As a child, I just because of her did not eat this wonderful dish. Since becoming a vegetarian, I have redone the recipe and now this is one of my favorite salads. Try it, very tasty!

Vegetarian “fur coat” without herring

Composition:

  • 800 g potatoes
  • 800 g carrots
  • 800 g beets
  • 350 g seaweed
  • 300 g Adyghe or processed cheese
  • 5 pcs walnuts
  • 250 ml sour cream
  • 400 ml
  • spices optional: ground black pepper, cinnamon, nutmeg, ground coriander

Vegetarian herring recipe under a fur coat:

  1. Boil potatoes, carrots and beets in “uniforms” for a couple or in water.
  2. When the vegetables have cooled, peel them.

  3. Now you need to grate the vegetables and cheese separately. Beets and carrots are best on a medium grater, and potatoes and cheese on a coarse grater.
  4. Wash the seaweed and chop finely. It is a great substitute for herring in this salad.

  5. Add 2 tbsp. spoons of sour cream in carrots and beets, and in potatoes - 3-4 tbsp. l.
  6. Add spices (optional) and 1 tsp each. salt:
    • in beets - a pinch of cinnamon and nutmeg
    • in carrots - 1/2 tsp. ground coriander and a pinch of black pepper
    • in potatoes and seaweed - 1/2 tsp each. asafoetida and some ground black pepper

    If you don’t have any spices, it’s okay, it will still turn out delicious.

  7. Crush the walnut kernels.

  8. Pour it into the beets and mix.

  9. Now all the components of the “herring under a fur coat” salad are ready with us and you can proceed directly to laying out the layers, lubricating each. For this amount of food, a deep dish with a diameter of 25 cm and a height of about 9 cm is best suited.
  10. Put 1/2 of the potato on the bottom, level with a spoon and grease with mayonnaise.

And the presence of seaweed in the salad increases its nutritional value. The benefits of sea kale are obvious because of its rich composition, because it grows in the open spaces of the sea and is enriched with all useful macro- and microelements. In addition, seaweed is a low-calorie product.

  • Sea cabbage (ground on a coffee grinder) - 1 teaspoon (with a slide);
  • Purified water - 2 tablespoons;
  • Soy sauce - 4 tablespoons;
  • Eggplant (large) - ½ pieces;
  • Beets (large) - 1 piece;
  • Carrots (large) - 1 piece;
  • Potatoes (large) - 1 piece;
  • stem celery - 1 stem;
  • Sunflower oil - 2 tablespoons;
  • Dried greens (oregano, marjoram, basil) - only 1/2 teaspoon;
  • - 5 tablespoons.

Vegetarian fur coat: cooking

Where do we start preparing the salad?

We put washed vegetables in a saucepan - potatoes, carrots and beets, pour water and cook until ready (soft when pierced with a knife) state. While the vegetables are cooking, prepare the most important base for the salad.

Soak seaweed with water until it is completely absorbed. When the water is absorbed, add 2 tablespoons of soy sauce to the cabbage and mix everything. We clean the celery trunk from thin fibers, cut into small cubes, approximately 0.5 x 0.5 cm, add dried herbs to it and pour 2 tablespoons of soy sauce.

We peel the eggplant, cut it into cubes 1 x 1 cm and stew (do not fry) together with sunflower oil at medium temperature, stirring constantly until the eggplant becomes soft. It is very important not to overcook the eggplant so that it retains the integrity of the pieces.

We combine together seaweed, eggplant, celery with dried herbs and mix everything gently. Let's insist. When the vegetables are cooked, cool and peel them, finely chop, laying them in separate containers.

1st layer - put potatoes on the bottom of the salad bowl and grease it with 2 tablespoons of mayonnaise.

2nd layer - evenly spread seaweed with eggplant, celery and herbs.

3rd layer - lay the carrots and grease it with the 1st spoon of mayonnaise.

4th layer - lay out the beets, level with a spoon and grease it with 2 tablespoons of mayonnaise.

If desired, the top of the salad can be decorated with fresh herbs.

Okay, I’ll honestly admit to you right away that I invented all these pseudo-facts about the New Year’s puff salad. Although about the last I have vague doubts... But I am one hundred percent sure of one thing: a vegetarian version of herring under a fur coat exists and tastes just as good as the traditional one. And some even consider it more tender and much tastier. Estimate?

For a vegetarian herring under a fur coat, we need:

  • 2 small beets;
  • 4 small carrots;
  • 5 small potatoes;
  • 300 grams of pickled seaweed;
  • 200 grams of Adyghe cheese;
  • 600 grams of sour cream;
  • 2 tsp salt.

So, first of all, all vegetables need to be boiled in a peel or baked in the oven in foil. Only then does the fun begin: creating layers.

On a flat dish, grate three of the five boiled potatoes. This will be the very first layer of our “fur coat”.

