutes of total cooking.
  5. If after the specified time the porridge still seems unprepared, add 3-5 minutes.

Corn grits are very "loving" water or milk, so much more liquid is taken than the product itself. This happens because after cooking, the porridge hardens strongly and becomes much thicker. If you want to make a more liquid version, then add 1-2 cups of milk or water.

cooking secrets

Any porridge has its own nuances and tricks, and corn porridge does not differ in this regard by excessive modesty. In addition to the fact that it requires a large amount of liquid, several features can be distinguished:

  • fat content cow's milk directly affects the calorie content, however, corn grits supplemented with super nutritious milk is not suitable for feeding children under 2-3 years old, as digestion difficulties may occur;
  • often lumps form in the porridge - to avoid this, you need to bring only half of the milk to a boil, adding salt and sugar at the end, and then pour the rest;
  • for children under 6-7 years old, it is advisable to cook porridge in water according to the same rules, followed by the addition of hot boiled milk;
  • when reheated, the porridge loses its viscous texture and becomes crumbly;
  • the optimal ratio of cereal and liquid is 1: 3;
  • during cooking, you need to use dishes with the thickest walls and bottom;
  • use a flat saucepan if you want to achieve maximum heating of the cereal;
  • Don't forget to stir the dish regularly!

The first preparation of porridge from corn semolina may not be the most pleasant, even with all the nuances. If the product is burnt, it means that the fire was too strong or the dish was not stirred often enough. But after 1-2 attempts, you will definitely get a tender and delicious porridge. And additional recipes will help diversify the menu.

It turns out here is such a mess. She's really yellow. And it's a pity that the photo cannot convey all the cheerfulness of color and aroma. corn porridge. If the porridge seems thick to you, you can dilute it with milk. Then it will cool down faster.

Corn semolina is a godsend for PPshnikov. After all, ordinary wheat semolina is not recommended because of gluten during weight loss, only occasionally during weight maintenance. This is where corn semolina comes to the rescue. After all, not only porridge is made from it, but also used in baking, for example.

At the end I will tell how to cook cheesecakes with cornmeal.

We will need the following products:

200 g of cottage cheese with a fat content of 2-5%, 1 egg, 1 banana (preferably overripe), 5-6 tablespoons of corn semolina.

Peel the banana and chop it with a fork, add cottage cheese to it, also crush it so that there are no lumps, add the egg, mix. Add 2 tablespoons of corn semolina to the "dough". We take the dough for cheesecakes with raw hands, roll the balls, dip them in corn semolina, put them in a pan without oil, make them flat so that they are not raw inside. I'm grilling on my new grill pan. Fry over low heat, about 7 minutes on each side.

Cheesecakes, due to corn semolina, do not stick to the pan and are well removed. Due to the banana in the composition, they are quite sweet. I serve them with drinking yogurt without additives, you can sprinkle with honey or sprinkle coconut flakes, cinnamon.

Corn semolina LLC "Garnets" is an excellent cereal that is suitable for children up to a year old (when cereals are introduced into complementary foods), and for pets and everyone who wants to diversify their diet. Groats are clean, without any additives and impurities, flavorings and other chemicals. Cooking porridge from corn semolina is 4 times faster than from corn grits. In addition, corn semolina does not contain gluten and is suitable even for allergy sufferers. The only drawback is that the date of manufacture is poorly visible, I think the manufacturer needs to work on this. I recommend cornmeal!!!

I wish you all a good day and bon appetit!!!

Corn semolina harm and benefit

Semolina (semolina): benefits, harm, composition, properties, application

Semolina is a cereal made from wheat grains. Most of all, it is popular in the form of porridge, but it can be used for baking, casseroles, sauces and other dishes. The benefits of semolina lie not only in nutritional value, but also in a beneficial effect on the body. About what semolina is, what grain it is made from, and whether semolina is really useful for children and what else can be prepared from it - later in the article.

Semolina (semolina)

The history of the use of semolina goes back to deep historical times, as it is a consequence of the cultural cultivation of wheat.

Semolina is a crushed wheat grain with a fine grain size (0.25-0.75 mm), which is widely used throughout the world in cooking. Photo: semolina (semolina)

In Russia, they were familiar with semolina back in pre-revolutionary times, but they did not actively use it, since its production was considered too costly. Therefore, its mass distribution occurred only in the 20th century. Semolina is very familiar to many residents of the post-Soviet space, as it was fed and continues to be fed in kindergartens.

