Bake Christmas cookies. Christmas cookies

The smell of ginger carries something magical, mysterious and subtly beautiful! Such cookies for the New Year 2020 must be on holiday table. Warm ginger figurines will not leave guests indifferent!

To prepare the dough:

  • wheat flour - 350 g;
  • soda - 0.5 tsp;
  • salt - 1 pinch;
  • ground cinnamon - 2 tsp;
  • ground ginger - 2 tsp;
  • ground cardamom - 0.5 tsp;
  • ground nutmeg - 0.25 tsp;
  • butter - 130 g;
  • powdered sugar - 150 g;
  • liquid honey - 4 tbsp. l.;
  • egg yolk - 2 pcs.;
  • flour - for rolling out the dough.

To prepare the glaze:

  • egg white - 2 pcs.;
  • powdered sugar - 400 g;
  • lemon juice - 0.5 tsp;
  • food coloring - to taste;
  • sugar sprinkles - to taste.

Cooking:

  1. First you need to cut butter into squares and send to the refrigerator. You need to get the oil only when it is needed in the process.
  2. Powdered sugar should also be prepared in advance - grind sugar in a coffee grinder. So cooking cookies will be much more economical.
  3. Since the recipe calls for raw egg whites, you need to process the eggs first to avoid introducing bacteria into the cookies. To do this, eggs should be placed in warm water with the addition of soda. Then rinse the eggs thoroughly under running water, preferably with a sponge.
  4. Separate the proteins from the yolks in any convenient way. Put the whites in the refrigerator, leave the yolks at room temperature.
  5. To prepare the dough, mix the dry ingredients in a deep bowl: carefully sifted flour, baking soda, salt and spicy spices.
  6. Add pieces of cold butter to the resulting mixture. By hand, fork or special device grind the oil pieces, mixing them with the dry mixture. You should get a crumb, without lumps and large pieces of butter.

  7. Add egg yolks and honey to the bowl and start kneading the dough. At the beginning of kneading, the dough will crumble, but soon, after a few minutes of kneading, the ingredients will better connect together and not sticky, but a pleasant and oily dough will form.
  8. When the dough is completely gathered into a ball, divide it into several parts (two or three). Cover each piece of dough with cling film food products and refrigerate for at least 1 hour.

  9. Remove the rested dough from the refrigerator. Preheat the oven to 170-180 degrees. For baking cookies, choose a suitable baking sheet lined with baking paper.
  10. Prepare the workplace: sprinkle the table with flour, sprinkle the rolling pin with flour. This will prevent the dough from sticking. Using a rolling pin, you need to roll out one part of the dough onto a plate, 6-7 mm thick. Cut out on the rolled sheet curly cookies: in the form of deer, men, Christmas trees, stars.
  11. Place the cutouts on a baking sheet, leaving some space between them. Thus, the cookies will be baked evenly, there will be no sticking of products to each other.
  12. Bake cookies in a fully preheated oven for 8-10 minutes (cooking time may vary due to oven characteristics). The pastry will brown a little around the edges. It is important not to overcook the pastry, otherwise it will be tough. You can check the correctness of the preparation by breaking the cookies: on the break it is porous, crumbly.
  13. The scraps remaining after rolling and cutting out the molds can be collected again into a ball and rolled out a new layer. However, it should be remembered that the more times the dough is rolled out, the harder the products from it are obtained at the output.
  14. Remove the finished cookies from the oven and transfer to a wire rack. Let it dry completely before you start decorating.
  15. In order to prepare the icing, you need to add a few drops of lemon juice to the proteins and start quickly, and continuously beat the mixture with a whisk. It is not necessary to bring to lush foam. When the proteins begin to turn into foam, start adding powdered sugar to them, in small portions. Do not stop whisking the mixture. It will be liquid at first, with a gray tint.
  16. Gradually, after a few minutes of kneading, the mixture will begin to turn white and turn into a shiny, glossy glaze. The finished glaze will drip off the whisk, leaving a mark on the surface.
  17. Leave the finished glaze to rest at room temperature for 15-20 minutes. Then, if desired, divide it into several parts and color each in its own color using food coloring.
  18. Transfer the finished colored glaze to pastry bags and decorate the pastries. First, you can circle the cookies along the contour, and then give free rein to your imagination. Cookies will turn out bright and beautiful if you mix glaze of different colors on them. Without waiting for the icing to dry, sprinkle the cookies with sugar sprinkles.
  19. Now you need to let the cookies cool completely at room temperature. It is also important to wait until the glaze is completely dry.