Seaweed appears next in the arena. Spread two-thirds of its total amount evenly on top of the potatoes. Do not pay attention to the carrots from the photo, I just marinated seaweed with carrots in the kit :))

The third layer will be Adyghe cheese. We also take 2/3 and evenly distribute the cheese over the cabbage, crumbling it directly with our hands.

Carrots come into play. We rub two pieces on a coarse grater and spread on top.

We mix sour cream with salt, and with the help of a knife we ​​spread a simple sour cream sauce over carrots in the now popular amount of 2/3 of the total volume :)

And now, attention, we repeat from the very beginning, dear chefs. We use all the remaining thirds: first, three potatoes, then lay out the cabbage, then crumble the cheese, then distribute the carrots.

Finally, it came to beets. As the topmost layer, lay out the grated beets and lightly pat the salad with the palm of your hand. Flatten it a bit, so to speak.

All we have left is one last third of the sour cream sauce. They are what we pour the salad on top of.

There is! Vegetarian herring under a fur coat is waiting for its connoisseur. She is supposed to wait in the refrigerator for at least two hours, and maybe more. Well, it's nothing. We are ready for this turn of events. For now, we’ll come up with a New Year’s decoration for her, at least a Christmas tree made of dill, but what?

What is the peculiarity of the vegan "Herring under a fur coat"? First of all, the dish lacks the main component - herring. The fish is replaced with algae. Surprisingly, such a salad quickly gained well-deserved popularity, because it is not only very tasty, but also brings much more benefits to the body than a traditional snack. The calorie content of herring salad under a fur coat in this version allows it to be eaten even by those who are on a diet.

Avocado is still quite an exotic fruit for us. And algae, too, can not be found in every kitchen. But it is in this recipe that the products give a special taste to the finished dish, make it, although unusual, but still quite similar to everything that is acceptable to us.

  • 200 gr. seaweed;
  • 2 beets;
  • 2 carrots;

How to make herring under a fur coat recipe:

  1. All vegetables must be washed and boiled, cooled and then peeled. Then the fruits are rubbed.
  2. Using a blender, you need to chop the avocado, mix with lemon juice and salt.
  3. Onions must be peeled from the yellow husk and cut into thin, even rings.
  4. The onion is laid out first in the salad bowl, followed by the potatoes.
  5. Seaweed is already placed on top of the potatoes and sprinkled with a little oil.
  6. Carrots and avocados are planted on algae.
  7. After the avocado, you need to put the beets in the salad bowl and cover with the remaining avocado.
  8. Cool the resulting dish and serve.

Important! In no case should vegetables be overcooked, and ideally even slightly crunchy. Only under this condition can an ideal ratio be achieved and the salad will turn out to be especially tasty and original.

Unusual herring under a fur coat

In this version, nori is a substitute for herring. An exquisite addition is an apple. The taste of such a salad simply cannot be overestimated, because it is both tasty and healthy.

You will need:

  • 2 beets;
  • 3 potatoes;
  • 2 apples;
  • 3 nori leaves;
  • 50 gr. light mayonnaise.

Herring under a fur coat cooking method:

  1. Wash the root crops, boil and cool. Then peel and grate.
  2. First, put boiled and chopped potatoes in a salad bowl, grease with mayonnaise.
  3. Next lay out a sheet of nori.
  4. Apples need to be washed, grated and laid out in the next layer. Fill with sauce.
  5. Add the nori leaf again.
  6. We cover another nori leaf with a beetroot layer and mayonnaise.
  7. Salad for at least three hours insist in the refrigerator. During this time, it will soak, and the nori will soften and acquire the desired, pleasant texture.
  8. Before serving, you can decorate the appetizer with slices of vegetables or fruits, herbs.

Important! Unlike the classic recipe, the vegan “Shuba” is quite bland, and in order to achieve the desired taste effect, all layers are slightly salted.

Recipe under a fur coat vegan salad

In most cases, the "Fur coat" with the replacement of herring with algae has a bland, insufficiently rich taste, but not in this case. The presence of pickled cucumber among the components is the main distinguishing feature of the snack. And satisfying, and nutritious, and with a pleasant sourness, which is simply necessary for the food to be well absorbed by the body.

  • 1 beet;
  • 2 potatoes;
  • 2 carrots;
  • 200 gr. light mayonnaise;
  • 2 nori leaves;
  • 3 pickles.

Herring under a fur coat in layers recipe:

  1. Beets, carrots and potatoes should be thoroughly washed and boiled. After cooking, the vegetables must be cooled, peeled and grated.
  2. Put the potatoes in the first layer, which we distribute over the dish and press down a little, grease with mayonnaise.
  3. We lay out a sheet of nori on the potatoes, which must be moistened with a small amount of water, otherwise it simply will not soften.
  4. Cucumbers do not need to be rubbed, it is enough to chop them into cubes with a knife. We move the pieces to the salad and process with the sauce.
  5. We cover the cucumbers with a sheet of dried seaweed, which, as in the previous case, is moistened with water.
  6. The next two layers also need mayonnaise processing. Put the carrots in the salad bowl first, and then the beets.
  7. Place the finished salad in the refrigerator for a couple of hours.

