COOKING METHOD:

1. In order to bake cottage cheese cheesecake with strawberries, first prepare the dough for the sand base. To do this, put softened butter and sugar in a bowl.

2. Pour in the sifted flour and grind all the ingredients with your hands to a state of wet crumbs.


3. Add egg and knead soft dough by hand or with a regular spoon.

  • Strawberries - 800 g;

We bake a delicious base for cheesecake from butter and cookies with our own hands

  • First, let's crumble our cookies. This must be done carefully and, as you know, finely.
  • Mix the cookie crumbs with pre-melted and already cooled butter.
  • We transfer the resulting mass into a form (detachable, with a diameter of 22 cm), level it well and even tamp the contents a little.
  • We place our form with the “dough” in a preheated oven and bake the dessert base at 160 degrees for about 10-15 minutes. After baking, leave the product to cool.

Let's start making a delicate filling for cheesecake

Pour the cottage cheese into a clean bowl, throw eggs into it and grind the combined components with a spatula or whisk until a beautiful, and most importantly, homogeneous mass is obtained.

You only need to use eggs and cottage cheese room temperature: so it will be easier to turn them into a “homogeneous tandem”.

  • When the cottage cheese and eggs are mixed, add to them all the other ingredients intended for the filling (see the list of ingredients). Mix everything until smooth by hand. No mixers, blenders and food processors need to be used for this.

  • We don’t take the baked cheesecake out of the oven immediately after baking: it needs to be given time to cool down. In this case, it is quite permissible to slightly open the oven door.
  • Place the cooled cheesecake in the refrigerator overnight.

We divide juicy strawberries into 4-6 slices, but less is possible - it all depends on how large your berry is.

  • For the base, you can take not only shortbread cookies, but also crackers, although on the shortbread base you get the very desired ideal option. If you manage to find speculos (crispy biscuits from Belgium and the Netherlands), then be sure to use it, because in the classical sense, cheesecake is made on its basis.
  • For a traditional cheesecake, you need a soft cream cheese, rather fatty and made not on milk, but on cream. Philadelphia in this regard is what you need. But since it is expensive with us, and not everyone can find it, you can replace it with curd mass (as mentioned above, non-grained). You can also use mascarpone cheese.
  • Strawberries can be used both fresh and frozen. This allows you to prepare a dessert with summer berries all year round.
  • It is very important to beat the dessert base slowly. If the mixer is turned on at a low speed, this will help you avoid cracks on the “pie” in the future.

Today, the cheesecake recipe that I'm introducing you to is no-bake, with the addition of fresh strawberries and strawberry jelly. This cheesecake can be based on cream cheese or full-fat cottage cheese. It is easy to prepare, it just takes time to cool.

To make no-bake strawberry cheesecake, prepare the ingredients according to the list.

Grind the cookies into crumbs using a blender or rolling pin. Add slightly melted butter and stir.

We cover the form with baking paper. We lay out and tamp the sand base. We remove the form in the refrigerator.

Wash the strawberries (2/3), remove the sepals and fill with water. Bring to a boil with sugar (0.5 cup) and leave to cool.

We filter the strawberry compote, we do not need berries.

Pour gelatin with cold boiled water and leave to swell for half an hour.

Grind cottage cheese with sugar (1 cup) to a paste-like state.

Heat gelatin and stir. Add cream, 2/3 prepared gelatin and beat.

Posting cream cheese mass on a sand base and put in the refrigerator for 1 hour.

We wash the remaining strawberries, let the berries dry. Cut into slices and lay on the curd base.

The remaining gelatin is combined with strawberry compote, mix well and pour strawberries, only to cover a little. Leave to harden in the refrigerator and then pour the remaining compote with gelatin. It will take another 2-3 hours to dry.

Then the cheesecake is carefully released from the detachable form and served to the table.

Recipe cheesecake with strawberries:

It is worth starting the preparation of cheesecake with strawberries from the sand base. cut butter small cubes and melt in the microwave.

Break the chocolate chip cookies into pieces and place in a blender.


Grind cookies on high speed into crumbs.


Pour the melted butter into the sand crumbs.


Turn on the blender again and mix the contents. The mass will become more viscous.


Put the sand crumbs in a detachable form (you do not need to lubricate it with oil, but if in doubt about your shape, then cover the bottom with parchment). It is good to compact the sand base; for these purposes, you can use a glass or a cup with a flat bottom. Put the mold in a preheated oven and bake for 10 minutes at 160 degrees, then remove and allow time to cool.


While the shortbread base is baking and cooling, you can prepare the cheesecake filling. Put the cottage cheese in a deep bowl, knead well so that there are no large lumps. Then beat in the eggs and mix well with a spoon.


Squeeze lemon juice into the curd-egg mass, mix again.


Then add sour cream granulated sugar(if you like very sweet desserts, then put more sugar than indicated in the ingredients), vanilla sugar and starch. Mix thoroughly again with a spoon (do not beat!). Try to knead all the lumps so that the mass is homogeneous.


Wrap the cooled sand base with food foil in 2 layers.


Pour the prepared curd filling onto the base, “shake” the form from side to side so that the filling is evenly distributed. Put the form with the future cheesecake on a baking sheet with high sides (or in another baking dish with a large diameter), pour hot water so that it reaches about the middle of the cheesecake pan.


Put the cheesecake in the oven and bake only on the bottom heat at 160 degrees for about 80 minutes. After baking, let the cheesecake cool and then refrigerate overnight.


Rinse fresh strawberries, dry, remove stems and cut into thin petals. To decorate the cheesecake, it is advisable to choose only the most beautiful, even and approximately the same size berries.


Lay out the strawberries first in one row in a circle overlapping, as shown in the photo.


Then, in the same circles, lay out the rest of the surface of the cheesecake.


cook strawberry jelly in accordance with the instructions on the package.


Pour the jelly over the strawberries (or smear the berries with a cooking brush) and put the cheesecake back in the refrigerator until the jelly is completely set.


In the meantime, you can prepare strawberry sauce: cut the washed and peeled berries and put them in a blender bowl.


Add powdered sugar (if you got a non-sweet strawberry, then the amount powdered sugar can be increased).


Beat strawberries on high speed until smooth.


When the strawberry jelly has hardened, the cheesecake must be freed from the mold and transferred to a plate. To do this, run a knife along the edge of the mold, and then carefully remove the ring. Pry the bottom with a spatula on all sides, and then transfer the cheesecake to a plate.


Before serving, cut the dessert into portions. To make the cut beautiful and even, it is best to cut the cheesecake with a hot knife (hold it under a stream of boiling water). After each cut, the knife should be wiped with a napkin.
