Ingredients:

To knead the dough:

  • 375 ml of milk;
  • 45 g of granulated sugar;
  • 40 g butter;
  • dry fast acting yeast- 7-8 g;
  • 15 ml olive or corn oil;
  • 1 egg;
  • 1 tsp without a hill of salt;
  • 500 gr flour.

For filling:

  • boiled chicken eggs - 6 pcs.;
  • green onions - a large bunch;
  • salt, other desired spices to taste.

  1. Heat milk without boiling. In a warm liquid, dissolve a spoonful of sugar, yeast, add a little salt. Stir the resulting mixture, set aside for a quarter of an hour until a yeast “cap” appears.
  2. Beat the rest of the sugar with chicken egg, gradually introduce softened butter, a little salt.
  3. Mix the yeast mixture with the egg-oil mass.
  4. Sift flour into a deep bowl. Do not rush to add all the flour, leave a little for mixing. Make a well in the middle of the flour and pour the mixture obtained from the previous steps into it.

- ordinary room water - 200 grams,
- raw yeast - 20 grams,

- sifted flour, wheat - 400-500 grams,

- vegetable oil - 2 tables. l. for dough and by eye for frying,

For pies, I immediately begin to prepare a simple yeast dough, and much earlier than the filling itself, since such a dough needs time to rise and proof. I slightly warm the water and crumble raw yeast into it.




I pour granulated sugar into the future dough into the water, in which there is already yeast. Tremble with granulated sugar they are great friends and the dough will grow well, rise in volume.




I add vegetable oil.






I pour flour and now I finally knead soft dough. The kneading dough itself, as you can see, is simple, so I often fry such beautiful pies. I set the bowl of dough aside. The dough immediately begins to rise in a warm room, so turn on the oven. Next to it, the dough will increase in volume quickly. There is another secret method that I have used more than once: I take a very deep bowl, pour well hot water into it, and now I put a bowl with our dough into this water. In such an environment, the dough will also feel great and grow quickly.




After 40-60 minutes, the dough will become high, and I begin to work hard with it.




While the dough increased and approached, I chopped the clean green onions.






I boiled the eggs and also chopped them finely with a knife.




I mix the onion with the eggs, it turned out simple, and at the same time a delicious filling for pies. I only salt the filling well, as the eggs will be fresh in pies.




I pinch off a small piece of dough, slightly roll it out with a wooden, ordinary rolling pin and put a spoonful of egg and onion filling in the middle. If you put too many eggs with onions, it will be more difficult to mold the pie, so do not overdo it.

If you make the fire strong right away, put pies in it, and then make the fire quieter, then the pies will still fry very quickly from above, but they will not bake inside. This is very important and keep this in mind when frying.




I fry pies with egg and onion on both sides, turn over and fry in a pan until cooked.




I put the pies on a large plate and let them cool slightly.

Once the oil is hot, put the pies in. Lay seam down. Do not be afraid if holes suddenly appear in the dough - the filling will not run away (checked). Fry on each side until the dough is cooked and golden brown.

We spread the finished pies on paper napkins, let the excess oil be absorbed. Since the pies were molded without the participation of flour, the oil does not darken during frying and no sediment appears, and all the pies remain golden and ruddy, until the last batch of frying.