Based on the varietal affiliation of wheat used for the production of cereals, it is labeled with the following designations:

  • T - hard varieties;
  • M - soft varieties;
  • TM - a mixture in a ratio of approximately 15/85.

Solid semolina semolina is characterized by a more noticeable particle size, a translucent structure. It is less prone to overcooking and holds its shape better.

Corn semolina

Corn semolina is not one of the types of this cereal, but a marketing ploy used by some manufacturers. Corn semolina is corn grits, corresponding in grade to semolina. The particle size of this product is 0.3-0.8 mm. In addition to external similarities, the products have little in common: they differ in the composition of the feedstock, taste, and technical culinary properties.

The chemical composition of semolina

Semolina is an extremely nutritious type of cereal that enriches the body with a significant proportion of proteins, carbohydrates, fiber and trace elements. 100 grams of this wheat by-product contains:

  • 333 kilocalories;
  • 1 g fat;
  • 10.3 g proteins;
  • 70.6 g of carbohydrates;
  • 3.6 g fiber;
  • 14 g of water.

In boiled form, semolina has a much lower calorie content. So, in porridge, this figure is 95-100 kcal per 100 g.

Vitamins and minerals in semolina (% of the daily intake for an adult)
B1, thiamine0.14mg (9.3%)Potassium130 mg (5.2%)
B2, riboflavin0.04 mg (2.2%)Calcium20 mg (2%)
B6, pyridoxine0.17 mg (8.5%)Magnesium18 mg (4.5%)
B9, folates23 mcg (5.8%)Phosphorus85 mg (10.6%)
E, tocopherol1.5 mg (10%)Iron1 mg (5.6%)
PP, nicotinic acid3 mg (15%)Silicon6 mg (20%)
Chlorine21 mg (0.9%)
Cobalt25 mcg (250%)
Manganese0.44 mg (22%)
Copper70 mcg (7%)
Molybdenum11.3 mcg (16.1%)
Chromium1 mcg (2%)
Zinc0.59 mg (4.9%)

Thus, the chemical composition of semolina provides the body with the substances necessary for the stable and efficient operation of the nervous, cardiovascular, endocrine, musculoskeletal, reproductive, immune and digestive systems. The use of such a product in food also leads to the preservation of youthful skin, healthy hair and nails, maintaining physical and psycho-emotional tone.

Semolina: benefits and harms to the body

Despite this diversity chemical composition, semolina is far from the title of the most useful, which was promoted in the USSR, where it was widely promoted in food for children. The main value of semolina is a lot of carbohydrates, most of which are easily digestible. This ensures rapid saturation and the flow of glucose into the blood. The body receives energy, but the feeling of hunger returns quite quickly.

Useful properties of semolina

Nevertheless, cereals cannot be called completely useless, since some valuable properties are inherent in it. Semolina is one of the most suitable products for people with a vulnerable gastrointestinal tract. It differs from other cereals in its reduced fiber content. Thanks to this, even large portions of it do not irritate the walls of the stomach and intestines. It also eliminates the possibility of obstruction in the weak intestine. In turn, dietary fiber performs its cleansing functions well, removing ballast, fats and absorbing toxins. For adults, the use of semolina porridge is often prescribed for diseases of the gastrointestinal tract and during postoperative recovery.

What are the benefits of the minerals in semolina for the body:

  • phosphorus is a building block for teeth and bones;
  • iron - necessary for the synthesis of hormones, ensuring the transport of oxygen through the vessels, the effectiveness of nerve impulses;
  • zinc - participates in protein synthesis, strengthens the immune system, provides the exchange of nucleic acids, is important for the development of sexual functions;
  • magnesium - ensures the stability of the nervous system, is included in the metabolism and production of insulin;
  • copper - necessary for the production of hemoglobin, maintaining skin elasticity, has an antiseptic effect.

Semolina on milk or water is the best food option for people who have bad teeth or are recovering from operations on them. In addition, it is often included in a protein-free diet, for example, for kidney disorders.