Tip: beets acquire a simply extraordinary taste and aroma if the root crop is baked in the oven, after being wrapped in foil.

Fresh cucumber is not a standard component of a fur coat. But in the case of inclusion in the composition of this ingredient, you can achieve a special taste and incredible, exquisite freshness.

You will need:

  • 2 beets;
  • 2 carrots;
  • 2 potatoes;
  • 2 fresh cucumbers;
  • 3 nori sheets;
  • 200 gr. smoked cheese;
  • 200 gr. sour cream;
  • 2 tbsp. l. mustard (liquid);
  • 1 st. l. spices;
  • 1/4 tsp salt.

Cooking herring under a fur coat:

  1. All vegetables need to be washed, boiled and cooled. Then peel and grate.
  2. Using a blender, prepare the sauce. To this end, mix sour cream with spices, salt and mustard and whisk vigorously.
  3. Algae should be broken into very small pieces.
  4. We rub the cheese on a grater.
  5. Cucumbers cut into thin slices.
  6. We spread the puff salad in a suitable dish and be sure to soak each product with cooked sour cream sauce.
  7. Lay out the potato layer first. It needs to be crushed a little.
  8. We already put nori and thinly sliced ​​\u200b\u200bcucumbers on it.

  • 20 gr. lemon
  • 70 gr. Jerusalem artichoke;
  • 1 sheet of nori seaweed;
  • 1 carrot;
  • 5 gr. flower pollen;
  • 10 gr. parsley;
  • 10 gr. onion greens;
  • 10 gr. olive oil;
  • 50 gr. cheese;
  • 30 gr. soy sprouts.

Vegan herring under a fur coat traditional recipe:

  1. Wash beets and carrots, boil and cool. Already cold, they are cleaned and crushed.
  2. Grind Jerusalem artichoke using a grater.
  3. Combine carrots and Jerusalem artichoke in one container, add lemon juice to them, and if necessary, then salt and pepper, but this is already a matter of taste.
  4. Pour half of the cheese indicated in the recipe into the carrot mixture and mix everything, then put it on a dish.
  5. Chop the algae as finely as possible and immerse them briefly in water to soften them a little.
  6. Only in the soaked form, attach the algae to the products already in the form.
  7. At the next stage, chop the green onions and parsley, sprinkle with the next layer.
  8. On top of the greens we place the cheese that has not been used up to this point and cover it with a beetroot layer.
  9. Top the dish gently sprinkled with pollen from flowers.
  10. Naturally, before serving, the salad should be infused. It is enough for an appetizer to stay in the refrigerator for half an hour to acquire the desired consistency and get an unsurpassed flavor.

I learned from Wikipedia that there is a vegetarian version of the Herring under a fur coat. The herring is replaced with seaweed, eggs with avocado, and egg-free mayonnaise is used. I wanted to try. Armed with the remnants of seaweed (bought a week ago), half a pack of mayonnaise, Wikipedia, intuition and other ingredients, I built something very similar to a fur coat. I put it in the refrigerator to brew, took it out, tried it ... and ...

Surprised by the taste ... harmonious ... fresh, very pleasant. Its highlight is the combination of the specific aroma of kelp with the sweet and sour apple. Boiled vegetables add satiety to the salad. I advise you to try…

An apple appeared in my salad because there was no avocado. And the second reason: I read on the Internet that in an ordinary fur coat (with herring) some separate layers are made with an apple.

Pre-boil potatoes, carrots and beets in their skins. Cool, peel, rub on a coarse grater.
We cut the seaweed with a knife across so that it is not so long.
Cut into cubes (or as used to) onions.
At the very last turn, we rub an apple without a peel on a coarse grater (so as not to darken).
About seaweed. I already bought it with vegetable oil, salt and vinegar (without any additives - carrots, onions, etc.). Therefore, if you have kelp without oil, then sprinkle it with oil. And vinegar. Or pickle onions in vinegar.

Lay in layers on a flat dish:
- seaweed;
- onion, which we grease with mayonnaise;
- apple, grease with mayonnaise;
- potatoes, sprinkle with vegetable oil for juiciness, then grease with mayonnaise;
- carrots, again - mayonnaise;
- beets, grease with mayonnaise.
We put the finished salad in the refrigerator for a couple of hours.

As for the thickness of the layers, in my opinion .... Unlike a classic fur coat, this salad should not be too high. The fact that he looks tall in my photo is because of the very small plate.
Laminaria should not be too much so that it does not interrupt other vegetables. Pronounced specific aroma.
I rubbed the apple a little. Literally one layer. The apple did not dominate. It only created a pleasant contrast with the taste of kelp.
As for potatoes, it is important not to overdo it. Otherwise, it will give excessive satiety, it will be rude.
