apple pie with sour cream filling(Tsvetaevsky pie) is one of those recipes that is both quick to prepare and has excellent taste. Maybe he is not the most dietary, but today we will turn a blind eye to this 🙂

This is the recipe for the Tsvetaev sisters' pie, which they treated their guests to. The recipe is quite simple, besides, we will consider step by step cooking it's dessert. If you have any questions about the preparation of this apple pie - write in the comments.


Ingredients:

Apples– 500-700 gr (3-4 apples)

For the test:

  • Butter - 150 gr
  • Sour cream - 100 gr
  • Wheat flour - 200 gr
  • Baking powder - 1.5 teaspoons (can be replaced with baking soda - 0.5 teaspoons, which we extinguish in any acid - a little bit of sour cream or vinegar)

Sour cream filling:

  • Sour cream - 200 g.
  • Chicken egg - 1 pc.
  • Sugar - 150-200 g (2 faceted glasses).
  • Flour - 2 tbsp. a spoon
  • Vanilla sugar - 1.5 tablespoons, optional

Let's start cooking:

My apples. Let the oil heat up to room temperature. Sift the flour first.

Making the dough:

Melt 150 grams of butter in the microwave or in a saucepan, let it cool a little.

In the meantime, add 2 cups of flour (200 gr) to the container


Add 1.5 tablespoons of baking powder and mix.


Pour out warm butter.


And add sour cream.


We mix. From the resulting mixture - hands begin to knead the dough.


You should get a soft homogeneous dough.

We wrap the resulting dough with a film, send it to the refrigerator for 20-30 minutes.


In the meantime, we are making the filling for our apple Tsvetaevsky pie.

Fill:

Crack the egg into a clean bowl.

We take a full glass of sugar (approximately 150 gr) if you want more sweet pie, then you can add a little more.


You can also add one and a half tablespoons of vanilla sugar. Stir, beat with a whisk or mixer until smooth. We sift the flour.


Add sour cream.

It's good to add some vanilla. Initially, of course, this component was not in the Tsvetaevsky pie recipe, but this will help make the pie even tastier.


Mix and beat with a mixer for 2 minutes, you can use a whisk.


Preparing the test for the form:

Lubricate the baking dish with butter or vegetable oil, if it does not have an upper slippery layer. Sprinkle the mold a little with flour, this is the so-called “French shirt”, it is needed so that we can take out the apple pie without difficulty.

It is better to use a form with low sides, as in a high form the filling may remain liquid after baking.

We take the dough from the refrigerator, roll it out to a thickness of about a little less than a centimeter and spread it on a form pre-lined with tracing paper, form small sides, make the height of the sides small, about 3-4 cm.


Let's prepare the apples:

Cream and dough are ready, let's take on the apples. It is best to cut them right before you send the apple pie to bake.

If you have already cut the apples before preparing the dough and filling, then you can pour lemon juice over them, then they will not have time to darken.

We take 500-700 grams (3-4 apples) of green apples. Sour varieties are suitable for this recipe, it is better to take Antonovka.

We clean from the peel. We clean out the core.


For Tsvetaevsky apple pie, you need to cut apples into long, very thin slices less than 0.5 cm.

Lay the slices on the dough.



Fill with sour cream.


Distribute the cream evenly.

  • Flour - 500 g
  • Sugar - 3/4 cup
  • Eggs - 3 pcs

It's an apple pie that melts in your mouth!


Ingredients:

  • Flour - 300 g
  • Curd - 300 g
  • Butter - 200 g
  • Sugar - 150-200 g
  • Baking powder for dough -10 g
  • Egg - 1 pc.
  • Salt - a pinch
  • Vanillin - 1 teaspoon
  • Apples - 6 small pieces
  • Cherry - 12 pieces (or cherries, or nuts, or prunes, or dried apricots - to your taste) 🙂
  • Cinnamon - 1 teaspoon

How to make apple pie:

We sift the flour.


Add salt, sugar, baking powder.


Grate frozen butter on a coarse grater. Dip butter into flour. We mix.

We knead our dough. It is not necessary to knead it much, just combine it into one whole. In the process, you can add flour if the cottage cheese is wet.


Knead quickly so that our butter does not have time to melt.


Curd dough should be soft and tender, and should not stick to your hands.


Our curd dough divided into two equal parts. We put them in plastic bags and send them to the refrigerator for 1 hour.


We are preparing the stuffing. We remove the core from the apples, cut the apples in half.


Cut a hole in the middle of the apple. We make it so that cherries (cherries), walnuts, prunes or dried apricots can be placed in it. 🙂


To prevent the apples from turning brown, sprinkle them with lemon juice. Lemon (lime) will add an interesting sourness to our apple pie.

Preparing the second layer of dough. We roll it out a little longer than our baking sheet so that it covers our apples.