  20. Such colorful cookies can be served with tea on the New Year's table, or you can collect a gift from them and present them to guests.

Dough Ingredients

200 g softened butter
30 g sour cream
200 g powdered sugar
2 yolks
60 g cocoa powder
350 g flour
1/3 tsp salt

glaze ingredients

20 g of protein;
100 g of powdered sugar.

If you really, really don’t have time to play with homemade cookies, but you really want to cook something special for the New Year, buy any round cookies with a smooth surface in a pastry shop, fill it with chocolate icing at home, and then draw the clock hands and dial yourself using icing .

Cooking

  1. Put softened butter, sour cream and yolks in a bowl, add powdered sugar and salt, turn on the mixer and mix the mass until smooth and a small increase in volume. It is not necessary to beat diligently - it is more about mixing.
  1. Adding cocoa, mix. You can not carefully - just so that most of the cocoa is combined with most of the butter, albeit with lumps and unmixed places.
  1. Sift the flour and add it to the dough in small portions. You should not immediately lay out the entire volume - it is likely that you will need a little less than indicated in the recipe (this depends on many factors - for example, on the fat content and moisture content of sour cream and butter). As a result, you need to get soft but not sticky dough with glossy sheen. We collect it in a ball, wrap it with cling film and put it in the refrigerator for at least half an hour.
  1. Rolling out chilled dough into a layer about 2-3 mm thick, trying to do it as evenly as possible - how you cope with the task now depends on how neat and beautiful your “watch” will be in the end. And yes, it is best to roll out immediately on a piece of baking paper or silicone mat - the dough is quite delicate, and when transferring the blanks from the table to the baking sheet, you risk deforming your perfectly even beauty.
  1. We bake in an oven preheated to 180 degrees for up to 10 minutes, carefully remove the cookies from the baking sheet and transfer to a board or wire rack to cool.
  1. When all chocolate blanks are purchased room temperature, you can start decorating. Prepare the icing: lightly beat the egg white with a fork (not into a foam, but rather just into a foam - so that the mass simply loses its viscosity), mix with the gradually added powdered sugar. If you pre-beat the protein into a stable foam, the icing will turn out to be thick and not pouring, you will not be able to draw anything with it, so be careful and do not try to improve the good.
  1. Transfer the icing to a pastry bag with the smallest nozzle (“one”, or better “zero”) and draw clock faces on cookies- arrows, numbers, decor. If there are no special nozzles, you can roll the cornets from baking paper.

Cookies "Staff of Santa Claus"

In recent years, the staff of Santa Claus has significantly changed its appearance - if during our childhood it was straight, massive and crystal white, now it has become hook-shaped and bright. Cookies of this shape will be a nice decoration for the New Year's table.

Red Dough Ingredients

100 g butter
60 g sugar
1 yolk
1/3 tsp salt
3-4 drops red food coloring

white dough ingredients

170 g flour
100 g butter
60 g sugar
1 yolk
1/3 tsp salt

We knead two types of dough - beat the butter with sugar and yolk until the grains are completely dissolved, add salt and flour. In the red dough, add the dye before adding the flour. If desired, you can immediately prepare a double portion of the dough, which is then divided in half, mix the dye into one of them - it will be difficult to knead ready dough so that the dye is evenly distributed throughout the mass, but realistically. Choose the option that is more convenient for you.

Gently roll long thin "sausages" from both types of dough - it is more convenient to do this on a lightly floured surface. Then we brush off the excess flour with a brush and weave both “strings” with each other, trying to ensure that the weaving step is the same. With a knife or scraper for dough, we divide the woven bundles into equal parts about 7 cm long, form a staff from each blank, put it on a baking sheet and bake until cooked for about 10 minutes in an oven preheated to 180 degrees.

Advice: if you are fundamentally against the use of food coloring in cooking, make the staves in white and brown, replacing the dye in the red dough with cocoa. This, of course, is not a classic, but it is also quite festive and recognizable.

