    • I use ready-made and chicken fillet for this soup so that there is more meat. However, any chicken parts are suitable for homemade noodle soup. You can cook from meat with bones on the water.
    • If you don't have thyme or sage, replace them with fragrant soup spice blends ("Suneli Hops", " Provencal herbs”, Italian blend, Mediterranean herbs, etc.).

    Cooking process:

    First, let's make homemade noodles. To do this, take a large bowl, break eggs into it, add 2 tablespoons of milk and sunflower oil, a teaspoon of salt and lightly beat everything with a fork.
    Gradually stir in the flour mixture, adding it little by little. We spread the contents of the bowl on a floured surface of the table and knead the dough, which should not be tight in consistency, but not too soft either. Usually, after standing for a while, the dough becomes softer. Therefore, we wrap it in cling film and leave it on the table for half an hour.

    After the specified time, knead the dough again on a table sprinkled with flour, bringing it to the desired consistency. After that, roll out the dough into a thin wide layer. The layer should be as thin as possible, because the noodles will become thicker when boiled, and thick noodles are not very good to cook.
    We cut the layer into strips using a pizza cutter or a thin sharp knife. We leave the noodles on the table until the time it has to be sent to the pan. If it dries out, no big deal! It can generally be dried and used another time (if there is excess).

    Note

    If you find it difficult to cut the noodles into even strips, cut them into curves, they will still be delicious (just kidding!).
    There is good way cut it straight. After rolling the dough into a thin layer, cut it in half, lightly sprinkle the layer on top with flour and roll each part into a roll. And then cut each roll into slices about 5 mm thick. You will get thin strips of noodles rolled into circles - absolutely even!

    Now let's start making the soup.
    My vegetables, clean and cut: onions - half rings, carrots - rings, celery - cubes. We put everything in a multi-pan.
    Add washed chicken cut into pieces. Fill everything with broth with water. Add salt, ground black pepper and garlic. Cooking in the automatic program "Soup" with a repeat or "Stew" - 1 hour.

    After that, add noodles and thyme with sage (or a mixture of spices for soup) to the pan, mix everything well, cook in the same program for another 15-20 minutes.