Semolina: benefit, harm to the child

The Soviet practice of actively feeding children with semolina is now strongly criticized, and for good reason. The fact is that the digestive system of a small person does not cope well with such a huge dose of starch that comes with this dish. To soften, it is advised to make semolina on water and in small volumes. It is believed that abuse can provoke celiac disease - a disease expressed by gluten intolerance. Large doses of starch also contribute to the development of obesity, which negatively affects all health.

Manka benefit and harm

For a baby or a small child, semolina is also dangerous because the phytin present in the composition of the dish prevents the absorption of calcium, iron and vitamin D. As a result, the bones become weaker and thinner.

For adults, semolina is more useful and does not pose a threat to the musculoskeletal system when proper nutrition. Moreover, it is often ideal for breakfast as a source of energy. True, doctors advise to maximize the beneficial properties of cooking it only in water without any additives.

Contraindications

Semolina contains gluten, so it is contraindicated for people with celiac disease, a form of allergy. In addition, those who have diabetes mellitus or a tendency to "jumps" in glucose should refrain from it. The rapid absorption of "light" carbohydrates leads to a short-term increase in this indicator and in these cases can adversely affect the well-being.

Restrictions on the use of semolina apply to overweight people and pregnant women who experience rapid weight gain or late toxicosis.

Application in cosmetology: semolina for the face

In addition to its nutritional use, semolina can help in the quest to preserve the beauty and restore healthy skin. Groats have a mild scrub effect, so it is effective in combination with oils, sour cream, kefir or other bases.

The simplest scrub for home use can be made from a handful of semolina and a small amount of cream or vegetable oil. This remedy should be applied in a small amount to the skin and with light circular movements with slight pressure massage the skin for several minutes. Semolina scrubs can be made with kefir, yogurt, butter, cream, carrot pulp.

Decoy for fishing

Semolina, like wheat, is a wonderful bait and bait for fish in the summer. Experienced fishermen often use it to attract carp, carp, rudd, ide, roach, bream and similar fish species. With proper preparation of semolina bait, it is not easy to remove from the hook. Large fish swallows it whole, and does not pull it together, thanks to which it literally jumps on the hook. Too small fish is not caught on the decoy, but simply bites the bait.

The main disadvantages of semolina as bait for fish:

  • unreliable position on the hook (needs some skill);
  • rapid soaking;
  • need clean water and warm weather.

In most cases, it makes sense to use semolina for float fishing, but in reservoirs with a strong and medium current, it is also suitable for donka. The casting of the bait is due to its weight, so a heavy sinker is not needed.

How to cook semolina for fishing:

  1. Boil a mug of water with a few drops of fishing flavor. Pour into it the volume of semolina necessary for cooking thick porridge. After boiling, hold the porridge under the lid for steaming. After cooling, you need to knead the semolina with your hands for ten minutes, making its structure denser. You need to put small dense balls from the formed mass on the hook.
  2. Scoop a glass of water from the reservoir chosen for fishing, add a flavoring product, and, stirring, add semolina until a thick mixture is formed. It must be firmly attached to the spoon. Then you need to let it brew for 10 minutes and send it to the syringe. The bait is squeezed out of the syringe, winding around the hook in a spiral. It ends at the tip of the hook.

The right decoy for fishing

Cool decoy for fishing:

  1. Boil the semolina halfway (it will boil and increase in volume) and pull it out of the water.
  2. Transfer it to double-folded gauze and send it in a bundle to boil in boiling water for another twenty minutes.
  3. Or fill a matchbox with groats, add flavoring and throw it closed into a pot of boiling water. After an hour of cooking, you will get a dense bait in the form of a bar, which is easily cut with a knife.

For greater effectiveness, it is better to use natural sources of odors, rather than powdered synthetic mixtures. However, fatty vegetable oils make it less dense. Good options: strawberry, garlic, anise, cherry, maggot, sugar, dill, onion, vanilla, honey, salt, bloodworm. In autumn and spring, with cold water, garlic in any form is good. Crucian bites perfectly on bloodworms, roach - vanilla, bream - banana, fennel, coriander, anise, cinnamon, pear. Carp loves caramel, fruit essences, garlic, vanilla, hemp, honey. You can also flavor with popular Revit vitamins by dissolving 1-2 dragees in water for cooking.

The use of semolina in cooking: delicious recipes