Brownie Cookies: Christmas Trees

Who doesn't love brownies? Everyone loves the classic American pastry! Bake these chocolate cookie cookies according to the standard recipe, but after you take the fragrant cake out of the oven, cut it not with the usual squares, but with triangles. Insert a straw or a long lollipop into the base of each, decorate with green icing - Christmas trees are in a hurry to your table!

Ingredients

  • 100 g butter
  • 1 dark chocolate bar
  • 50 g cocoa
  • 40 g flour
  • 3 eggs
  • 100 g sugar
  • 1/3 tsp coarse sea salt
  • about 150 g of powdered sugar, green dye and 2-3 tsp. lemon juice for frosting

Melt the butter in a water bath, add the chocolate broken into pieces there, stirring, hold over hot water until complete homogeneity.

In a separate bowl, mix cocoa, salt, flour. Pour the dry mixture into the chocolate-butter mixture, mix and add the eggs one at a time, each time rubbing until smooth.

Pour the resulting dough into a baking paper-lined form (size - approximately 20x20 cm), bake brownies in an oven preheated to 180 degrees for no more than 20 minutes - the “correct” cookies should be soft, almost viscous inside, but crispy outside.

Remove the form from the oven and after 3-4 minutes of slight cooling, cut into portioned triangles. Then wait for it to cool completely and start decorating.

To make the frosting, mix the icing sugar, a few drops of food coloring, and lemon juice until the consistency is to your liking—a little thicker (thicker) or a little thinner (smoother). Spread icing on each triangle, after drying, transfer to a dish.

Advice: if you don’t feel like “playing” with the icing, you can melt the white chocolate, tint it with spinach juice, transfer it to a homemade cornet and quickly draw a pattern on the triangular brownies. You can also simply whip cream or make Swiss meringue. The above icing recipe is also suitable for decorating these cookies.

Polvorones macaroons

Polvorones is an ordinary guest on the festive table in Spain: this is our bowl of Olivier, only in a sweet version, it is certainly baked for the New Year, moreover, it is cooked in large quantities so that it is enough for all the long winter holidays, so that it can be distributed with yourself to guests and to be able to treat everyone who looks into the house, from friends to the courier who delivered the package. Perhaps this is the most festive, most unusual and fragrant version of New Year's cookies, which is gradually entering our culinary culture from other countries of the world. Maybe polvorones will not traditional pastry in your family, but at least once you need to try!

Ingredients

  • 110 g flour
  • 100 g butter
  • 40 g powdered sugar
  • 50 g peeled almonds
  • 1/3 tsp salt

Grind the almonds with a blender into small, small crumbs, sprinkle on a baking sheet and put in the oven. We set the temperature to 150 degrees and dry the nut mass for about an hour, periodically shaking the baking sheet and thus mixing its contents. The almond crumble should take on a nice creamy hue and give off an unreal aroma that floats throughout the house.

Cool properly - at least 3 hours, and preferably overnight.

Mixing almond crumbs wheat flour and powdered sugar, add salt. Melt the butter, pour it into the dry mixture and knead until a smooth, elastic state (the dough will not be smooth due to large almond fractions, but you need to strive for this). If the mass does not agree to acquire the desired consistency, add a little more oil or lard (pork fat - by the way, in some recipes, polvorones is completely prepared on it). Knead.

We roll out the dough into a layer 8-10 mm thick (these cookies are traditionally plump), cut out the figures with molds, put them on a baking sheet and bake in an oven preheated to 160 degrees for about 25 minutes - classic polvorones should remain pale and light.

There is one more traditional way cookie molding - due to the fact that it is baked in large quantities for the New Year, there is neither time nor desire to play especially with rolling and cutting, so they simply take the dough from a common ball with a tablespoon and simply turn it over onto a baking sheet, helping to remove the resulting "hemisphere" on the sheet.

Advice: Christmas trees, snowmen and other snowflakes are, of course, incredibly festive and New Year's, however, you can go with another, less standard and predictable option. Cut the cookies into ordinary squares, bake them, and after cooling, stack them in piles of 5-6 pieces and tie them beautifully with ribbons - you will get cute stylized “boxes” with gifts. Somewhat troublesome, but the sincere joy of your friends is worth it!

But such an idea with multi-colored Christmas trees is for those who are ready to devote time to preparing for the New Year. Pyramids can be assembled together with the child - fun is guaranteed!
